- Cook the onions in the oil for 6-7 mins, until they are softened and lightly coloured, then add the balsamic vinegar and 1 tbsp water. Cook for a further 2-3 mins. Roughly chop the olives and stir in. Leave to cool.
- Halve the peppers, remove the seeds and core. Put under a hot grill, skin side up, until the skins are charred. Remove and put into a food bag until cool enough to handle, then peel off the skins.
- Heat oven to 200C/fan 180C/gas 6. Roll out the pastry and line a 23-24cm deep flan tin. Line with baking paper and beans, then bake for 10 mins. Remove the paper and beans, then bake for 5 mins more, until the pastry is golden and crisp.
- Spread the onion mix over the base of the pastry case. Put the halved peppers on top, cut side up with tapered ends towards the centre. Slice the goat's cheese and put a few slices in each pepper half. Tuck the tomatoes in the gaps between the peppers.
- Bake for 20-25 mins until the cheese is lightly tinged brown and the tomatoes have burst. Scatter over the herb leaves and serve warm or at room temperature.

- Heat oven to 400°F. Lightly spread flour on rolling pin. Place puff pastry sheet on piece of cooking parchment paper; roll into 11x10-inch rectangle. Keep pastry on parchment; transfer to large cookie sheet. Score dough 1/2 inch from edge all the way around. Poke all over with fork. Bake 14 to 18 minutes or until golden brown.
- Meanwhile, in medium bowl, beat Goat Cheese Spread ingredients with whisk. In small bowl, mix bell pepper, artichoke hearts, arugula, Parmesan cheese, olive oil and 1/8 teaspoon salt.
- Drop goat cheese mixture by dollops evenly over center of tart, on top of hot dough; let stand 1 minute. Spread cheese mixture to within 1/2 inch of edges. Top with pepper and artichoke mixture, followed by pine nuts. Cut into 4 rows by 3 rows.

- Roll out the pastry onto a floured surface to the thickness of a £1 coin. Use to line a 20 x 3.5cm deep loose-based tart tin. Prick the base with a fork, cover and chill for 30 mins, or put in the freezer for 15 mins.
- Heat oven to 200C/180C fan/gas 6. Line the pastry with baking parchment and fill with baking beans (or dried rice or beans). Put the tin on a baking sheet and bake for 15 mins. Remove the parchment and beans and cook for another 8-10 mins until a pale biscuit colour. Turn the oven down to 180C/160C fan/gas 4.
- Meanwhile, prepare the filling. In a large pan, heat the oil over a medium heat, add the onion, fennel and pepper, and cook for about 15 mins until soft and beginning to caramelise. Add the garlic and cook for a few mins more. Allow to cool.
- Lightly whisk the eggs, cream and milk together, then add the paprika and some seasoning. Tip the veg into the tart shell and dot over with cheese and olives. Pour over the eggs, then put the tin in the oven. Bake the tart for 20-25 mins until golden and set. Cool on a wire rack, then remove from the tin and cut into slices. Serve with caper berries scattered around, if you like. This can be eaten at room temperature or reheated later.

FRENCH STUFFED RED BELL PEPPERS WITH FENNEL AND GOAT'S CHEESE
One of my most popular vegetarian recipes at "Auberge de la Fontaine" and also great served as a starter too. There is something very theraputic about making this dish - choosing the plump red peppers & fresh fennel bulbs - then selecting a fine Chevre - goat's cheese! It is delicious served warm or at room temperature with the garlicky Balsamic vinegar & olive oil dressing they are roasted in, drizzled over the top. Mop up the juices with crusty fresh French bread and serve with a simple tossed salad. These also make a very colourful accompaniment for most main courses.

- Pre-heat the oven to 120C/240F/Gas 1.
- Cut the peppers in half, discard the core & seeds and also trim away the white membrane too.
- Grease a Le Creuset roasting or ovenproof dish.
- Cut the onion & fennel bulb into 6 wedges each. (Keep the the delicate green fronds from the fennel bulb & put to one side.).
- Put the onion wedges, fennel wedges & cushed garlic into a mixing bowl & add the olive oil, balsamic vinegar, salt & black pepper - mix well.
- Divide the onion & fennel wedges between the 6 pepper halves, arranging them neatly within the peppers & season well.Pour the remaining oil & vinegar dressing over the top of them.
- Bake for 1 hour and 30 minutes or until the peppers are soft & just tinged brown.
- Remove the stuffed peppers from the oven & increase the oven temperature to 200C/400F/Gas 6.
- Sprinkle the chopped sun-dried tomatoes over the top of the peppers.
- Slice the goats cheese & arrange over the top of the stuffed peppers; return them the oven for 5-10 minutes or until the cheese is melted & bubbling.
- Remove from the oven, leave to cool slightly and serve them warm or at room temperature with the cooked dressing drizzled over the top of them.
- Garnish with the green fronds kept from the fennel bulbs.
- Serve as a starter, 1 pepper half per person with a side salad or as a main course - 2 pepper halves per person with bread & salad.
- These can also be served as a very colourful & elegant vegetable accompaniment!

