GNOCCHI WITH BACON CREAM SAUCE
Amazingly tender gnocchi are bathed in two of the best things in the world: bacon and cream, then sprinkled with cheese for one of the best side dishes ever.

- Bring a large pot of salted water to a boil.
- While bringing the water to a boil, in a medium mixing bowl, mix together egg yolks, milk, and parmesan cheese with a fork or whisk. Set aside.
- In a large high sided saute pan or large skillet over medium high heat, cook chopped bacon to desired crispness. At this point, you could remove or keep the rendered bacon fat, it's entirely up to you. Once done, turn heat to low and add garlic. Stir well, making sure garlic doesn't burn.
- Add gnocchi to the water and cook for 2-3 minutes, or as package describes.
- Drain gnocchi, then add to the pan. Add the egg mixture to the skillet (heat still on low, or turned off) and mix well.
- In a small bowl, whisk the chicken stock into the cornstarch, then add to the sauce to thicken. Taste and season with salt and pepper as needed.
- Serve immediately with parsley and parmesan as garnish.

PARISIENNE GNOCCHI WITH BACON AND TARRAGON

- Place oil and diced bacon in a 2-quart heavy-bottomed saucepan. Place pan over medium heat and cook, stirring occasionally, until fat is rendered and bacon is crispy. Set aside.
- Bring 4 quarts water to a simmer in a stockpot and line a sheet tray with parchment paper.
- Combine salt, 1 1/2 cups water and 12 tablespoons butter in a 2-quart saucepan and bring to a boil. Add flour all at once and stir constantly, making sure to not let the mixture stick to the bottom of the pan. Stir until a dough ball forms. Transfer dough to the bowl of a stand mixer fitted with the paddle attachment. With the motor running on low, add Gruyere, Dijon mustard and tarragon and mix until well incorporated. With motor still running, add eggs one at a time, making sure each egg is incorporated before adding another. Transfer dough to a medium pastry bag fitted with a large metal tip.
- Slowly pipe dough into boiling water, using a paring knife to slice off into 3/4-inch pieces. (Work in batches.) When gnocchi float, transfer to lined sheet tray and chill until cold.
- Heat 2 tablespoons butter in a saute pan until hot and bubbly. Add gnocchi to pan and saute until browned. Add cooked, cubed bacon and stir.
GNOCCHI WITH BACON AND ESCAROLE

- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the bacon and cook, stirring occasionally, until browned and crisp, about 7 minutes. Add the onion and continue cooking until softened, about 2 minutes. Stir in the escarole, 1/2 teaspoon salt and a few grinds of pepper. Cook until the escarole is completely wilted, about 3 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the gnocchi and cook as the label directs. Reserve 1/2 cup cooking water, then drain the gnocchi and add to the pot with the escarole mixture. Add the reserved cooking water and stir to coat, about 1 minute. Stir in the tomatoes, parmesan and parsley; season with salt and pepper.

But often gnocchi recipes are supper heavy with thick rich sauces. And while I love a nice rich sauce, sometimes you want something a bit lighter and healthier – without sacrificing any flavor. This recipe fits the bill. Recipe Overview and Keys to Success This dish is not hard to make, but because of the simplicity of flavors, you do need to make sure you do a few things:
- Over cooked Gnocchi may be the worst of all over cooked pastas – they just turn into mush, so make sure you don’t over-do them. Because you want to make sure you don’t over cook the pasta, I like to get the sauce most of the way done, before dropping the Gnocchi in the water. It’s easy to hold the sauce on low heat for 5 – 10 minutes if needed Crisp up the bacon first, by making bacon lardons; then save the rendered bacon fat to sauté the other ingredients in – that adds a lot of flavor The chicken broth makes the “sauce” here. You want to make sure you use enough so that it thickens a bit, but still provides some liquidity at the bottom of your pasta bowl (as opposed to dry); that sauce will bring all the flavors together Season properly…and taste as you go
- 1 package of Gnoochi (10 – 15 ounces) 5 Asparagus stalks 1 strip of thick sliced bacon (or 2 thin sliced) Tablespoon of toasted pine nuts 1 diced shallot 1 minced garlic clove 1 lemon (for the juice) Tablespoon of chopped basil Tablespoon of butter Half cup of chicken stock Parmesan cheese
