PISTACHIO-GOAT CHEESE BITES
These are delicious little nibbles. I love their simplicity--they are quick to put together and can easily be made on the spur of the moment for an impromptu gathering, but can also be prepared up to a day ahead. The recipe is adapted from one published in "In Style" magazine. Prep time includes 15 minutes refrigeration time.

GOAT CHEESE AND PISTACHIO BAKED CHICKEN
This goat cheese and pistachio baked chicken is simple enough to throw together on a week night but tastes like you spent a ton of time on it. The secret is the honey mustard, which gives it a sweet and spicy zest, which when paired with the creaminess of the goat cheese and the salty crunch of pistachios makes for one incredible weekday dinner!

Steps:
- Preheat oven to 350 degrees and pull the goat cheese out of the fridge to let soften.
- Between two sheets of parchment paper, pound chicken until an even 1/4-1/2 inch thickness. Place in a Pyrex baking dish.
- Crush pistachios with either a food processor or by using a rolling pin and rolling over them in a large ziplock bag.
- Evenly spread the honey mustard over the chicken breasts until evenly coated.
- Use softened goat cheese to create the second layer on top of the chicken. It can be easiest to use your hands to create a thin goat cheese patty and place on each chicken breast.
- Evenly distribute the crushed pistachios over each chicken breast and gently press them into the goat cheese.
- Cover baking dish with tinfoil and bake for 15 minutes. Uncover and bake for 5-10 minutes until chicken is cooked through. Serve warm!
GOAT CHEESE AND PISTACHIO SPREAD
Steps:
- Heres a spread I served on Thanksgiving as a pre-dinner treat to keep the crowd from getting restless smelling the turkey hour after hour.... In food processor, combine garlic and salt, let sit for 10-15 minutes. Then add the goat cheese, butter and chives. Blend until smooth. Stir in the pistachios, garnish with more chives. Serve with crostini, crackers or a sliced baguette. I also served carrot and celery sticks. Source: www.epicurious.com Posted to EAT-L Digest by Tania Hewes on Dec 9, 1997

- Use a sharp knife and cutting board to chop up the dried cranberries. You don't have to worry too much about uniformity of the pieces, just chop them into smaller pieces.
- Place the chopped cranberries, chopped pistachios, goat cheese, pepper jelly and pinch of salt into the bowl of a stand mixer and blend the ingredients together on medium speed until the ingredients are equally blended in. (You can also use a large bowl and hand mixer to do this step.)
- At this point you can simply spoon the cheese spread into a small serving dish and set it out with crackers, or you can shape the cheese spread: line a small, round bowl with plastic wrap and press the cheese spread firmly into the bowl. Cover the top with plastic and refrigerate the bowl for 30 minutes.

- Add beets to a pot and cover with room temperature water. Cover pot and bring to a boil. Reduce to a simmer, partially cover, and cook for 25-30 minutes or until beets are tender. To check for doneness, pierce them with a paring knife. It should slide out without any resistance. Transfer to a bowl, cool slightly and peel. The skin should rub off easily with your hands. Slice in half lengthwise and cut into wedges. Allow to cool completely.
- While beets cook, preheat oven to 350°F. Place nuts on a parchment lined baking sheet. Toss in oil and season with salt. Bake for about 8 minutes or until toasted and golden brown. Cool.
- In a food processor, add ¼ cup of nuts and garlic, and pulse until finely ground. Add basil and pulse until finely chopped. Slowly drizzle in olive oil and pulse until well combined. Start with 6 tbsp of oil and add more if pesto is too thick. Stir in lemon juice and season with salt to taste.
- Add softened goat cheese to a bowl. Stir in yogurt 1 or 2 tablespoons at a time until desired spreadable texture is reached. Season with salt to taste.
