A melange of tastes from salty-sour to sweet/nutty/and tamarind fruity... Noodles that waft the smell of street side vendors in Bangkok. A must for any Aisian food fanatic.

1 (7 ounce) package medium size rice sticks
1/4 cup tamarind juice
1/2 tablespoon fish sauce
1 tablespoon rice vinegar
1 tablespoon sugar
3 teaspoons tomato ketchup
2 tablespoons vegetable oil
1 tablespoon garlic, minced
6 shrimp, shelled and deveined
2 ounces tofu, cubed
1 egg, lightly beaten
1/2 cup bean sprouts
1/4 cup unsalted peanuts, crushed
cilantro
lime wedge

Steps:

  • Optional garnishes: sprigs of fresh cilantro and lime wedges
  • Soak rice noodles in cold water for at least 1 hour (noodles can be soaked longer and even over night). Drain and set aside.
  • In a bowl, combine tamarind juice, fish sauce, rice vinegar, sugar, and ketchup. Set aside. Heat oil in a wok, add garlic. Sauté for 30 seconds until garlic is fragrant. Add shrimp, tofu and egg. Stir-fry for 1 minute, until egg is scrambled. Add rice noodles and tamarind juice mixture. Stir-fry all ingredients until well cooked and combined. Serve with bean sprouts on the side, peanuts sprinkled over the top, with fresh cilantro and lime wedge garnishes.

3 1/2 ounces rice sticks
1/3 cup extra firm tofu
1 1/2 cups chinese chives, green
1 1/3 cups bean sprouts
3 garlic cloves, minced
1 shallot, minced
2 tablespoons vegetable oil
2 tablespoons peanuts, crushed
1 tablespoon fish sauce
2 tablespoons sugar
2 tablespoons tamarind pulp
1/2 teaspoon dried arbol chile, ground
1 tablespoon preserved turnip
1 egg
1/3 lb shrimp
1/2 banana flower, sliced lengthwise
2 lime wedges

Steps:

  • Soak the dry noodles in lukewarm water while preparing the other ingredients, for 10-15 minutes.
  • Julienne tofu and cut into pieces 1 inch long.
  • Cut up Chinese chives into 1 inch long pieces. Set aside a few fresh chives for a garnish.
  • Rinse the bean sprouts and save half for serving fresh.
  • Mince shallot and garlic together.
  • Heat the oil in a wok on high.
  • Fry the peanuts until toasted and remove them from the wok.
  • Add shallot, garlic and tofu and stir them until they start to brown.
  • The noodles should be flexible but not expanded at this point. Drain the noodles and add to the wok. Stir quickly to keep things from sticking.
  • Add tamarind, sugar, fish sauce, chili pepper and preserved turnip. Stir. The heat should remain high. If your wok is not hot enough, you will see a lot of juice in the wok at this point. Turn up the heat, if it is the case.
  • Make room for the egg by pushing all noodles to the side of the wok. Crack the egg onto the wok and scramble it until it is almost all cooked. Fold the egg into the noodles.
  • Add shrimp and stir for a minute.
  • Add bean sprouts, chives. Stir a few more times. The noodles should be soft and very tangled.
  • Pour onto the serving plate and sprinkle with the fried peanuts. Serve hot with banana flower, a wedge of lime, raw Chinese chives and raw bean sprouts.

6 -9 ounces rice noodles
1/2 tablespoon sugar
1/4 tablespoon salt
3 tablespoons vinegar
3 tablespoons fish sauce (nam plaa)
1 -2 green onion (finely Sliced)
2 eggs
1/4 cup vegetable oil
1 cup meat (chicken, pork, beef, shrimp, scallop are very good)

Steps:

  • soak noodle in hot water until stringy but will not break
  • heat wok or deep frying pan to about 300 degrees.
  • add oil and scramble egg.
  • add noodle and stir fry until midway to tender noodle.
  • add sugar, fish sauce, salt, vinegar and stir fry until wet ingredients are soaked through.
  • add onions and stir fry until cooked.
  • add crushed peanut, shredded carrot, and beansprouts to top (optional).
  • serve immediately for best taste.
