Black Hills Golden Egg Bake image

I developed this recipe when I was cooking for large groups of people. It's easy to make and gives you plenty of time to do other things while it's baking.

Number Of Ingredients 13

1/2 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1/4 cup butter, cubed
10 large eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt, optional
2 cups 4% cottage cheese
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1/2 pound bulk pork sausage, cooked and drained
6 bacon strips, cooked and crumbled
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a small skillet, saute mushrooms and green pepper in butter until tender. In a large bowl, combine the eggs, flour, baking powder and salt if desired. Add mushroom mixture. Stir in remaining ingredients., Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 400° for 15 minutes. Reduce heat to 350°; bake 25-35 minutes longer or until a knife inserted in the center comes out clean.

2 tablespoons butter
1 cup sliced fresh mushrooms
1 medium green bell pepper, chopped
10 large eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 (16 ounce) carton small curd cottage cheese
2 cups shredded monterey jack cheese
1/2 lb pork sausage, cooked and drained
6 slices cooked bacon, crumbled
1 (2 1/4 ounce) can sliced ripe black olives, drained

Steps:

  • Melt butter in large skillet over medium-high heat; add mushrooms and bell pepper and saute 8 minutes or until tender.
  • Remove from heat, cool slightly.
  • Whisk together eggs and next 3 ingredients in a large bowl until smooth.
  • Stir in mushroom mixture, cottage cheese, and remaining ingredients.
  • Pour into a greased 13 X 9" baking dish.
  • Bake at 400 degrees for 15 minutes.
  • Reduce heat to 350 degrees; bake 15 more minutes or until set and lightly browned.

3/4 cup water (70° to 80°)
3 tablespoons sugar
3 tablespoons canola oil
2 eggs
1-1/2 teaspoons salt
3-1/2 cups bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

I got this recipe from TOH several years ago. My copy is just about unreadable, so I'm posting here for safe keeping. I made this several years ago for Christmas and it is very delicious. The kids in our families really enjoyed it also as they all like mushrooms, cheese, and black olives. Prep time is approx. I hope you enjoy.

10 eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt (optional)

2 cups shredded cheddar cheese
2 cups shredded monterey jack cheese

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
3 cups 4% cottage cheese
1/2 cup grated Romano or Parmesan cheese

  • Preheat oven to 350°. Sprinkle 1/4 cup bread crumbs into a greased 8-in. square baking dish.
