I know what you are thinking.. buttermilk doughnuts? I thought the same too until I tried these. I got this recipe from my husband's hometown church cookbook. Since I don't always have buttermilk on hand, I do however always have the dried buttermilk for baking. I prefer that then to fresh buttermilk in these. If you do use the dried stuff, make as directed on the carton and follow all steps below that are listed... Turns out the same and the taste is AWESOME.. You can make them chocolately with little work, you can add apples to the batter and frost with a cinnamon icing. there is absolutely nothing you can't do with these. Hope you all enjoy!

Number Of Ingredients 11

2 eggs
1 cup sugar
1 teaspoon vanilla
4 cups flour
4 teaspoons baking powder
1 cup buttermilk
1 teaspoon nutmeg
oil (for deep frying)
powdered sugar
cinnamon sugar, mixture
chocolate almond bark

Steps:

  • Beat eggs until thick and lemony in color.
  • Add sugar and beat until smooth.
  • stir in vanilla.
  • Sift dry ingredients together.
  • Add to egg mixture alternating with the buttermilk.
  • Turn out onto flour board and roll to 1/2 inch thickness.
  • Cut with a floured doughnut cutter. Fry in oil * 375* until golden brown, about three minutes. You will need to turn these.
  • Drain on paper towels.
  • Melt the chocolate almond bark and roll doughnuts into this and set on wax paper to dry. I do 12 in chocolate and 12 in powdered sugar. the holes get sugar and cinnamon treatment.

2 cups flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon nutmeg
1/4 cup oil (not olive oil)
3/4 cup buttermilk
1 egg

Steps:

  • In a deep-fat fryer, or a skillet, heat oil to 375 degrees.
  • Sift the flour, sugar, baking powder, baking soda, salt and nutmeg in a bowl.
  • Add oil, buttermilk and egg; beat until smooth.
  • Drop batter by teaspoonfuls (too large puffs will not cook through) into hot fat.
  • Fry only 4-5 puffs at a time until golden brown on all sides.
  • Drain on paper towels.
  • Glaze the warm puffs, or roll in cinnamon/sugar mixture.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1/4 cup butter, softened
1/4 cup sugar
1/2 teaspoon salt
1 egg
3-1/4 to 3-3/4 cups all-purpose flour
Oil for deep-fat frying
GLAZE:
1-1/4 cups confectioners' sugar
1 tablespoon brown sugar
1 tablespoon water
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, butter, sugar, salt and egg and 2 cups flour. Beat until smooth. Stir in enough flour to form a soft dough. , Do not knead. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; roll into a 12x8-in. rectangle. Cut into 3x1-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , In an electric skillet or deep-fat fryer, heat oil to 400°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine glaze ingredients. Dip tops in glaze while warm.

when i was little my mother used to make whop doughnuts. which is simply canned biscuits with a hole poked in it, fried and rolled in sugar. she called them whop doughnuts because of the sound the can of biscuits makes when you bang it on the counter to open it. This is my from scratch version. they are fun to make and fun to eat.

2 cups flour, sifted
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon nutmeg
1/4 cup oil
3/4 cup milk
1 egg, beaten

Steps:

  • mix all dry ingredients together.
  • add cooking oil, milk and egg, mix well.
  • drop by tsp fulls into hot oil (375 degrees F). (too much dough and it will not cook all the way through).
  • fry about 3 minutes or until golden brown. Roll them over as needed to insure even cooking and browning.
  • drain on paper towel, sprinkle with cinnamon and/or powdered sugar.

2 c flour
1/4 c sugar
3 tsp baking power (if you using double acting baking powder use half the amount.)
1 tsp salt
1 tsp nutmeg
3/4 c milk
1/4 c oil
TOPPING
1/4 c sugar
1 tsp cinnamon
VARIATIONS
1 c grated granny smith apples (grate with cheese grater)

Steps:

  • 1. Combine all ingredients and mix with a fork until combined. Variation: If adding grated apples to the mixture do so at the end and fold in.
  • 2. Drop by teaspoonfuls into hot oil. Turn when underside is brown and finish cooking. Remove from oil and drain on paper towel. Roll in cinnamon sugar mixture to coat while still warm. Serve warm and delicious. Can be stored in an airtight container if you have any left.

Steps:

  • Heat a deep-fryer to 374 degrees.
  • In a bowl, combine flour, 1/4 cup sugar, baking powder, baking soda, salt and nutmeg.
  • In another small bowl, combine/whisk together 1/4 cup oil, buttermilk and the egg; mix well to combine, add to flour mixture, and mix until very well combined with a wooden spoon.
  • Drop by teaspoonfuls into 6 cups hot oil (375 degrees); fry about 1-1/2 - 2 minutes, or until very light golden brown.
  • Remove, and drain on paper towel.
  • Roll in 1/2 cup sugar, mixed with cinnamon.
  • Note: It is impotant to keep the oil temperature at a steady 375 degrees, otherwise the doughnuts will be overdone, and won't have a light texture.
