SILVER AND GOLD POPCORN CONFETTI BUNDT CAKE
Steps:
- Spray a 12-cup Bundt pan with cooking spray. In a large bowl, combine the caramel popcorn, plain popcorn and macadamia nuts and toss to blend.
- Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring constantly, until the marshmallows are melted. Pour the popcorn mixture into the melted marshmallows and stir quickly to thoroughly coat all the popcorn. Transfer to the prepared pan and press the mixture with a rubber spatula to compact it. Let sit for 1 hour to set.
- With a plastic knife or offset spatula, run it along the edge of the pan to loosen the cake. Turn the pan upside-down onto a serving platter to release the cake. Sprinkle with the gold and silver sprinkles.

- Preheat oven to 350 degrees F (175 degrees C).
- Cream 1/2 cup butter and 1 cup sugar; add egg yolks, mixing well. Combine 2 cups flour and 2 teaspoons baking powder. Add flour mixture alternately with 2/3 cup milk to creamed mixture. Pour into two greased and floured 9 inch round pans.
- Bake for 20 to 25 minutes, until done. Cool.
- Cream 1 cup sugar and 1/2 cup butter. Combine 2 cups flour and 2 teaspoons baking powder; add to creamed mixture alternately with 2/3 cup milk. Beat egg whites, and fold into batter. Stir in flavoring. Pour into two greased and floured 9 inch round pans.
- Bake for 20 to 25 minutes. Cool.
- Spread your choice of frosting between layers, alternating yellow and white layers. Frost outside of cake.

- Preheat oven to 375°F. Butter a 15x10-inch baking pan, line with parchment paper, then butter paper.
- In a large skillet cook sugar, 2 Tbsp. water, and the corn syrup over medium-high without stirring 2 minutes or until melted and showing signs of caramelizing (beginning to brown). Stir; cook 3 to 4 minutes more or until evenly dark and starting to smoke. Remove from heat; stir in almonds and a pinch of salt. Pour mixture onto a silicone baking mat or lightly buttered parchment paper; let cool.
- In a large heatproof bowl whisk together egg whites and sugar. (Mixture will be thick and grainy.) Place bowl over a saucepan of simmering water, being careful that bowl doesn't touch water. Whisk 10 minutes or until 160°F, sugar is completely dissolved, and mixture is smooth. Remove bowl from saucepan.
- Preheat oven to 250°F. Pipe half the meringue in the pastry bag into 3/4- to 1-inch mounds (mushroom caps) on a baking sheet lined with parchment paper (about 20 mounds). Pipe remaining meringue into squat stems that come to a point (about 20 stems). Bake 30 minutes. Turn off oven; let meringues stand in cooling oven 1 hour. (Meringues can be made 1 day ahead. Store in an airtight container at room temperature.)
