8 bacon strips, diced
1 package (4 ounces) herbed goat cheese
1/2 cup fresh arugula or baby spinach, finely chopped
3 tablespoons pine nuts, toasted

Steps:

  • In a small bowl, combine the oil, pesto and Parmesan cheese. Place bread slices on an ungreased baking sheet; brush with pesto mixture. Broil 3-4 in. from the heat for 3-4 minutes or until edges are lightly browned. , Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Goat Cheese, Pesto & Sun-Dried Tomato Terrine image

Serve this terrine with crackers, toasted baguette rounds or homemade pita chips.

Yield Yields about 1-1/2 cups.

Number Of Ingredients 7

10 oz. goat cheese
1/4 to 1/2 cup heavy cream
Kosher salt and freshly ground black pepper
3 Tbs. basil pesto (homemade or store-bought)
5 oil-packed sun-dried tomatoes, drained and finely chopped
1/4 cup pine nuts, toasted and coarsely chopped
Extra-virgin olive oil for drizzling

Steps:

  • Line the inside of a 2-cup sharply sloping bowl (about 4 inches across the top) with plastic; let the ends extend over the sides a few inches. In a mixing bowl, mash the goat cheese and 1/4 cup of the cream with a fork and season with 1/4 tsp. salt and a few grinds of pepper; add more cream if the cheese hasn't softened.
  • Spoon about one-third of the cheese into the lined bowl and pack it into an even layer. Spread the pesto almost completely to the sides of the first layer of cheese. Top with another third of the cheese, the sun-dried tomatoes, and all but 1/2 Tbs. of the pine nuts. Top with the remaining cheese. Pack down, fold the plastic over, and refrigerate for at least 30 minutes.
  • Half an hour before serving, take the bowl out of the refrigerator. Pull on the edges of the plastic to loosen the terrine from the bowl. Invert the terrine onto a plate, drizzle with a little olive oil, and let sit for 1/2 hour to warm up. Sprinkle with the remaining pine nuts, season liberally with pepper, and serve.

8 oz. burrata cheese (divided)
Salt flakes (to taste)
Freshly ground black pepper (to taste)
6 oz. blackberries (halved, as needed)
1/4 cup fresh mint (roughly chopped)
1 lemon (juiced)
2 teaspoons olive oil
Honey (for drizzle)

Steps:

  • Pre-heat oven to 375°F. Spread baguette slices on a baking sheet. Drizzle with olive oil (don't drench them, dry areas are ok) and sprinkle with salt as desired. Flip slices over and repeat so both sides are lightly covered with oil. Bake for 5-7 minutes on each side until golden brown. Once toasted, remove from pan and set aside.
  • Meanwhile, in a small bowl, mix together mint, lemon, olive oil, and a pinch of salt (to taste).
  • Layer the following on top of each toasted crostini: 1-2 tablespoons of burrata, freshly ground black pepper, a pinch of salt flakes, 3-4 blackberries, a drizzle of the mint mixture, and a drizzle of honey. Top with additional mint leaves and salt flakes as desired. Serve immediately.
