Hearty and gluten-free. The whole family loves this simple dish. Add a side salad and dinner is ready quickly. I keep browned ground beef and onions cooked up and frozen, so this meal is very quick to throw together if that is already done. Top with your favorite toppings such as green peppers, olives, or mushrooms. The brown rice flour crust doesn't brown like a 'normal' crust would, so don't judge whether it is done by color!

1 ½ pounds ground beef
1 onion, chopped
1 (15 ounce) can pizza sauce
½ teaspoon salt
¼ teaspoon dried oregano
2 cups shredded mozzarella cheese
1 cup brown rice flour
1 cup milk
2 eggs
½ cup shredded Italian 3-cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir pizza sauce, salt, and oregano into ground beef mixture.
  • Spread meat mixture into the prepared baking dish; top with mozzarella cheese.
  • Whisk flour, milk, and eggs together in a bowl until well mixed; spread mixture over mozzarella cheese layer. Sprinkle 3-cheese blend over flour mixture.
  • Bake in the preheated oven until cheese is bubbling and melted, about 35 minutes.

1 lb. 99% fat free ground turkey
1 medium onion, chopped
1 large can of crushed tomatoes
16 oz. (2 cups) part-skim shredded mozzarella
1/2 cup parmesan cheese
1 cup skim milk
2 eggs
1 tsp. olive oil
1 cup flour
spices as desired

Steps:

  • Preheat oven to 400 degrees. Spray 9x13 pan with nonstick spray. Brown ground turkey with onion and garlic if desired. Add tomatoes and turkey pepperoni, and heat. Pour into pan. Mix milk, eggs, oil, and flour until smooth with spices and parmesan. Pour over top and bake until golden, 25-30 minutes. Makes 12 servings.

This Tik Tok upside down pizza is one delicious variation on everyone's favorite. All made in a skillet, this is one yummy homemade pizza recipe!

½ pound pizza dough
2 tablespoons olive oil (divided)
4 ounces sliced mushrooms
¼ cup sliced green peppers
¼ cup halved cherry tomatoes
¼ cup diced onions
½ teaspoon dried oregano
½ teaspoon crushed red pepper (plus more for serving)
¼ teaspoon salt
1 cup shredded low-moisture mozzarella
½ cup pizza sauce
Fresh basil (for serving)
Grated parmesan (for serving)

Steps:

  • Allow store-bought dough to rise at room temperature for 20 minutes. Preheat oven to 400°F.
  • Brush 1 tablespoon olive oil on the cast iron skillet. Layer the ingredients in the cast iron skillet, starting with the mushrooms, then green peppers, followed by tomatoes and onions. Season with oregano, crushed red pepper and salt.
  • Add the shredded cheese and spread the pizza sauce over the cheese, keeping the edges dry as much as possible.
  • Roll the pizza dough ball into a 12-inch round and gently place on top of the pizza sauce in the cast iron skillet.
  • Use your hands to tuck the pizza dough around the edges of the pan to seal in the sauce and the pizza toppings. Brush the remaining olive oil on top of the dough.
  • Bake in the preheated oven for 20-25 minutes, until the dough is golden brown.
  • Allow to rest for 10 minutes. Then place a cutting board or large plate over the cast iron skillet and flip over onto the cutting board. Add additional parmesan cheese, crushed red pepper and fresh basil and slice into 6-8 pieces.

2/3 cup rice flour
1/2 cup milk or 1/2 cup non-dairy milk substitute
1 teaspoon baking powder
2 whole eggs
1/2 teaspoon salt
7 links sausage
2 (14 ounce) jars pizza sauce
4 cups shredded mozzarella-cheddar blend cheese

Steps:

  • Preheat Oven to 350 degrees
  • Cook sausage and slice into pieces.
  • Mix with the spaghetti sauce and put into a 9"x13" pan.
  • Top with half of the cheese.
  • Pour the batter evenly over the top and sprinkle with remaining cheese.
  • Bake at 350 degrees for about 30 minutes, or until the crust is set and the top is lightly browned.

  • Combine the warm water, caster sugar and dried active yeast together in a measuring jug, give everything a good stir and then leave the yeast to activate for 10-15 minutes (no stirring during this time). When a thick layer of foam has formed on top of the liquid (see image below), the yeast has been activated and you can move onto the next stage.
  • Add the tapioca starch, plain gluten free flour and salt to a large mixing bowl. Stir really well to fully combine the flours. Now add the olive oil to the dry ingredients and stir through.
  • Next pour the contents of the jug (foam and liquid) into the bowl with the flour and mix everything with a spatula or wooden spoon until you have a thick mixture. The consistency should be a cross between a dough and a thick paste (see images below) - it will not resemble classic pizza dough, as gluten free dough needs to be wetter, but have faith and don't worry if it seems like a sticky mess! Ideally, it will come away from the sides of the bowl slightly when you stir it, but if not do not stress, it'll still make great pizza.
  • Place a clean tea towel or cloth over the top of the bowl and set aside to allow it to rise. This will take 30-40 minutes, depending on how warm the room is, so pop it in a nice warm place if you want to get a quick rise. I often start heating the oven up about 10 mins before the end of rising time, as this helps the process along (and you need a nice hot oven for pizza making).
