GOAN FISH CURRY

Recipe video above. This famous Goan fish curry comes to you from Goa, a little pocket of Indian paradise that's all about the sun, surf, sand and excellent seafood! Deeply aromatic with a tomato and coconut based sauce, this recipe has a few more spices and steps than the more home-style recipes you'll find online because this aims to replicate the richer sauce and layers of flavour you get at (good) Indian restaurants.Once you've made this with fish, try it with prawns/shrimp - it's also excellent!SPICINESS: Quite spicy as written, but not blow-your-head-off! I thoroughly enjoy it as written, not suffering. See Spice Note below for adjustment to reduce / eliminate spiciness.

2 1/2 tbsp Kashmiri chilli powder ((Note 1))
1 tbsp coriander
2 tsp cumin
1 tsp turmeric
1/2 tsp fenugreek powder ((Note 2))
3/8 tsp ground cloves
6 cloves garlic (, minced)
1 tbsp fresh ginger (, finely grated)
2 tbsp tamarind puree ((Note 3))
1/2 red onion (, chopped)
6 tbsp water ((plus more, as needed))
3 tbsp vegetable oil
1/2 tsp black mustard seeds ((Note 4))
1/2 red onion (, cut in half again (like a quartered orange) and thinly sliced)
1 tbsp tomato paste
2/3 cup canned tomato pulp/polp ((Mutti), OR tomato passata or crushed tomato, Note 5))
2/3 cup water
400ml/ 14oz coconut milk (, full fat (Note 6))
1 1/4 tsp salt (, cooking/kosher (or 3/4 tsp fine table salt))
1 1/2 tsp sugar
1/4 tsp chilli powder ((pure chilli, not US Chili Powder which is a mix, Note 7))
2 long green chillies (, cut into half lengthwise and deseeded, optional (Note 8))
1 tomato (, cut into 8 wedges then into 2.5cm / 1" chunks)
600g / 1.2 lb firm-fleshed white fish (, cut into 3cm / 1.25" cubes (Note 9))
1/4 cup fresh coriander/cilantro leaves
Finely sliced green chillies (, optional)
Basmati rice

Steps:

  • Place Curry Paste ingredients in a tall jug or milkshake container (something that fits the head of a blender stick) then blitz on high for 5 to 10 seconds until the onion is pureed. Add more water if needed to make it puree.
  • Sizzle black mustard seeds: Heat oil over medium heat in a large pot. Add black mustard seeds and let them sizzle for 30 seconds - careful, they might pop!
  • Saute onion: Add red onion and cook for 3 minutes until edges start to tinge with gold.
  • Cook off curry paste: Add curry paste and cook for 3 minutes - to evaporate water, make spices bloom and cook garlic & ginger.
  • Cook off tomato: Turn heat up to medium high. Add tomato paste and tomato pulp, cook for 2 minutes.
  • Coconut milk: Add water, coconut milk, sugar, salt and chilli powder if using. Stir, then bring to simmer, low heat so it's bubbling gently.
  • Simmer 2 minutes, add tomato & green chilli: Simmer for 2 minutes, add tomato and green chilli.
  • Simmer 3 minutes: Simmer for another 3 minutes, stirring every now and then - sauce should be thickened (not watery), it gets looser again when fish is added (because fish will drop some juices = even more flavour!).
  • Add fish: Add fish, stir, cook for 3 to 4 minutes until fish easily flakes.
  • Garnish & serve: Remove from stove and transfer to serving bowl. Garnish with coriander/cilantro and fresh green chillies if desired. Serve with basmati rice!

Cheap cuts like goat and mutton require slow-cooking in strong spices to tenderise - this one-pot is a taste sensation

1 large onion, roughly chopped
10 garlic cloves
100g ginger, chopped
100ml vegetable oil
2 scotch bonnet chillies, chopped
small handful curry leaves
3 thyme sprigs
4 tbsp mild curry powder
700g mutton or goat shoulder, diced
400g can chopped tomato
300ml lamb or beef stock
410g can pinto, kidney or black-eyed beans
juice ½ lemon
small bunch coriander, chopped
warmed roti (Jamaican flatbread) and rice, to serve

Steps:

  • Place the onion, garlic and ginger in a food processor and blend to a purée. Heat the oil in a large flameproof casserole dish, add the onion mixture and cook for 5 mins until softened. Add the chillies, curry leaves, thyme, curry powder and 2 tsp salt. Cook for 2-3 mins until fragrant.
  • Tip the mutton or goat into the pan. Cook for 5 mins over a medium-high heat until the meat has browned. Add the chopped tomatoes and stock. Increase the heat, bring to the boil and cook for 10 mins. Reduce heat, cover and leave to simmer gently for 2½ hrs - remove the lid for the final 30 mins of cooking.
  • Add the beans to heat through, plus more chilli if you want it spicier. After 5 mins more, remove from the heat. Add the lemon juice and coriander, and stir well. Serve with warmed roti and rice.

