Steps:
- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.
DITALINI WITH ROASTED TOMATO SAUCE AND GOAT CHEESE
Make this because it tastes awesome. What the hot oven does to the deep red San Marzano tomatoes is a wonder to behold, and produces a pasta sauce with some serious depth of flavor. The always entertaining ditalini are a perfect medium for the rich sauce, smoky oregano, and creamy goat cheese.

- Preheat oven to 425 degrees F (220 degrees C).
- Drizzle olive oil over the bottom of a 9x13-inch casserole dish. Pour tomatoes and their juices into the dish; cut each tomato into 3 pieces. Sprinkle in onion, garlic, red pepper flakes, and 2 teaspoons oregano; stir to combine.
- Roast in the preheated oven for 1 hour. Remove dish from oven, stir briefly, return to oven and roast for an additional 15 minutes.
- Transfer roasted tomato mixture to a saucepan; pour in water. Process mixture with an immersion blender or potato masher until desired sauce consistency is reached. Stir in 1 teaspoon oregano. Season with salt and black pepper to taste. Set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ditalini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 8 to 10 minutes. Drain well and return to pot.
- Pour tomato sauce over ditalini; stir to combine. Stir in goat cheese.

- Preheat conventional oven or toaster oven to 350°F
- Mix together the garlic and olive oil and spread over bread slices and place on a baking sheet.
- Pat the goat cheese into a 1/2-inch pancake and place in shallow baking dish.
- Ladle tomato sauce into dish to come up to top edge of cheese (do not cover the cheese with sauce).
- Bake, uncovered, until sauce begins to bubble at edges and cheese is hot, about 25 minutes. During last 10 minutes of baking, toast bread until golden brown.
- Garnish cheese with basil if using.

GOAT CHEESE AND TOMATO SAUCE DIP

- Mash the goat cheese and cream cheese together with a wooden spoon. Work in the roasted garlic, basil, and thyme. Stir in 4 tablespoons of the olive oil. Refrigerate this mixture at least 1 hour. Heat the remaining tablespoon of oil in a medium-size skillet. Add the onion and minced garlic and sauté over medium heat until they are tender but not brown. Stir in the tomatoes, breaking them up with a fork. Cook, uncovered, over very low heat about 40 minutes, or until the tomatoes are very soft. Season with salt and pepper and add the pinch of sugar. Remove from the heat and place the whole basil leaves on top. (you may refrigerate for up to 2 days until ready to serve. Bring the tomato sauce to a simmer before resuming the recipe) To serve, place about the cheese mixture in a mound in a shallow serving dish. Spoon the warm tomato sauce over and around the cheese and serve with the crackers and bread slices.
