GOLDEN PANCAKES



Golden Pancakes image

My mother made these delicious pancakes way back in the Depression years. She beat the batter by hand, but I use my blender. It does a great job in breaking down the cottage cheese for a smooth batter. -Ann Thomas, Telford, Pennsylvania

Yield about 14 pancakes.

Number Of Ingredients 7

6 large eggs
1 cup cream-style cottage cheese
1/2 cup all-purpose flour
1/4 cup milk
1/4 cup canola oil
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • In a blender, combine all ingredients. Cover and process for 1 minute. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown.

2 cups Original Bisquick™ mix
1/2 cup shredded peeled all-purpose apple (1 small)
1/4 cup shredded carrot
1/4 cup chopped nuts, if desired
1 1/3 cups milk
2 tablespoons vegetable oil
1 teaspoon ground cinnamon
1 egg
Maple syrup or honey, if desired

Steps:

  • Heat waffle iron; grease if necessary.
  • Stir all ingredients except syrup until blended. Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.
  • Bake about 5 minutes or until steaming stops and waffle is golden brown. Carefully remove waffle.

  • In a medium bowl, mix together almond flour, baking soda, cinnamon and nutmeg until combined and set aside.
  • In a separate bowl, whisk together eggs, mashed banana and vanilla. Pour egg mixture in with the flour mixture and mix well until all clumps are gone (I used a hand mixer which worked perfectly!)
  • Heat a greased skillet over medium heat and spoon a little less than a 1/4 cup of batter onto the skillet. Cook over medium heat for about 2 minutes on each side or until pancakes are golden brown. Flip over when surface is bubbly and edges are slightly dry.
