GOAT CHEESE APPETIZER RECIPE
Steps:
- All of these proportions are of the "eyeball it" variety. As long as you wind up with equal parts walnuts, basil and cranberries, you're pretty much good to go.
- To make the candied walnuts melt the butter and brown sugar in a skillet and stir the walnuts until well coated. Let cool and harden on wax paper.
- Chop and mix with basil and cranberries. Turn mixture onto wax paper and roll the goat cheese in the mixture, pressing the mixture into all sides. Roll up in the wax paper and chill until just before serving.
- Place it on a platter, serve with crackers, and be prepared to have an appetizer steal the show from the main course.

- Place cheese in a small ovenproof dish, and bake at 325 degrees for 15 to 20 minutes until golden brown. Remove the dish from the oven, drizzle with olive oil, and garnish with fresh thyme (if desired) and whole pink peppercorns. Serve with sliced baguette or crackers.

- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.