1 pound beef stewing steak
salt to taste
6 peppers Kashmiri chile peppers
1 (1 inch) piece cinnamon stick
1 ½ tablespoons cumin seeds
1 teaspoon coriander seeds
4 black peppercorns
3 cardamom pods
6 cloves garlic, minced
1 (1 inch) piece fresh ginger, finely chopped
2 tablespoons oil
1 large onion, chopped
4 to 6 fresh curry leaves
2 medium potatoes, cubed
1 medium tomato, chopped
¼ cup fresh green beans, sliced diagonally
4 tablespoons tamarind juice

Steps:

  • Place beef in a small pan, cover with water, and season with salt; bring to a boil. Cover, reduce heat to a simmer, and cook until beef is fork tender, 1 to 2 hours. Remove and cut beef into cubes; reserve remaining juices in the pan.
  • Toast chile peppers, cinnamon stick, cumin seeds, coriander seeds, peppercorns, and cardamom pods in a dry skillet over medium-high heat until fragrant, 2 to 3 minutes. Transfer to a spice grinder and process to a fine powder. Move to a mortar and pestle, add garlic and ginger, and grind into a paste.
  • Heat oil in a large saucepan over medium heat. Add onion and curry leaves; cook until the onions turn golden brown, 5 to 7 minutes. Mix in spice paste until well combined. Add beef cubes and reserved juices; bring to a boil.
  • Once boiling, add potatoes, tomato, and green beans. Season with additional salt to taste. Cover, reduce heat to a simmer, and cook gently until potatoes are tender, about 20 minutes. Finish by adding tamarind juice. Cook a few minutes more before serving.

A hot and spicy curry from the coast of India. The spices are blended with vinegar to give an authentic flavour. This is a dryish curry with not a lot of gravy, so it will blend well with other gravy rich dishes. Super dish.

2 lbs beef, in 1-inch cubes
1 tablespoon cumin seed
4 dried red chilies
1 teaspoon black peppercorns
5 green cardamoms, seeds only
1 teaspoon fenugreek seeds
1/2 teaspoon black mustard seeds
1/2 teaspoon salt
1 teaspoon brown sugar
4 tablespoons wine vinegar
4 tablespoons oil
1 large onion, chopped
1 inch piece fresh ginger, grated
2 garlic cloves, chopped
2 teaspoons ground coriander
1 teaspoon turmeric
1/2 pint warm water

Steps:

  • In a dry blender mix together the cumin seeds, red chillies, pepper corns, cardamom seeds, funugreek seeds and the mustard seeds.
  • Add the vinegar salt and sugar to make a paste.
  • In a large pan heat some of the oil and fry the onion till golden, add the onion to the spice mix and blend again.
  • Heat the remaining oil and fry the meat till brown all over, remove the meat from the pan.
  • In the same pan fry the ginger and garlic for 3 mins over low heat.
  • Add the coriander and turmeric and fry 2 minutes.
  • Now add the spice paste to the pan and cook for 5 mins, stir so that the paste does not stick to the pan.
  • Put the meat back in the pan, stir to cover with the spice mix, and add the water.
  • Cover the pan and simmer till the meat is tender about 1 hour.
  • Serve with boiled rice and a vegetable curry.

Low fat cooking spray
2 grated onions
2 long green chillies, deseeded and thinly sliced
2 garlic cloves, finely chopped
4cm piece fresh ginger, peeled and grated
2tsp ground cumin
2tsp ground turmeric
2tsp garam masala
2tsp ground coriander
2 cardamom pods, split
2 bay leaves
140ml reduced fat coconut milk
400g chopped tomatoes
5tbsp vegetable stock or water
600g skinless haddock fillet, or talapia or river cobbler, any firm white fish cut into chunks
Juice of half a lime
2tbsp fresh chopped coriander
a dozen or so raw prawns (optional)
Rice to serve

Steps:

  • Spray a large heavy based saucepan with the low fat spray, then fry the onion over a medium heat stirring frequently for about 10 mins until softened and beginning to colour. Stir in the chillies, garlic, ginger, ground spices, cardamom seeds and bay leaves then cook for approx 1 min.
  • Pour in the coconut milk, chopped tomatoes, stock or water then bring to the boil. Reduce the heat and simmer half covered for approx 5 mins.
  • Add the haddock or firm fish and continue to simmer half covered stirring occasionally and taking care not to break up the fish pieces. Cook for about 6 mins the add the raw prawns and cook for another 4 mins. Cook for approx 10 mins in total with or without the prawns. Making sure the fish and prawns are cooked through.
  • Season to taste and stir in the lime juice.
  • Serve with sprinkled coriander and rice. I find a peshwari nan goes well with this if your peckish.
