Goat cheeses comes in many shapes. If the goat cheese you find for this holiday appetizer recipe is in a log, use damp hands to shape it into a round.

Number Of Ingredients 5

see savings 1/2 17 - 17 1/2 ounce package frozen puff pastry (1 sheet), thawed
see savings tomato preserves or favorite fruit preserves* (about 3 tablespoons)
see savings 3 2 - 2 1/2 inches diameter rounds goat cheese (3 to 4 oz. each)
see savings 1 egg, beaten
see savings Fresh figs or grapes (optional)

Steps:

  • Preheat oven to 400 degree F. Line a baking sheet with foil; grease foil. Set aside.
  • Unfold pastry on a lightly floured surface; roll into a 12-inch square. Cut pastry into four 6-inch squares. Place 1 tablespoon preserves in center of 3 of the pastry squares. Place goat cheese atop preserves. Bring edges of pastry up and over cheese rounds, pleating and pinching edges to cover. Seal; trim excess pastry. Invert and place on prepared baking sheet, smooth side up. Brush pastry with egg. Cut small slits in pastry for steam to escape. Cut remaining pastry square into decorative leaves; place atop brushed pastry and brush with additional egg.
  • Bake for 20 to 22 minutes or until pastry is golden brown. Let stand 15 to 20 minutes before serving. If desired, serve with fresh figs. Makes 12 servings.

Use a hearty shortcrust base then top with creamy cheese and crunchy walnuts and contrast with watercress salad

3 tbsp olive oil
3 large onions , halved and thinly sliced
1 tsp caster sugar
2 tbsp chopped walnut
12 pitted Kalamata olives , halved
2 tsp chopped rosemary
500g pack all-butter shortcrust pastry
4 Capricorn goat's cheese , halved (keep the rind on)
8 walnuts halves
generous handfuls watercress
1 tbsp red wine vinegar
3 tbsp walnut oil

Steps:

  • For the onions, heat the oil in a non-stick pan. Add the onions, stir well, then cover and cook for 15 mins, stirring every now and then. Stir really well and add the sugar, lots of seasoning and the walnuts, olives and rosemary. Cook for 5 mins more, until soft and very golden.
  • Heat oven to 200C/180C fan/gas 6. Thinly roll out the pastry, then stamp out 8 fluted rounds with a 10cm cutter. Prick with a fork, then bake for 10 mins. Mix the dressing ingredients together. This can all be prepared a few days ahead.
  • Pile the onions onto the pastry rounds, top with goat's cheese and place a walnut half on top of the cheese. Bake for 10 mins until the cheese is melty. Toss the watercress with the dressing, pile onto plates and serve the pastry on top.

6 bacon strips, chopped
2 large onions, finely chopped
3 shallots, thinly sliced
1/2 teaspoon sugar
1/2 cup white wine
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
2 garlic cloves, minced
1/4 teaspoon pepper
1 sheet frozen puff pastry, thawed
1 large egg white, beaten
1 log (4 ounces) fresh goat cheese, cut into 12 slices

Steps:

  • Preheat oven to 400°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 teaspoons in pan. Add onions, shallots and sugar to drippings; cook and stir over medium heat until vegetables are golden brown, 15-20 minutes., Add wine, stirring to loosen browned bits from pan. Stir in thyme, garlic and pepper. Cook, uncovered, until liquid is evaporated, 2-3 minutes. Stir in bacon., On a lightly floured surface, unfold puff pastry. Cut into three 9x3-in. rectangles. Transfer to a parchment-lined baking sheet. Brush dough with egg white; top with onion mixture and goat cheese. Bake until golden brown, 16-20 minutes. Cut each rectangle into 4 appetizers. Garnish with additional thyme if desired.

2 17.3-ounce packages frozen puff pastry (4 sheets), thawed
1 egg, beaten to blend
6 ounces soft fresh goat cheese (about 3/4 cup packed)
1 tablespoon fresh lemon juice
1/4 teaspoon coarse kosher salt
3 medium Gala apples, peeled, quartered, cored, cut into 1/8-inch-thick slices
3 tablespoons unsalted butter, melted
3/4 cup honey (preferably dark), divided
1/2 teaspoon (scant) ground allspice

Steps:

  • Line 2 rimmed baking sheets with parchment paper. Roll out each puff pastry sheet on lightly floured surface to 11-inch square. Using 5-inch-diameter cookie cutter or bowl, cut out 4 rounds from each pastry sheet, forming 16 rounds total. Divide 8 pastry rounds between prepared baking sheets; pierce rounds all over with fork. Using 3 1/2-inch-diameter cookie cutter or bowl, cut out smaller rounds from center of remaining 8 rounds (reserve 3 1/2-inch rounds for another use), forming eight 5-inch-diameter rings. Brush outer 1-inch edges of 5-inch rounds on baking sheets with beaten egg; top each with 1 pastry ring. Freeze at least 30 minutes. DO AHEAD: Can be made 1 day ahead. Cover and keep frozen. Do not thaw before continuing.
  • Preheat oven to 375°F. Mix cheese, lemon juice, and salt in bowl; spread mixture inside rings on frozen pastry rounds. Overlap apple slices atop cheese. Mix butter and 1/4 cup honey in small bowl; brush over apples. Sprinkle with allspice. Bake until apples are tender and pastry is golden, about 35 minutes. Place tartlets on plates. Drizzle 1 tablespoon honey over each and serve warm or at room temperature.
