GOLD MEDAL™ CLASSIC WHITE BREAD

Gold Medal™ Classic White Bread image

Nothing beats the traditional goodness of homemade baked bread. Served with butter and jam, as the basis for a ham sandwich or just eaten plain, this back-to-basics bread recipe has a soft, airy inside and a beautifully golden-brown crust.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 3h25m

Yield 32

Number Of Ingredients 7

6 to 7 cups Gold Medal™ All-Purpose Flour
3 tablespoons sugar
1 tablespoon salt
2 tablespoons shortening
2 packages regular or quick active dry yeast (4 1/2 teaspoons)
2 1/4 cups very warm water (120° to 130°F)
2 tablespoons butter or margarine, melted, if desired

Steps:

  • In large bowl, stir 3 1/2 cups of the flour, the sugar, salt, shortening and yeast until well mixed. Add warm water. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1 cup at a time, to make dough easy to handle.
  • Place dough on lightly floured surface. Knead about 10 minutes or until dough is smooth and springy. Grease large bowl with shortening. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap and let rise in warm place 40 to 60 minutes or until dough has doubled in size. Dough is ready if indentation remains when touched.
  • Grease bottoms and sides of two 8x4-inch or 9x5-inch loaf pans with shortening or spray with cooking spray.
  • Gently push fist into dough to deflate. Divide dough in half. Flatten each half with hands or rolling pin into 18x9-inch rectangle on lightly floured surface. Roll dough up tightly, beginning at 9-inch side. Press with thumbs to seal after each turn. Pinch edge of dough into roll to seal. Pinch each end of roll to seal. Fold ends under loaf. Place seam side down in pan. Brush loaves lightly with butter. Cover loosely with plastic wrap and let rise in warm place 35 to 50 minutes or until dough has doubled in size.
  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 425°F.
  • Bake 25 to 30 minutes or until loaves are deep golden brown and sound hollow when tapped. Remove from pans to wire rack. Brush loaves with butter; cool.

SWEET COUNTRY CORNBREAD - GOLD MEDAL FLOUR

Sweet Country Cornbread - Gold Medal Flour image

You can use yellow, white or blue cornmeal to make this classic cornbread.

Provided by General Mills

Time 35m

Yield 12

Number Of Ingredients 8

1 cup milk
1/4 cup butter or margarine, melted
1 egg
1 1/4 cups yellow, white or blue cornmeal
1 cup Gold Medal™ all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400°F. Grease bottom and side of round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches.
  • Beat milk, butter and egg in large bowl. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Pour batter into pan.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Not all cornmeal is yellow! It can also be white or blue, depending on the type of corn it came from.
  • To ensure recipe success if using a vegetable oil spread, use a spread with at least 65% vegetable oil.
  • Rise to the occasion! If using self-rising flour, there is no need to add baking powder and salt.
  • If you prefer corn muffins, grease just the bottoms of 12 regular-size muffin cups, or place paper baking cups in muffin cups. Fill about 3/4 full with batter.

GOLD MEDAL® MONKEY BREAD

Gold Medal® Monkey Bread image

Hosting a crowd for brunch? This sticky cinnamon- and nut-filled loaf, served warm from the oven, is sure to be a hit.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 3h25m

Yield 16

Number Of Ingredients 11

3 1/2 to 4 cups Gold Medal™ all-purpose flour
1/3 cup granulated sugar
1 teaspoon salt
1 package regular active or fast-acting dry yeast (2 1/4 teaspoons)
1 cup water
1/3 cup butter, room temperature
1 large egg
3/4 cup granulated sugar
1/2 cup finely chopped nuts
1 teaspoon ground cinnamon
1/2 cup butter, melted

Steps:

