GOLDEN CARROT COOKIES
Surprisingly delicious cookies. Not too sweet, but tasty enough for any occasion. All children love these special treats. Sometimes I sprinkle the tops with a lemony glaze.

Steps:
- Cream together sugar and butter until light and fluffy.
- Add egg; beat well.
- Stir in carrots.
- Sift together dry ingredients in a separate bowl, then stir into carrot mixture.
- Add vanilla and lemon extracts.
- Drop dough by teaspoonfuls onto lightly Pam-sprayed cookie sheets.
- Bake in 375* oven for 15 minutes or till light golden brown along edges.

Steps:
- Place carrots in a saucepan and cover with water cook until tender. Drain and place in a blender or food processor. Add eggs and 1/2 cup warm water puree until smooth. In a large mixing bowl, dissolve yeast in remaining water. Add carrot mixture. Stir in oil, sugar, molasses, salt and 5 cups flour beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into 48 balls. Place 2 in. apart on greased baking sheets. Cover and let rise until almost doubled, about 1 hour. CARROT AND SUNFLOWER SEED BREAD
Healthy buns which could be used for breakfast or lunch. Great for kids' lunch box. Very typical kind of bun from Scandinavia. The yeast used is fresh yeast (also called wet yeast), but dry yeast might work as well.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Warm 1 cup milk in a large saucepan over low heat until it reaches room temperature, 3 to 5 minutes. Remove from heat and mix in yeast until dissolved. Mix in egg, olive oil, sugar, and salt.
- Stir half of the flour into the saucepan. Add carrots and sunflower seeds. Stir in remaining flour until dough is sticky. Cover and let rise in a warm place for 30 minutes.
- Divide dough into 12 pieces; roll into small buns. Arrange buns on the prepared baking sheet. Cover and let rise until puffy, about 15 minutes.
- Brush tops of buns with 1 tablespoon milk.
- Bake in the preheated oven until golden brown, 15 to 17 minutes.
