An easy recipe for Gluten-Free Brownies for the best homemade gluten-free brownies! Thick, chocolatey, and chewy. This gluten-free dessert recipe also has a dairy-free option.

1/2 cup unsalted butter, melted (Dairy-free use Smart Balance Butter.)
3/4 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 tablespoon pure vanilla extract
3/4 cup all-purpose gluten-free flour with xanthan gum (I like Pillsbury gluten-free.)
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350º F.
  • Spray the 8x8 square baking pan with gluten-free non-stick cooking spray or line the baking pan with parchment paper and coat the bottom and sides with gluten-free nonstick cooking spray or butter.
  • In a large bowl, add melted butter, pure vanilla extract, granulated sugar and brown sugar and mix until fully combined.
  • Add in eggs one at a time and mix until fully combined.
  • In a medium-sized bowl combine gluten-free flour, cocoa powder, baking soda and salt and whisk together.
  • Slowly add the gluten-free flour mixture to the wet ingredients and mix until fully combined and smooth.
  • Pour the brownie batter to 8x8 sized baking pan.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out just barely clean. The sides of the brownies with start to pull away from the pan. Please watch your brownies because all ovens are different.
  • Remove brownies and allow to cool completely. Enjoy!
  • Store leftovers in an air-tight container.

The best gluten-free brownie recipe from scratch! These brownies are soft, chewy and perfectly chocolatey. Plus they're easy-to-make! I tested this recipe dozens of times to get it just right so you'll get shiny-topped, fudgy brownies. UPDATE 7/2022! I've adjusted the recipe slightly and these brownies are better than ever. I now recommend making them in a 9x9 pan!

12 tablespoons salted butter (170 grams (1 1/2 sticks))
1/2 cup high quality semi-sweet chocolate chips (100 grams (I use Guittard chocolate chips))
3/4 cup brown sugar (150 grams)
3/4 cup granulated sugar (150 grams)
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
1/2 teaspoon instant coffee grounds ((optional))
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder (50 grams)
3/4 cup gluten-free 1:1 baking flour (125 grams)
1/2 cup chocolate chips ((for mixing in!))

Steps:

  • Preheat the oven to 350F. Grease a 9x9 baking dish with cooking spray and set aside. (I like this light metal pan.)
  • Cut the butter into tablespoon-sized pieces. Add the butter and chocolate chips to a large microwave-safe bowl. Microwave for 30 seconds. Stir well, microwave for another 15 seconds and then stir well again. Repeat for 15 seconds until chocolate and butter are completely melted and well-combined.
  • Add the granulated sugar and brown sugar and stir to combine. Stir in the eggs one at a time, whisking very well after each addition. Whisk in the vanilla extract and salt.
  • Mix in the cocoa powder and gluten-free flour until fully combined. Stir in the chocolate chips.
  • Pour the batter into the prepared baking pan. Smooth into an even layer. Bake for 30-35 minutes until set and a toothpick inserted into the center of the brownies comes out clean.
  • Cool the brownies to room temperature before cutting. Lift from the pan, place on a cutting board, and slice. Enjoy!

  • Preheat the oven to 180C/350F/gas 4. Use an electric hand beater or stand mixer fitted with the whisk attachment to beat the coconut oil and xylitol together for 3-4 minutes until white and glossy. Beat in the eggs one at a time and add the vanilla, still beating, until the mixture is pale yellow and fluffy.
  • In a bowl, mix the cocoa powder, flour and salt. Tip into the eggs and mix together gently with a spatula until incorporated. It will make quite a thick, cookie-like dough. Mix 2/3 of the walnuts or chocolate chunks and knead a few times to spread them evenly throughout the batter. Press the batter into a lined 9 inch (22cm) square baking tin to make thinner "mini" brownies (it will make 16) or into a 1lb loaf tin to make 8 thick brownie squares). Scatter the last 1/3 of the walnuts chocolate chunks over the top and press in lightly. Bake for 20-25 minutes, until just cooked but still slightly fudgy. Allow to cool completely before cutting into 8 large or 16 small squares and serving. If you have time, chilling overnight will add to the fudginess, but these are really yummy served at room temperature or even slightly warmed.
