Roasted Garlic and Baked Goat Cheese Appetizer image

Roasted Garlic and Baked Goat Cheese make an easy, yet elegant appetizer to serve to guests on the coming chilly nights. It also makes a meal in itself with the proper accompaniments. Cheese and bread always pleases!

2 head garlic
1/4 cup olive oil
salt
black pepper
4 oz goat cheese log ((1 cup))
2 tbsp panko bread crumbs
1 tsp dried tarragon
1 French baguette (sliced)

Steps:

  • Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
  • Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
  • Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.
  • In a small bowl, combine the bread crumbs, tarragon, and a little more freshly cracked pepper. Sprinkle the bread crumb mixture over all sides of the log, turning as necessary.
  • Bake cheese, uncovered for 30 minutes alongside the garlic.
  • The garlic cloves will practically pop out of their skins. Spread them on baguette slices along with some goat cheese.

9 -10 medium garlic cloves, skins left on
2 ounces goat cheese, softened
6 tablespoons unsalted butter, softened
2 tablespoons parmesan cheese, grated
1/4 teaspoon table salt
1 loaf Italian bread, halved lengthwise
ground black pepper

Steps:

  • Adjust oven rack to middle position and heat oven to 500 degrees.
  • Meanwhile, toast garlic cloves in small skillet over medium heat, shaking pan occasionally, until fragrant and color of cloves deepens slightly, about 8 minutes. When cool enough to handle, skin and mince cloves (you should have about 3 tablespoons). Using dinner fork, mash garlic, goat cheese, butter, cheese, and salt in small bowl until thoroughly combined.
  • Spread cut sides of loaf evenly with garlic butter mixture; season to taste with pepper. Transfer loaf halves, buttered side up, onto baking sheet; bake, reversing position of baking sheet in oven from front to back halfway through baking time, until surface of bread is golden brown and toasted, 10 to 12 minutes. Cut each half into 2-inch slices; serve immediately.

Savory Rosemary Goat Cheese Quick Bread image

Try mixing up this quick bread-which stars the classic Provencal pairing of goat cheese and rosemary-as soon as you get home from work. It bakes up in just 50 minutes. That's enough time for you to change into some comfy clothes, warm up a can of soup, toss a bit of salad-and pour yourself a glass of Sauvignon Blanc, to go with it.

Number Of Ingredients 10

4 tablespoons unsalted butter, softened, plus additional for buttering the loaf pan
1 large egg, beaten
1 cup reduced-fat (1 percent) milk
1 cup all-purpose flour
1 cup white whole wheat flour
1 tablespoon baking powder
1 teaspoon dried rosemary, roughly chopped, or 1/2 teaspoon chopped fresh rosemary
1/4 teaspoon kosher salt
1/3 cup golden raisins
2 ounces goat cheese, very cold, cut into 1/2-inch chunks

Steps:

  • Heat the oven to 350 degrees F. Butter a 9-inch loaf pan.
  • Place the egg in a medium bowl; whisk in the milk and 4 tablespoons butter. (It's okay if there are still small chunks of butter remaining after whisking.)
  • In a large bowl, mix together the flours, baking powder, rosemary and salt with a fork. Add the egg mixture and stir with a wooden spoon just until combined. Sprinkle the raisins and goat cheese over the batter; gently fold in with just 2 or 3 strokes.
  • Pour into the prepared pan and bake until a toothpick inserted into the middle of the bread comes out clean, 50 to 55 minutes. Cool slightly, and slice.
