4 boneless skinless chicken breasts, cut into chunks
3 tablespoons vegetable oil
1 teaspoon mustard seeds
1 large onion, sliced
3 garlic cloves, finely sliced
1 (14 ounce) can coconut milk
salt
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 1/2 tablespoons ground coriander
1 teaspoon ground cumin
1 teaspoon cayenne pepper
1 tablespoon lemon juice
1/2 teaspoon salt
1/3 cup water

Steps:

  • Mix together all the marinade ingredients to give you a loose, smooth paste. Add the chicken pieces and coat them in the paste. They are best left to marinate for around 30 minutes to 1 hour, but if you're in a hurry a few minutes will do.
  • Heat the oil in a deep frying pan and add the mustard seeds. When they start to pop and jump about in the pan, add the onion and garlic. Cook until they're golden brown before adding the chicken and any extra paste from the marinade. Fry over a gentle heat for about 8 minutes before adding the coconut milk. Increase the heat slightly and bring to a simmer. Cook for a further 10-12 minutes until the sauce has thickened slightly before seasoning with salt if necessary and serving with rice or naan bread.

This authentic Goan-style chicken curry recipe is one of Madhur Jaffrey's favourites. The combination of moist chicken, with rich coconut and aromatic spices is irresistible.

Steps:

  • Into a small, preferably cast-iron, frying pan put the coriander seeds, cumin seeds,mustard seeds, cinnamon, cloves, peppercorns, nutmeg and red chilli. Place the pan over medium heat. Now quickly dry-roast the spices, stirring frequently until they emit a very pleasant 'roasted' aroma. Empty the spices into a clean coffee grinder or spice grinder and grind until fine, then place in a bowl. Put the coconut into the same frying pan and dry-roast it over medium heat, stirring it continuously. The coconut should pick up lots of brown flecks and also smell 'roasted'. Add to the dry-roasted spices. Put the garlic, ginger and green chilli into a blender along with 4 tablespoons water. Process to a paste. Put the oil in a 25-30cm (10-12in) frying pan over medium-high heat.When the oil is hot, put in the onions and cook until they pick up brown spots. Now pour in the garlic-ginger mixture from the blender and stir once. Lower the heat to medium. Put in the chicken pieces, salt and the spice-coconut mixture. Stir-fry the chicken for 3-4 minutes or until it loses its pinkness and turns slightly brown. Add 300ml (½ pint) water and bring to a simmer. Cover the pan tightly, reduce the heat to low, and cook for 25-30 minutes or until the chicken is tender. Stir a few times during cooking, turning over each piece of chicken so that it colours evenly. Fish out the cinnamon pieces before serving.

6 peppers red chile peppers
1 tablespoon cumin seeds
1 teaspoon coriander seeds
1 (1 inch) piece cinnamon stick
1 (1 inch) piece fresh ginger, peeled
5 cloves garlic, minced
4 peppercorns
4 whole cloves
2 tablespoons oil
1 large onion, finely chopped
1 (2 to 3 pound) whole chicken, cut into 6 pieces
water as needed
2 tablespoons tamarind juice, or more to taste
salt to taste
2 teaspoons fresh cilantro leaves, or to taste

Steps:

  • Combine red chile peppers, cumin seeds, coriander seeds, cinnamon stick, ginger, garlic, peppercorns, and cloves in a mortar and pestle or a food processor; grind or process into a paste (masala paste).
  • Heat oil in a large pot. Add onion and until golden brown. Stir in masala paste and cook for 2 minutes. Add pieces of chicken; mix well and pour in enough cold water to cover the chicken. Bring to a boil.
  • Cover and simmer until chicken is cooked through, about 30 minutes. Season to taste with tamarind juice and salt. Stir well and cook for additional 5 minutes. Garnish with fresh cilantro.

  • Heat the oven to 200°C/180°C fan/gas 6. Put the rice in a medium saucepan, cover with 400ml cold water, then bring to the boil. Turn the heat as low as you can, cover, then simmer for 12-15 minutes until the rice is cooked and the water is absorbed.
  • Meanwhile, roughly chop the chicken. Heat the oil in a frying pan over a medium- high heat, add the kit’s spices and cook for 20 seconds, stirring. Add the chicken and cook for 3-4 minutes until browned all over. Add the kit’s spice paste and fry for 2 minutes. Add the sauce and cook for 2 minutes, then add the spinach and yogurt. Simmer for 2-3 minutes until the chicken is cooked through. Warm the naans in the oven for 2 minutes.
  • Serve the curry with the rice, topped with yogurt and coriander (if using), with the Chutni and naans on the side.

  • Start by making the xaccuti masala. In a dry frying pan, roast the Kashmiri chillies, cumin seeds, coriander seeds, ajwain seeds, cloves, peppercorns, fennel seeds, poppy seeds, cinnamon stick and star anise over medium high heat until warm to the touch and fragrant. Allow to cool. .Now roast the coconut flakes until lightly browned. Set aside.
  • Pour this paste over the chicken in a large bowl and mix well to coat. You can start cooking the curry now but if you would like to marinate the chicken for a couple hours or overnight, it will be even better.
  • When ready to cook, heat the oil over high heat. When bubbles begin to form at the bottom of the pan, add the mustard seeds. When they begin to pop, lower the temperature to medium high and stir in the curry leaves and let them flavour the oil for about 30 seconds. You’ll know when your oil is perfectly flavoured because it will smell so nice. Add the chopped onions and fry until soft, lightly browned and translucent. Stir in the chillies and then the marinated chicken. Stir well to coat the chicken in the onion mixture. Add the stock or water and simmer for about 15 minutes until the chicken is tender and cooked through.
