Easy Homemade Potato Gnocchi Recipe by Tasty image

Homemade gnocchi sounds tricky, but the actual process is pretty easy - and well worth the effort. After boiling, peeling, and mashing some potatoes, you'll whisk them with an egg to make the "dough". Then comes the fun, soothing part: put on your favorite playlist or podcast while you knead, cut, and add little indentations to every piece. Once they're done, you simply boil them for 30 seconds and fry up in a decadent butter-sage sauce (or a sauce of your choosing.) Restaurant-level gnocchi accomplished!

4 medium russet potatoes
1 teaspoon salt, plus more for the water
1 teaspoon pepper
1 egg
1 ½ cups all-purpose flour, extra to dust
2 tablespoons butter, for pan frying
sage leaf

Steps:

  • Add the potatoes to a large pot of cool salted water. Bring the water to a boil and cook for 20-25 minutes, or until a fork can easily pierce a potato. Drain the potatoes and set aside until cool enough to handle but still warm.
  • Using a peeler or your fingers, remove the skin from the potatoes. In a medium bowl, mash the potatoes until all lumps are gone. Add the salt and pepper and mix well. Make a well in the center of the potatoes and crack an egg into it. Whisk the eggs briefly. Then, using your hands, gently mix it into the potatoes until evenly distributed.
  • Put 1 cups of flour onto a clean surface and turn out the potato dough onto it, keeping the remaining ½ cup close by in case you need it. Working quickly and carefully, knead the dough, only incorporating as much flour as you need along the way until the dough loses stickiness and becomes more solid. Slice the dough into 4 parts. Roll out 1 part into a long rope, about 1 inch wide, cutting in half and working with 1 half at a time if the rope is becoming too long. Slice the rope into ½-inch squares and set aside on a lightly floured surface. Repeat with the remaining dough.
  • If desired, place a fork on your work surface and slide each gnocchi square from the base of the fork prongs to the top so they make a decorative shape.
  • Bring a large pot of salted water to a boil and add the gnocchi in batches, stirring gently once or twice to ensure they are not sticking. Boil until they float to the surface; after another 15-30 seconds in the water, remove.
  • In a pan over medium heat, melt butter and add the sage. Add the gnocchi and toss until lightly golden.
  • Enjoy!

1 tbsp olive oil
1 medium brown onion (finely chopped)
1 large carrot (peeled then finely chopped)
1 stalk of celery (finely chopped)
3 cloves of garlic (minced)
1 heaped tbsp dried oregano
½ level tbsp fennel seeds
¼ level tsp red chilli flakes (optional)
1 x 400 g / 14.5 oz can of chopped (diced) tomatoes
1 heaped tbsp tomato puree (paste)
1 tbsp soy sauce
50 ml / ¼ of a cup red wine (optional)
200 ml /½ a cup of vegetable stock (made with 1 vegetable stock cube + 200ml (½ a cup) of boiled water)
1 large red bell pepper (capsicum) (pith and seeds removed then roughly chopped)
1 x 250 g pack of puy lentils (1+¼ cups)
1 x 500 g / 17.6oz pack of gnocchi
1 x 150 g ball of fresh mozzarella ( 1 x 8oz ball) (torn or sliced into pieces)
30 g / ⅓ of a cup of finely grated veggie parmesan (+ more for serving)
½ tsp sea salt (divided into two equal portions)
½ tsp freshly cracked black pepper
Fresh basil leaves for serving

Steps:

