4 tablespoons (1/2 stick) butter, room temperature
3/4 cup (about) dry white breadcrumbs
2 tablespoons all purpose flour
2/3 cup whole milk
5 ounces soft fresh goat cheese (such as Montrachet), very coarsely crumbled
1/2 teaspoon salt
1/4 teaspoon pepper
2 large egg yolks
4 large egg whites

Steps:

  • Preheat oven to 350°F. Rub inside of six 3/4-cup soufflé dishes or ramekins with 2 tablespoons butter. Coat with breadcrumbs; tap out excess. Set aside.
  • Melt remaining 2 tablespoons butter in heavy large saucepan over medium-low heat. Add flour and cook 2 minutes, whisking constantly. Gradually whisk in milk. Increase heat to medium. Simmer mixture until very thick, stirring constantly, about 5 minutes. Add half of goat cheese and whisk until melted and smooth. Mix in salt and pepper. Whisk egg yolks in medium bowl to blend. Gradually whisk in hot soufflé base. Cool 5 minutes.
  • Beat whites in large bowl until stiff but not dry. Mix 1/4 of whites into soufflé base to lighten. Fold in remaining whites. Fold in remaining goat cheese. Divide mixture among prepared soufflé dishes. Place in 13x9x2-inch metal baking pan. Add enough hot water to pan to come halfway up sides of dishes.
  • Bake soufflés until puffed and golden brown on top and softly set in center, about 20 minutes. Serve soufflés immediately in their dishes. Or for twice-baked version, cool soufflés in dishes in water for 5 minutes. Remove soufflés from water. Run small sharp knife around sides of dishes to loosen soufflés. Turn out onto buttered baking sheet. Refrigerate up to 4 hours. Before serving, rewarm soufflés on same sheet in 350°F oven until heated through, about 10 minutes.

For the soufflés
3/4 cup walnuts, toasted lightly, cooled, and chopped fine
3 tablespoons unsalted butter
4 tablespoons all-purpose flour
1 cup milk
4 large eggs, separated, the whites at room temperature
1 1/2 cups crumbled mild goat cheese such as Montrachet (about 6 ounces)
1 teaspoon fresh thyme leaves or 1/4 teaspoon crumbled dried
a pinch of cream of tartar
For the salad
3 tablespoons Sherry vinegar
3/4 teaspoon Dijon-style mustard
4 tablespoons walnut oil
2 tablespoons olive oil
2 large bunches of watercress, rinsed, spun dry, and coarse stems discarded (about 5 cups)
5 cups torn frisée (French or Italian curly chicory, available at specialty produce markets), rinsed and spun dry

Steps:

  • Make the soufflés:
  • Coat the bottom and side of each of 8 buttered 1/2-cup ramekins with about 1 tablespoon of the walnuts and arrange the ramekins in a jelly-roll pan. In a small saucepan melt the butter over moderately low heat, whisk in the flour, and cook the roux, whisking, for 3 minutes. Add the milk in a stream, whisking, and boil the mixture over moderate heat, whisking, for 2 minutes, or until it is thick and smooth. Transfer the mixture to a bowl and let it cool slightly. Whisk in the yolks, 1 at a time, the goat cheese, the thyme, and salt and pepper to taste and whisk the mixture until it is combined well. In another bowl beat the whites with a pinch of salt until they are frothy, add the cream of tartar, and beat the whites until they just hold stiff peaks. Whisk one third of the whites into the cheese mixture and fold in the remaining whites gently but thoroughly. Divide the soufflé mixture among the ramekins, sprinkle each soufflé with about 1 1/2 teaspoons of the remaining walnuts, and bake the soufflés in the upper third of a preheated 400°F. oven for 20 minutes, or until they are puffed and golden.
  • Transfer a ramekin to each plate and serve the soufflés immediately.
  • Make the salad while the soufflés are baking:
  • In a bowl whisk together the vinegar, the mustard, and salt and pepper to taste, add the oils in a stream, whisking, and whisk the dressing until it is emulsified. In a bowl toss the watercress and the frisée with the dressing and divide the salad among 8 plates.