  • In a large bowl, stir 2 cups of the flour, 1/3 cup sugar, the salt and yeast with wooden spoon until well mixed. In 1-quart saucepan, heat water and 1/3 cup butter over medium-low heat, stirring frequently, until very warm and an instant-read thermometer reads 120°F to 130°F. Add water mixture and egg to flour mixture. Beat with wire whisk or an electric mixer on low speed 1 minute, stopping frequently to scrape batter from side and bottom of bowl with rubber spatula, until smooth. Beat on medium speed 1 minute, stopping frequently to scrape bowl. With wooden spoon, stir in enough of the remaining flour, 1 cup at a time, until dough is soft, leaves side of bowl and is easy to handle (dough may be slightly sticky).
  • Place dough on lightly floured surface; roll ball of dough around 3 or 4 times to cover with flour. Knead by folding dough toward you, then with the heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn and repeat. Continue kneading about 10 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy.
  • Spray large bowl with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place 1 hour to 1 hour 30 minutes or until dough has doubled in size. Dough is ready if indentation remains when touched.
  • Spray 10-inch angel food (tube) cake pan or 12-cup fluted tube cake pan with baking spray with flour. (If angel food cake pan has removable bottom, line pan with foil before spraying to help prevent the sugar mixture from dripping in the oven during baking.) In a small bowl, mix 3/4 cup sugar, the nuts and cinnamon.
  • Gently push fist into dough to deflate. Shape dough into about 25 balls, 1 1/2 inches in diameter. Dip each ball into melted butter, then into sugar-cinnamon mixture. Place single layer of balls in pan so they just touch. Top with another layer of balls. Cover pan loosely with plastic wrap; let rise in warm place about 40 minutes or until dough has doubled in size. Remove plastic wrap.
  • Move oven rack to low position so that top of pan will be in center of oven. Heat oven to 375°F. Bake 35 to 40 minutes or until golden brown. (If bread browns too quickly, cover loosely with foil.) Run a metal spatula or knife around edge of pan to loosen bread. Place heatproof serving plate upside down on pan; holding plate and pan with pot holders, turn plate and pan over together. Let pan remain 1 minute so butter-sugar mixture can drizzle over bread, then remove pan. Serve bread while warm, pulling it apart using 2 forks or your fingers.

BACON CHEDDAR MONKEY BREAD

Bacon Cheddar Monkey Bread image

This Bacon Cheddar Monkey Bread is a scratch-made savory pull-apart bread that's extra cheesy and loaded with bacon bliss.

Provided by Maegan - The BakerMama

Categories     Breakfast

Time 2h40m

Yield 10

Number Of Ingredients 10

4 tablespoons butter, melted & slightly cooled
3/4 cup milk
1 large egg
1 teaspoon sugar
1 (1/4 ounce) package active dry yeast (2-1/4 teaspoons)
1/4 cup warm water
2-1/2 cups bread flour (or all-purpose flour)
1 teaspoon salt
12 slices bacon
3 cups shredded cheddar cheese

Steps:

  • In a large bowl, melt the butter. Set aside to cool slightly.
  • Add the yeast and sugar to a small bowl. Gently pour the warm water over it. Let proof until foamy, about 10 minutes.
  • Once butter is slightly cooled, whisk in the milk, egg and yeast mixture. Add the flour and salt and stir until well combined. Using well-floured hands, form dough into a moist ball. Place in a buttered bowl and cover in plastic wrap. Let dough rise in a warm place until doubled in size, about 1-1/2 hours.
  • While the dough is rising, fry the bacon until extra crisp, reserving 1/4 cup of the bacon fat. Let bacon cool on a paper towel and then crumble into bits.
  • Preheat oven to 350°F. Butter a 9 or 10-inch tube pan. Sprinkle 1/4 cup cheese and a few tablespoons of bacon onto the bottom of the tube pan.
  • Gently punch down on the risen dough to release the air bubbles. Take half of the dough and form it into 1-inch size balls, dipping each one into the reserved bacon fat before placing into the bottom of the tube pan. There should be an even layer of dough balls in the bottom of the tube pan with about a thumbs space between each one. Sprinkle dough balls with 1-1/4 cups cheese and half of the remaining bacon bits. Form remaining dough into 1-inch size balls, dip in remaining bacon fat and place on top of the first layer in the tube pan. Sprinkle dough balls evenly with remaining cheese and bacon bits.
  • Place tube pan on a baking sheet and bake in the preheated oven for 35-40 minutes or until golden brown and cheese is melted and crisp on top.
  • Let cool for just 5 minutes before running a knife around the edges of the bread and inverting it onto a serving plate. Serve warm or cooled.

  • Make the sponge. In the mixer bowl, preferably with the whisk attachment (#4 if using a KitchenAid), beat together the flour, water, honey, and yeast until very smooth, to incorporate air, about 3 minutes. The sponge will be the consistency of a thick batter. Scrape down the sides of the bowl and set it aside, covered with plastic wrap.
  • Combine the ingredients for the flour mixture and add to the sponge. In a medium bowl, whisk together the flour, dry milk, and yeast. Sprinkle this on top of the sponge and cover it tightly with plastic wrap. Allow it to ferment for 1 to 4 hours at room temperature. (During this time, the sponge will bubble through the flour mixture in places; this is fine.)
  • Mix the dough. Add the butter and mix with the dough hook on low speed (#2 KitchenAid) until the flour is moistened. Then mix on medium speed (#4 Kitchen Aid) for 3 minutes. Allow the dough to rest for 20 minutes.
