1 garlic clove
1/4 teaspoon kosher salt
5 ounces goat cheese, room temperature
3 tablespoons unsalted butter, room temperature
1/4 cup pistachio nut, shelled, finely chopped
3 tablespoons fresh chives, finely chopped
1 dash ground pepper, to taste

Steps:

  • In a food processor fitted with a metal blade, process the garlic & salt until garlic is finely minced, then add the goat cheese & butter & process until combined & smooth.
  • Scatter nuts & chives over the top, then add a little ground pepper & pulse 2-3 times until combined.
  • Taste & adjust the seasoning, if necessary, then transfer to a serving bowl & ENJOY!

4 ounces soft goat cheese
3 tablespoons shelled salted pistachios, toasted and coarsely chopped
1 tablespoon finely chopped fresh chives, plus more for garnish
Freshly ground pepper
8 plump, soft dried dates (preferably Medjool), pitted and halved lengthwise

Steps:

  • Stir together goat cheese, 2 tablespoons pistachios, and chives in a small bowl until smooth. Season with pepper.
  • Arrange the dates, cut sides up, on a platter. Fit a pastry bag with a large round tip, and fill with goat-cheese mixture. Pipe mixture onto each date half to cover. (Alternatively, pipe goat-cheese mixture using a resealable plastic bag with 1 inch cut off of one corner, or simply spread mixture on dates with a butter knife.) Garnish dates with remaining tablespoon pistachios and more chives.

I love their simplicity--they are quick to put together and can easily be made on the spur of the moment for an impromptu gathering, but can also be prepared up to a day ahead. The recipe is adapted from one published in "In Style" magazine. Prep time includes 15 minutes refrigeration time.

1/4 cup shelled salted pistachios (I used double this amount)
6 ounces goat cheese, softened
2 ounces cream cheese, at room temperature

Steps:

  • Toast nuts in small skillet over medium heat until fragrant, about 3 minutes; chop finely.
  • Combine goat cheese and cream cheese in a medium bowl. Drop mixture by heaping teaspoons onto a parchment-lined baking sheet; refrigerate 15 minutes.
  • Roll into balls, then roll in chopped nuts.
  • Refrigerate, tightly covered, up to 1 day.

This goat cheese and pistachio baked chicken is simple enough to throw together on a week night but tastes like you spent a ton of time on it. The secret is the honey mustard, which gives it a sweet and spicy zest, which when paired with the creaminess of the goat cheese and the salty crunch of pistachios makes for one incredible weekday dinner!

1 1/2 lb chicken breast
1 c. salted pistachios
1/4 cup honey mustard
8 oz goat cheese (log preferred over crumbles, though both will work)

Steps:

  • Preheat oven to 350 degrees and pull the goat cheese out of the fridge to let soften.
  • Between two sheets of parchment paper, pound chicken until an even 1/4-1/2 inch thickness. Place in a Pyrex baking dish.
  • Crush pistachios with either a food processor or by using a rolling pin and rolling over them in a large ziplock bag.
  • Evenly spread the honey mustard over the chicken breasts until evenly coated.
  • Use softened goat cheese to create the second layer on top of the chicken. It can be easiest to use your hands to create a thin goat cheese patty and place on each chicken breast.
  • Evenly distribute the crushed pistachios over each chicken breast and gently press them into the goat cheese.
  • Cover baking dish with tinfoil and bake for 15 minutes. Uncover and bake for 5-10 minutes until chicken is cooked through. Serve warm!

1/4 cup thinly sliced chives plus chive blades for garnish
1 loaf of French bread, cut into 1/4-inch-thick slices and toasted lightly

Steps:

  • In a bowl with an electric mixer beat together the goat cheese, the butter, the garlic paste, the pistachio nuts, the sliced chives, and salt and pepper to taste until the mixture is combined well, spoon the spread into a serving dish, and chill it, its surface covered with plastic wrap, overnight. The spread may be made 2 days in advance and kept covered and chilled. Garnish the spread with the chive blades and serve it with the toasts.