  • Preheat the oven to 220C /200 fan /392F Add the oil to a large ovenproof sauté pan.Add the chopped onion with ¼ teaspoon of sea salt and cook for 10 minutes. Once the onion is translucent add the chopped carrot, celery, 3 cloves of minced garlic, 1 tablespoon of dried oregano, half a level tablespoon of fennel seeds and a small pinch of red chilli flakes.Cook for 10 minutes, stirring occasionally.
  • If you're using the wine add it now. Make sure the pan is hot enough so that the wine sizzles when it hits the pan. Turn up the heat to cook off some of the alcohol.
  • Once the wine has reduced quite a bit add the chopped red pepper cook for a minute or two then pour in one can of chopped tomatoes, pour ¼ of a cup of water into the empty can give t a little swirl then add that to the pan too.At the same time add 1 heaped tablespoon of tomato puree, 1 tablespoon of soy sauce the remaining salt and the cracked black pepper. Stir well and simmer uncovered, stirring occasionally, for about 10 minutes or until the sauce is thick.
  • Now add the lentils and the vegetable stock. Stir well and check the seasoning now.Add the gnocchi to the pan and stir it into the sauce making sure it is covered in sauce.
  • Spread the mozzarella and veggie parmesan over the top of the sauce and gnocchi then cover the pan loosely with tin foil.Put the pan in the oven and bake for 20 minutes. Carefully remove the foil and bake for a further 10 minutes or until the mozzarella is golden and the sauce is thick.Leave to cool slightly before serving.Serve with extra grated veggie parmesan and some fresh basil leaves.

Steps:

  • Make bolognese according to recipe instructions.
  • Preheat the oven to 200°C/390°F.
  • Bring a large pot of salted water to a boil. Add the gnocchi and cook until it floats. Strain the gnocchi then add to the bolognese.
  • Transfer to a casserole dish. Top with mozzarella then place in the oven.

1 ½ tablespoons olive oil
2 garlic cloves, grated
1 onion, finely chopped
1 lb lean mince
1 cup red wine
2 teaspoons chicken stock
2 lb passata
2 tablespoons tomato paste
2 teaspoons white sugar
2 teaspoons worcestershire sauce
2 dried bay leaves
1 teaspoon mixed herbs like oregano, thyme, basil and parsley
salt and pepper

Steps:

  • Heat oil in a large skillet and sauté the onion till golden. Add the mince and brown it in batches by tossing it with the onion.
  • Add the rest of the ingredients except the wine and allow the sauce to simmer and thicken for at least 20 minutes.
  • Next, add the wine and continue to simmer the sauce.
  • Meanwhile cook 500 grams (1 pound) of gnocchi until 'al dente' in a pot of boiling water.
  • Serve the gnocchi with a generous ladle or two of the bolognese sauce and top with mozzarella, if desired.

Steps:

  • Preheat the oven to 180°C, gas mark 4. Place the ground beef, onion and garlic in a nonstick pan and fry gently for 5-6 minutes, stirring all the time, until the onion is starting to soften.
  • Stir in the mushrooms and cook for a further 5-6 minutes until the meat is browned. Pour over the tomato and herb sauce, add a small amount of wine and bring to boil, season with salt and black pepper, then cover and simmer for 15 minutes.
  • Meanwhile, cook the gnocchi in a pan of boiling water according to pack instructions. Drain well.
  • To assemble the dish, spoon half the Bolognese mixture into a large shallow ovenproof dish, then top with the gnocchi. Add the remaining Bolognese sauce. Sprinkle with the mozzarella.
  • Bake on the top shelf of the oven for 30-35 minutes, until golden. Serve immediately.

1/4 cup extra-virgin olive oil
1 pound ground meat of choice (beef, veal or pork)
1/2 cup red wine
1 large yellow onion, diced
8 cups (2 quarts) prepared red sauce, such as marinara
3 tablespoons minced fresh thyme
2 cloves garlic, thinly sliced or minced
Salt and freshly ground black pepper
2 cups heavy cream
4 cups cooked gnocchi
1/2 cup ricotta
1/4 cup grated Parmesan

Steps:

  • In a saucepan over medium-high heat, add the olive oil and heat to the verge of smoking. Add the ground meat and cook, stirring, for 2 minutes. Reduce the heat to medium and continue to stir and cook until the meat is medium well, about 5 minutes. Next, deglaze the pan with the wine, stirring and scraping. Then add the onions and continue to cook until well cooked off, an additional 5 minutes.
  • To the same pan, add the red sauce, thyme, garlic and salt and pepper to taste. Continue to cook over medium heat until the sauce comes to a boil; reduce the heat to low and simmer for 30 minutes.
  • Add the cream and cook on low heat for 10 minutes. Add the cooked gnocchi and stir with a spoon to allow the sauce to coat the gnocchi. This should take 2 minutes.
  • To serve, spoon the sauced gnocchi into a bowl, top with the ricotta and finish with Parmesan cheese.