GOAT CHEESE AND ROASTED RED PEPPER TART

- Place the dough ingredients into a mixing bowl and blend until the dough holds together. Turn the dough onto a floured surface and knead until smooth. Place in an oiled bowl and cover with plastic. Let rise about 40 minutes. Punch down down and divide into two equal pieces. it into two equal pieces. Cover the pieces well with oiled plastic. Preheat the oven to 375ºF. Chop the spinach and place it in a small bowl. Blend in the garlic and set aside. Lightly coat a square or round 9 x 2-inch removable bottom tart or spring form pan with olive oil and set aside. Roll one piece of dough out on a floured surface into a 14-inch square or round (keeping the remaining dough covered with plastic wrap). Line the prepared pan with the rolled out dough, letting the excess dough drape over the sides of the pan. Spread half of the spinach mixture over the bottom of the dough. Spread half of the cheese mixture over the spinach, then half of the red peppers. Repeat the layers with the balance of ingredients, ending by drizzling the truffle oil evenly over the top layer. Salt and pepper to taste. Roll the remaining piece of dough out into an 11-inch square or round. With a pastry or pizza wheel, cut 10 one-inch wide strips. Place five of the strips an inch apart over the filling. Place the remaining strips across the first strips diagonally to create a lattice pattern. Trim the excess dough leaving a slight overhang. Roll the overhanging dough in towards the tart and press it down near the rim of the pan. Brush the top of the tart with the beaten egg and let it rise, covered with oiled plastic, for 30 minutes. Bake the tart on the oven rack closest to the heat source for 35 to 40 minutes, until the crust is golden brown. Cool the tart on a rack for five minutes before removing the pan.

- For the savory rosemary tart crust, mix together the flour, rosemary, salt, and garlic powder in a large bowl. Grate the frozen butter over the bowl, pausing to mix in the butter shards every 30 seconds so they don’t just form a large butter clump on the top of the bowl. Add the cold milk and then the water, 1 tablespoon at a time, stirring the dough with a wooden spoon and then working it slightly with your hands to incorporate all the flour. If it doesn’t come together, add another tablespoon of cold water and mix, repeat if necessary until a solid dough forms. Wrap with plastic wrap and refrigerate for 30 minutes before rolling it out until it is about 1/4 inch thick, making a circular shape that is at least 11 inches in diameter.
- Transfer the rolled up dough onto a well-greased and lightly floured 9-inch tart pan. Press the dough into the pan, trimming off the excess, and prick it all over with a fork. Cover it and place it in the freezer for 30 minutes. Preheat the oven to 350 degrees Fahrenheit. Grease a sheet of tin foil and gently press it into the crust, forming the sheet of tin foil to the shape of the crust. Place it in the oven and pre-bake the crust for about 15 to 20 minutes, or until it is still very pale but begins to look more crust-like than dough-like. - Preheat the oven to 375 degrees Fahrenheit. In a medium saucepan, heat the milk over medium low heat until hot but not boiling, stirring every couple minutes to keep the milk from scalding. Add the crumbled goat’s cheese and continue stirring until it is completely melted and smooth. Remove the pan from the heat and ladle a scoop of the milk mixture into the bowl of whisked eggs, whisking constantly. Repeat until half of the milk mixture is in the egg bowl. Empty the custard mixture into the pan and place it back over the heat, stirring every minute for 3 to 5 minutes until it thickens. Remove from heat and stir in the salt, pepper, garlic powder, and fresh fennel fronds.

- Make the shortcrust pastry. Put the flour and a pinch of salt into a large bowl. Add the butter and shortening or lard and rub in with your fingertips until it resembles crumbs. Add 4-5 tablespoons cold water and use your hands to mix it into a dough. Wrap in cling film and chill for 15 minutes. (Angela Hartnett’s tip: I like to use half butter and half shortening or lard, but feel free to use all butter for a richer, crumblier pastry.)
- Preheat the oven to 200°C/fan180°C/gas 6. Roll out the pastry thinly on a lightly floured surface, then use to line a 23cm round x 2-3cm deep fluted, loose-bottomed tart tin. Press the pastry into the corners of the tin. Leave the excess overhanging the edge – trim it slightly so you have a little pastry to patch up any holes later. The overhanging pastry will ensure the pastry case doesn’t shrink during cooking. Prick the pastry base a few times with a fork, line with baking paper and fill with rice or baking beans to weigh down. Place on a baking sheet and bake blind in the hot oven for 15 minutes. Remove the rice or beans and paper and bake for a further 5 minutes to dry out the pastry. Set aside. Reduce the oven temperature to 180°C/fan160°C/gas 4.
- Meanwhile, preheat the grill to high. Put the garlic cloves and peppers, skin-side up, on a baking tray. Grill for 8-10 minutes, until the peppers have blackened and both the garlic and peppers have softened. Transfer to a bowl, cover tightly with cling film, and set aside until cool enough to handle.
- Peel and cut the peppers into strips, then place in a saucepan. Squeeze the soft garlic from its skin and add to the pan, along with any juices in the bowl. Add the sugar, balsamic vinegar and wine and place over a medium heat. Bring to the boil, then simmer for 12-15 minutes, stirring occasionally, until the liquid has nearly all evaporated. Season to taste and set aside.
