1 bunch broccoli rabe, trimmed
2 tablespoons olive oil, plus more for drizzling
1 medium onion, chopped
1 teaspoon sugar
2 tablespoons red-wine vinegar
1/2 pound spicy sausage, casings removed
Sarah Mastracco's Potato Gnocchi
6 tablespoons unsalted butter
1/2 cup loosely packed flat-leaf parsley leaves
1/4 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil to a boil; add broccoli rabe and cook until stems are tender, about 2 minutes. Meanwhile, prepare an ice-water bath. Drain broccoli rabe and transfer to ice-water bath. Drain and set aside.
  • Bring another large pot of salted water to a boil. Meanwhile, in a large skillet, heat olive oil over medium-low heat. Add onions and cook, stirring occasionally until caramelized, about 10 minutes. Add sugar and red wine vinegar; cook until vinegar is completely evaporated, 1 to 2 minutes more.
  • Add sausage to skillet, along with onions, using a wooden spoon to help break sausage up into small pieces. Cook, stirring, until sausage is no longer pink, about 10 minutes. Stir in reserved broccoli rabe and 1/2 cup water; keep warm until ready to serve.
  • Heat a large skillet over medium heat. Add butter and cook until melted; continue cooking until butter becomes lightly browned and fragrant, taking care not to let it burn, 2 to 3 minutes. Reduce heat to low and stir in parsley.
  • Meanwhile, add gnocchi to boiling water. When gnocchi begins to float to the top, let cook 2 minutes more. Using a slotted spoon, transfer gnocchi to skillet with brown butter; toss to coat and season with salt and pepper.
  • Divide gnocchi evenly among four serving bowls; top with sausage mixture and sprinkle with Parmesan cheese. Drizzle with olive oil and serve.

2 tablespoons extra-virgin olive oil
1 pound bulk Italian hot or sweet sausage

Steps:

  • Trim ends of the broccoli rabe and cut into 3-inch pieces.
  • Bring 2 inches water to a boil in a high sided skillet. Salt the water. Add the broccoli rabe and simmer 10 minutes, drain. Return skillet to the stove and heat extra-virgin olive oil over medium-high heat. Add sausage, brown and crumble 6 to 7 minutes. Add the broccoli rabe and stir to combine.

Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Steps:

  • Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
  • Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
  • While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
  • When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
  • If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.

1 1/2 lbs broccoli rabe, tough stems removed and coarsely chopped, about 8 cups
1 lb Italian sausage, cut into 1/2-inch-thick pieces
1/2 cup pitted black oil-cured olives, preferably kalamata, halved
1/4 cup white wine or 1/4 cup chicken broth
2 garlic cloves, minced
1/4 teaspoon pepper
1 cup shredded parmesan cheese

Steps:

  • Cook gnocchi according to package directions, adding broccoli rabe during the last 5 minutes of cooking time; drain, reserving 1/4 cup cooking water.
  • Meanwhile, in large deep nonstick skillet over medium heat, cook sausage, stirring, until browned, about 10 minutes. Over medium heat, add olives, wine, garlic and pepper. Cook, stirring often, until wine is slightly reduced, 5-7 minutes.
  • Add gnocchi mixture; cook, stirring, 3 minutes; stir in reserved cooking water and 3/4 cup cheese until combined. Serve sprinkled with remaining 1/4 cup cheese.

This is a combination of several good recipes using Gnocchi that i created. You can add a pound of sauted, sliced Italian sausage at the end of the recipe, but i like it without the sausage.

16 ounces vacum-packed gnocchi (Vigo or Gia Russa)
4 tablespoons butter (I use unsalted)
4 tablespoons pine nuts
3 garlic cloves, minced
3/4 lb Broccolini (or broccoli rabe)
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup parmesan cheese, grated

Steps:

  • Cook broccolini(broccoli rabe) in boiling water for 4 minutes.
  • Remove with a slotted spoon.
  • Place in colander and drain well.
  • Cook gnocchi per package directions, reserve 1/4 cup cooking liquid.
  • Heat butter in large skillet over medium heat.
  • Add pine nuts to skillet and cook for 2-3 minutes or until butter and pine nuts are lightly browned, stir constantly.
  • Add garlic and cook 2 minutes.
  • Add broccolini/broccoli rabe and gnocchi and reserved cooking liquid ad salt and pepper.
  • Cook for 2 minutes.
  • Sprinkle with parmesean cheese.

1 lb gnocchi
1 tbsp unsalted butter
½ sweet onion
½ tsp garlic mince
1-2 Italian sausages
1/2-1 bunch of broccolini
¼ cup chicken stock
salt and pepper
½ tsp crushed chili
cheese
spinach

Steps:

  • Fill pot over half full with water
  • Add 1 tablespoon of salt to water
  • Turn stove on to high heat
  • Wait until salted water boils
  • 2
  • Add gnocchi to the boiling water using spoon- be careful, it is hot.
  • Cook until pasta floats to surface (4-5 minutes)
  • Turn off stove
  • Place strainer in sink
  • Drain gnocchi into strainer

  • Peel and dice onion
  • Wash and chop broccoli into smaller florets
  • Place onion and broccoli florets separately on plate
  • Wash chopping board
  • Slice sausage into small round pieces
  • 4
  • Turn on stove / Turn on electric frypan to medium heat
  • Melt butter
  • Add onion
  • Saute (fry) for 4-5 minutes
  • Add garlic and saute for 1 minute

  • Add sliced sausage
  • Cook until brown on the inside
  • Add broccoli florets
  • Add chicken stock
  • Mix and bring to a simmer

  • Continue to mix for 5 minutes
  • Add spinach and mix well
  • Season with salt, pepper, and chilli
  • Stir in gnocchi and cheese
  • Toss well until combined

  • Plate and enjoy!
