If you like biscuits, and you love goat cheese, these fluffy creations are amazing. I saw them featured on Oprah, and after giving them a try, I understand why they're so popular!

Number Of Ingredients 8

2 cups self-rising flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon table salt
2 ounces soft fresh goat cheese
1 cup buttermilk
4 1/2 tablespoons butter
1/4 cup grated parmesan cheese

Steps:

  • Preheat your oven to 425.
  • Place one 10-inch cast iron pan into the oven while it is preheating. Put flour, salt, baking soda and baking powder into a medium-sized bowl. Cut in the butter and goat cheese.
  • Make a well in the middle of the ingredients and pour in the milk. Stir until the mix is moistened, adding an extra tablespoon of milk if needed.
  • Remove skillet from oven and put in 1 tablespoons of butter. When the butter has melted, drop 1/4 cupfuls of batter into the pan. Brush the tops of the biscuits with melted butter.
  • Bake from 14-16 minutes until browned on the top and bottom. Remove from the oven and sprinkle with the grated cheese. Enjoy warm!

1 teaspoon salt
4 tablespoons cold butter
4 tablespoons goat cheese
1 cup buttermilk
extra butter, to grease pan and top biscuits
1/4 cup grated parmesan cheese

Steps:

Make a well in the center and pour in the milk, adding an extra tablespoon if needed. Remove the hot skillet from the oven and place a tablespoon of butter into the pan. When the butter has melted, drop (1/4 c) scoopfuls of batter into the pan. Brush the tops with melted butter. Bake 14-16 min, until browned on top and bottom. Remove from the oven and sprinkle with grated cheese. Enjoy warm!

1 teaspoon dried chives
½ teaspoon garlic salt
½ teaspoon salt
¼ cup shortening
¾ cup milk
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet.
  • In a large bowl, mix together flour, baking powder, chives, garlic salt and salt. Cut in the shortening until the mixture has only small lumps. Add milk and cheese and stir until moistened. Drop dough by heaping spoonfuls onto prepared baking sheet.
  • Bake in preheated oven for 12 to 15 minutes, until golden.
