1 stick of butter, melted (1/2 cup)
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of sour cream or greek yogurt*
3 very ripe bananas, mashed (I usually use medium-large sized ones)

Steps:

  • Preheat oven to 350F. Grease or spray a 9 inch loaf pan, set aside In a large bowl whisk together the melted butter, and sugars. Add the eggs one and a time and vanilla and whisk until smooth. Sprinkle the flour, baking soda and salt over the butter mixture and stir to mix until just combined. Fold in the bananas and sour cream. Pour batter into prepared pan and bake 60 minutes or until crust is golden brown and a toothpick inserted into the center comes out clean. Cool until warm before serving.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • In a large bowl, mix together the butter and sugar. Add the eggs, vanilla and lemon juice. Mix well. In a separate bowl, combine the flour, baking soda, baking powder and salt. Once fully combined, pour into the butter mixture. Mix until smooth.
  • Mash the bananas with a fork or a potato masher. Fold in the sour cream, walnuts and mashed bananas. Spread the mixture evenly into the greased 9x5 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 60 minutes (or until a toothpick comes out clean from the center of the loaf).
  • Remove from oven and allow the bread to cool in the pan for 10 minutes. Then remove and place on a wire rack to cool completely.

1 1/4 cups (150 g) walnuts, coarsely chopped
2 cups (240 g) all-purpose flour
1 cup (200 g) brown sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 (1 1/2 cups or 450 g) large overripe bananas, mashed
1/4 cup (4 tablespoons) plain whole fat yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted, plus more for greasing
1 teaspoon vanilla extract
2 tablespoons rum, optional (Captain Morgan brand)

Steps:

  • Preheat the oven to 350°F (175°C). Grease a loaf pan (9x5 inch loaf pan).
  • Add the walnuts on a rimmed baking sheet, slide in the oven and toast until fragrant, 5 to 10 minutes. Let cool.
  • In a large bowl, combine the flour, walnuts, brown sugar, baking soda and salt. In a medium bowl, stir the mashed bananas, yogurt, eggs, butter and vanilla with a spoon. Add rum, if using. Lightly fold the banana mixture into the dry ingredients with a rubber spatula, mixing just until combined. The batter should be thick and chunky. Scrape the batter into the loaf pan.
  • Bake the banana bread until the surface appears golden brown and a cake tester inserted in the center comes out clean, about 55 minutes. Let cool the banana bread in the pan for 5 minutes. Remove from the loaf pan, slice and serve warm.

1 cup all-purpose flour
1/8 teaspoon baking powder
pinch of baking soda
8 tablespoons unsalted butter, softened
1 1/2 tablespoons olive oil
3/4 cup sugar
4 large eggs
1 extra-ripe medium banana, peeled and mashed

Steps:

  • Preheat the oven to 325°F. Butter an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Dust the pan with flour, tapping out the excess.
  • Sift together the flour, baking powder, and baking soda.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix together the butter, olive oil, and sugar at low speed. Increase the speed to medium and add the eggs one at a time, beating well after each addition. Mix in the mashed banana. Add the flour mixture and mix just until combined. Scrape the batter into the prepared pan, smoothing the top with a spatula.
  • Bake the cake for 55 to 60 minutes, until the top is golden brown and a toothpick inserted in the center of the cake comes out clean. Cool the cake in the pan on a wire rack for 15 minutes. Unmold the cake and cool completely on the rack. Store in an airtight container at room temperature for 3 days, 1 week refrigerated, or 2 months frozen.

I made this last night with my daughter. Who is only two years old, but already loves to cook & bake with her mama. This banana bread is one of my favorites. Very moist, with a slightly crispy top crust. It was a great nighttime snack. And even better warmed up with a little butter the next morning!

1 1/4 c sugar
1/2 c butter or margerine
2 large eggs
3 medium bananas
1/2 c milk
1 tsp vanilla
2 1/2 c all purpose flour
1 tsp baking soda
1 tsp salt

Steps:

  • 1. Grease your loaf pan. I used a 9 x 5. You can also use (2) 8 x 4's. Or, (4) mini loaf pans. Preheat oven to 350 degrees.
  • 2. In a large mixing bowl combine sugar and softened butter. Add eggs and mix well.
  • 3. Stir in your mashed bananas, milk, and vanilla. Beat until smooth.
  • 4. Stir in your dry ingredients until just moistened. Be careful not to over mix.
  • 5. Bake for one hour, or for mini loaves - about 45 minutes will do.
