These Golden Oatmeal Muffins, made with Duncan Hines Golden Yellow Cake Mix, are absolutely delicious -- especially when served warm with a little butter. Why not also try them with your favorite preserves?

1 package Duncan Hines® Golden Yellow Cake Mix
1 cup quick-cooking oats
¼ teaspoon salt
¾ cup milk
2 large eggs, slightly beaten
2 tablespoons butter or margarine, melted

Steps:

  • Preheat oven to 400 F. Grease 24 muffin cups or line with paper baking cups.
  • Combine cake mix, oats and salt in large bowl. Add milk, eggs and melted butter; stir until moistened. Fill muffin cups two-thirds full.
  • Bake 13 minutes or until golden brown. Cool in pan 5 to 10 minutes. Loosen carefully before removing from pan. Serve with honey or your favorite jam.

1 cup water
½ cup rolled oats
½ banana, sliced
¼ teaspoon ground turmeric
½ teaspoon ground cinnamon
1 tablespoon peanut butter, or to taste

Steps:

  • Combine water and oats in a small saucepan; bring to a boil. Reduce heat and stir in banana slices and turmeric. Continue cooking until desired consistency is reached, 2 to 5 minutes more.
  • Remove saucepan from heat and stir in cinnamon. Stir oatmeal and cover saucepan; let sit until thickened, about 2 minutes.
  • Transfer oatmeal to a bowl and top with peanut butter.

1 cup buttermilk
1/2 cup vegetable oil
1/2 cup firmly packed brown sugar
1 egg, beaten
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat oven to 400°F and grease muffin tin.
  • In a mixing bowl, combine oatmeal and buttermilk; allow to stand for 5 minutes.
  • Add in oil, brown sugar, and egg; stir to mix.
  • In another mixing bowl, combine the remaining ingredients; add to oat mixture, stirring just until moistened.
  • Distribute batter into prepared muffin tins, filling to the top.
  • Bake for 15-20 minutes or until golden brown.

2 cups sifted all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg
1 cup milk
1 teaspoon grated orange rind
1/4 cup butter, melted

Steps:

  • Drain pineapple well.
  • Sift together flour, sugar, baking powder, salt and nutmeg.
  • Beat together egg and milk; stir in pineapple and orange rind.
  • Blend into dry ingredients, along with melted butter, mixing as little as possible until all particles are just moistened.
  • Spoon into lightly greased muffin pans.
  • Bake in a preheated 400-degree oven 20- 25 minutes until golden.
  • Cool 5 minutes before removing from pan.
  • Serve warm!
