3 tablespoons butter
1 onion, chopped
2 (10 ounce) packages chopped frozen broccoli, thawed
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
2 eggs, beaten
½ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt
1 ½ teaspoons lemon juice
12 buttery round crackers, crushed fine
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 3 tablespoons butter in a medium skillet over medium-high heat. Saute onion until golden.
  • In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayonnaise, eggs, garlic salt, pepper, seasoned salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter.
  • Bake uncovered in preheated oven for 45 minutes, until heated through and browned on top.

5 cups chopped fresh broccoli florets
2 tablespoons water
1 (24 ounce) carton cottage cheese
4 eggs
1/4 cup melted butter
1/3 cup all-purpose flour
1 (11 ounce) can whole kernel corn, drained
2 cups shredded cheddar cheese
1/4 cup chopped green onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
8 slices bacon, cooked and crumbled

Steps:

  • Place broccoli in a vented covered dish; add water. Cook 4 minutes in microwave. Drain; set aside.
  • Preheat oven to 350 degrees. Combine cottage cheese, eggs, butter and flour in container of electric blender; process until smooth. Set aside.
  • Combine broccoli, corn, cheese,onion, salt and pepper in a large bowl. Stir in cottage cheese mixture. Spoon into a lightly greased 12-by-8-by-2-inch baking dish. Sprinkle bacon over casserole. Bake 45 minutes.

¾ cup crushed saltine crackers
1 (14 ounce) can cream-style corn
1 (10 ounce) package frozen chopped broccoli, thawed
1 small onion, chopped
1 egg, beaten
3 tablespoons butter, cut in small pieces
¼ cup crushed saltine crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Place bacon in a large skillet and cook over medium heat until just slightly cooked, about 5 minutes. Drain the bacon slices on paper towels and cut into pieces.
  • Mix 3/4 cup crushed crackers, corn, broccoli, onion, egg, and butter in a bowl; spoon mixture into the prepared baking dish. Sprinkle with 1/4 cup crushed crackers; top with bacon. Cover dish with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove cover and continue baking until bacon is crisp and casserole is cooked through, about 30 more minutes.

Dough for single-crust pie
1-1/3 cups half-and-half cream
3 large eggs
3 tablespoons butter, melted
1/2 small onion, cut into wedges
1 tablespoon all-purpose flour
1 tablespoon sugar
1 teaspoon salt
2 cups frozen corn, thawed

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake for 5 minutes. Remove foil; bake 5 minutes longer., In a blender, combine the cream, eggs, butter, onion, flour, sugar and salt; cover and process until blended. Stir in corn; pour into crust. , Bake until a knife inserted in the center comes out clean, 35-40 minutes. Let stand for 10 minutes before cutting.

1 pack frozen broccoli
1 pack frozen white corn
1 can cream of chicken soup
¼ cup cream cheese
2 chopped mushrooms
1 cup shredded cheddar & mozzarella cheese
1 cup bread crumbs
salt
pepper
onion powder
to taste garlic powder

Steps:

  • Simmer chicken in a small amount of water until done.
  • Add sliced mushrooms and simmer for another 5 minutes. Add soup and cream cheese, Stir until blended well and simmer for another 5 minutes.
  • Boil broccoli and corn in a separate pan until soft.
  • Drain and add veggies to chicken mixture.
  • Add seasonings, stir well and simmer for 5 minutes.
  • Preheat oven to 350 degrees F.
  • Combine cheese and bread crumbs together and spread on top of chicken mixture.
  • Bake for 15 to 20 minutes until cheese is well melted and browns slightly.
  • Remove from oven and cool for 5 minutes before serving.

1½ cups cooked rice
1 (10-oz) package frozen chopped broccoli, (thawed and drained)
1 (14.75-oz) can creamed corn
1 large egg, (beaten)
¾ tsp onion powder
½ tsp garlic powder
½ tsp seasoned salt, (or to taste)
¼ tsp black pepper, (or to taste)
½ cup crushed Ritz crackers
¼ cup butter, (melted)

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x9-inch pan with cooking spray and set aside.
  • In a bowl, combine rice, broccoli, corn, egg, onion powder, garlic powder, salt and pepper. Pour mixture into pan.

1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1/4 cup light mayonnaise
1/4 cup sharp cheddar cheese, shredded
1 tablespoon chopped pimiento
1 1/2 teaspoons lemon juice
2/3 cup Frito corn chip, crushed and divided (I sometimes use the chili cheese flavored ones)

Steps:

  • Combine soup, mayonnaise, cheese, pimento and lemon juice.
  • Put broccoli in a casserole and top with half the corn chips.
  • Pour cheese mixture over and then top with other half the corn chips.
  • Bake at 350 for 35 minutes.