9 (17- by 12-inch) phyllo sheets, thawed if frozen
3/4 stick (6 tablespoons) unsalted butter, melted
2/3 cup rinsed and drained bottled red peppers (7-ounce jar), finely chopped and patted dry
5 ounces soft mild goat cheese (2/3 cup)
1/2 cup olive oil
For salad
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
3 tablespoons extra-virgin olive oil
8 ounces frisée, torn into bite-size pieces (8 cups)
2 tablespoons chopped pitted Kalamata or other brine-cured black olives

Steps:

  • Make phyllo triangles:
  • Cover phyllo stack with 2 overlapping sheets of plastic wrap and then a damp clean kitchen towel. Arrange 1 phyllo sheet on a work surface with a long side nearest you (keep remaining sheets covered) and brush with some butter. Top with 2 more phyllo sheets, brushing each with butter.
  • Cut buttered phyllo stack crosswise into 5 (12- by 3 1/3-inch) strips.
  • Put 2 teaspoons red peppers and 2 teaspoons goat cheese near 1 corner of a strip and fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag), maintaining triangular shape. Put triangle, seam side down, on a baking sheet and cover with plastic wrap. Make 14 more triangles in same manner, using remaining phyllo and filling (you may have a little butter left over).
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then fry triangles in 2 batches until golden, about 1 minute per side. Transfer with tongs to paper towels to drain.
  • Make salad:
  • Whisk together vinegar, mustard, and salt in a large bowl, then add oil in a slow stream, whisking until emulsified. Add frisée and olives and toss with dressing, then season with pepper. Mound salad on plates and arrange phyllo triangles alongside.

1 cup dry breadcrumbs
3 tablespoons cake flour
1 cup milk
10 ounces soft fresh goat cheese
3 egg yolks
salt and pepper
1 cup egg white (about 7 large)

Steps:

  • Position the rack in the center of the oven and preheat the oven to 425°. Butter eight 5-ounce ramekins, making sure to coat them well. Coat each ramekin with breadcrumbs then turn them over and tap out the excess. Reserve any remaining breadcrumbs.
  • Melt the 3 tablespoons butter in a stainless-steel skillet over medium-high heat. Whisk in the flour and cook for 20 seconds, whisking constantly. Whisk in the milk and cook for about 1 minute, whisking constantly, until the mixture has thickened to the consistency of a thin, pourable pudding.
  • Crumble 8 ounces of the cheese into a large mixing bowl. Pour the hot milk mixture over the goat cheese and mix well. Add the egg yolks and mix again. Season with salt and pepper.
  • Using an electric mixer with clean, dry beaters, beat the egg whites in a large bowl until stiff peaks form. Fold half of the whites into the cheese mixture to lighten it. Then gently fold in the remaining whites.
  • Divide half of the souffle mixture among the prepared ramekins. Crumble the remaining 2 ounces of goat cheese and divide among the ramekins, then top with the remaining half of the souffle mixture, dividing it equally among the ramekins. Sprinkle the remaining breadcrumbs over the top.
  • Place the ramekins in a large baking pan and pour in boiling water to come halfway up the sides of the ramekins.
  • Bake for about 25 minutes, or until the souffles are golden. Remove from the oven and let stand, still in their water bath, for 15 minutes.
  • Using a towel to hold the ramekins, run a knife around the inside rim to loosen. Turn out the souffles onto a baking sheet. The souffles may be held at room temperature for up to 6 hours before the final baking.
  • When ready to serve, bake the souffles in a 425° oven for 5-7 minutes, or until deep golden brown.

Remove from heat and whisk in mustard, yolks, and 1/4 cup Parmigiano-Reggiano until combined, then fold in goat cheese. (Cover surface of mixture with wax paper if not using immediately.)
  • Beat egg whites in a large bowl with an electric mixer until they just hold stiff peaks. Fold one third of whites into sauce to lighten, then fold in remaining whites gently but thoroughly.
  • Spoon batter into 8 phyllo cups and sprinkle with remaining Parmigiano-Reggiano. Bake in middle of oven until soufflés are puffed and golden, about 15 minutes.
  • Make salad while soufflés bake:
  • Whisk together vinegar, mustard, and salt in a bowl, then add oil in a slow stream, whisking until emulsified.
  • Just before soufflés are ready, toss frisée and radishes in a large bowl with just enough dressing to coat. Mound salad onto 8 plates and sprinkle with chives, then make a small nest in center of each.
