EASY JASMINE RICE PUDDING



Easy Jasmine Rice Pudding image

Treat yourself to a comforting bowl of warm, creamy rice pudding and enjoy a better night's sleep. The goji berries sprinkled on top add fruity chew, while the pepitas offer nutty crunch and a tryptophan boost. Look for both at specialty grocery stores. If you can't find them, sub tart cherries or pomegranates for the goji berries and walnuts for the pepitas; walnuts also contain tryptophan. A mild, less expensive honey works beautifully here; save the pricier, more robust honeys for a recipe where their flavor will be front and center.

3 1/2 cups 2% reduced-fat milk
2/3 cup water
1/3 cup honey
1/2 teaspoon kosher salt
3/4 cup uncooked jasmine rice
1 1/2 teaspoons vanilla extract
6 tablespoons chopped dried goji berries
6 tablespoons toasted unsalted pepitas (shelled pumpkin seeds)

Steps:

  • Bring milk, water, honey, and salt to a simmer in a medium saucepan over medium-high. Stir in rice, and reduce heat to medium-low. Cook, uncovered, stirring often, until rice is tender and mixture is thickened, about 30 minutes.
  • Remove from heat, and stir in vanilla. Divide mixture evenly among 6 bowls; top each with 1 tablespoon goji berries and 1 tablespoon pepitas. Serve warm.

This is a super healthy version of rice pudding, which is easy to make & packed full of goodness. It comes from Nutrition Housecall. Time to make does not include chilling time. For a nice alternative use dried cranberries or blueberries.

3 ounces dried goji berries
3 ounces seedless golden raisins
1/2 cup quick long grain brown rice
1 cup water
3 cups skim milk or 3 cups soymilk
3/4 cup agave syrup or 3/4 cup honey
3 omega- 3 eggs or 3 free range eggs
1 teaspoon vanilla extract
1 teaspoon sea salt
1 teaspoon ground cinnamon
of fresh mint, extra raisins & goji berries to garnish

Steps:

  • Using a large, heavy sauce pot bring water to a rolling boil. Add salt and rice. Cover, reduce heat, and cook rice until done, approximately 15 to 20 minutes. Stir in milk and sugar. Cover and cook over very low heat for approximately 1 hour. The mixture should look like thin oatmeal.
  • Whip eggs to a froth. Add vanilla and half of the cinnamon. Slowly add about 6 ounces of hot mixture to beaten egg mixture to temper the egg.
  • Blend until smooth with an immersion / stick blender or in the liquidizer. Now return to the pan & cook on a medium heat (not too high) until the mixture thickens, about 2 minutes.
  • Add goji berries and raisins. Mix until even. Remove from heat immediately. Portion into six heat resistant glass or ceramic dessert dishes / glasses. I like to make a flower design with the goji berries & raisins, both get lovely after a couple of hours. Chill in refrigerator at least two hours or overnight.
  • Serve garnished with fresh mint leaves and powdered cinnamon.
