Number Of Ingredients 12

2/3 cup uncooked long grain rice
1-1/4 cups water
3/4 cup chopped sweet onion
1-1/2 teaspoons olive oil
1-1/2 teaspoons honey
3/4 cup reduced-sodium chicken broth
1/4 cup golden raisins
1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 cup chopped sweet red pepper

Steps:

  • In a large saucepan, bring rice and water to a boil. Reduce heat; cover and simmer for 14-16 minutes or until tender. , Meanwhile, in a small nonstick skillet, saute onion in oil for 1 minute. Stir in honey and cook 2 minutes longer. Stir in the broth, raisins, curry, salt, cumin and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in red pepper and rice until well blended. Cook 2 minutes longer or until rice is heated through.

3 tablespoons chopped onion
1 teaspoon olive oil
3/4 cup uncooked long grain rice
1/4 teaspoon ground cardamom
1/4 teaspoon ground turmeric
1/8 teaspoon each ground coriander, cinnamon and cumin
Dash ground nutmeg
1 can (14-1/2 ounces) chicken broth
1/4 cup golden raisins
2 tablespoons chopped almonds

Steps:

  • In a large saucepan, saute onion in oil until tender. Stir in rice and spices. Add broth. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until tender. Stir in raisins and almonds.

1 (10 ounce) package miniature marshmallows
6 cups crispy rice cereal
1 teaspoon ground cardamom
1 cup chopped unsalted cashew nuts
1 cup golden raisins

Steps:

  • In a large bowl, toss together the cereal, cashew nuts and raisins. Melt the butter in a large pan over medium heat. Stir in the marshmallows and cardamom until smooth. Pour in the cereal mixture, and stir until evenly coated. Spread evenly in a greased baking dish, and pat down lightly. Cool, and cut into squares.
