GLUTEN FREE MELT-IN-YOUR-MOUTH SHORTBREAD
Adapted from The Food Allergy Cookbook Found this for my friends who need gluten free dessert! I'm guessing at the servings because none was stated. This is an updated review by DreamoBway. She has an excellent other use for this dough --- UPDATE from DreamoBway: "I tried making these in mini muffin tins, hollowed out a little well, and filled them with pecan tassy filling. I also upped the cooking temp to 350 and they browned beautifully. It was a successful experiment! UPDATE(12/15/09) new use for cookies from ukichix -" I think this would work well as a GF crumb crust... bake 1 large cookie in a 8x8 pan, then "crumb" it up, add some cornflake crumbs and prepare a crumb base. I will try and repost the results! revision: pressed the entire recipe into a 9x13 pan and baked for 30 mins (until golden on the edges), let cool - and "crumbed". Used 1/2 of these crumbs and 1/2 cornflake crumbs, with some sugar and melted butter to prepare a GF like Graham Cracker Crust with was sweet and soft. Perfect for Crumb Crust desserts."

I bake this at 300 to keep the crust light if you wish you could bake it at 350 to give it more color. I use salted butter so only add a pinch of salt. It you wish you increase the salt to 1/4 tsp if your butter is unsalted.

- Preheat the oven to 300°F. Lightly grease two round 8" cake pans. If you worry about the shortbread possibly sticking in your particular pans, line them with parchment, and grease the parchment.
- In a medium-sized bowl, beat together the butter, sugar, vanilla, and almond extract, then mix in the flour. The dough may seem a little dry at first; keep mixing until it comes together. If it absolutely won't come together, dribble in up to 1 tablespoon of water, until it does. This is a stiff dough.
- Divide the dough in half (if you have a scale, each half will weigh about 300g), and press each half into one of the prepared pans, smoothing the surface with your fingers, or with a mini rolling pin.
- Use a fork to prick the dough all over; this allows any steam to escape, and prevents the shortbread from bubbling as it bakes. Prick the dough in a random pattern (though it does look nicer pricked with some kind of symmetry).

- Preheat the oven to 350 F. Line two baking sheets with parchment. Whisk together the sugar, flour, and salt in a large mixing bowl.
- Add the butter to the mixing bowl and drizzle the vanilla over the butter. Mix with a fork (or "cut in") until a dough forms. Note: if the butter is a bit cold, the ingredients will not become a dough until you knead them together with your hands.
- Roll out the dough to a thickness of 1/3 inch. Cut out rounds with a 1 3/4 inch cookie cutter. Note: if the dough is too soft to cut cleanly, refrigerate it for a 15 minutes or so until it firms up.
- Place the rounds evenly and equally between the two baking sheets. Keep in mind that the cookies will spread slightly. Sprinkle turbinado sugar on top of each cookie round, then bake the cookies for 13 minutes.

- Position rack in upper third of oven. Preheat oven to 350°F/180°C. Line a rimmed baking sheet pan with parchment paper and coat with nonstick spray. Place a 9 to 10 inch (23 cm to 25 cm) tart ring on parchment and coat inside of ring with nonstick spray, too. Alternatively, you can use a 9 to 10 inch (23 to 25 cm) loose-bottom tart pan. Coat inside of pan with nonstick spray and place pan on a parchment lined rimmed baking sheet pan.
- Grind the shortbread cookies to a very fine texture in a food processor fitted with a metal blade. Add the melted butter and process until combined.
- Dump cookie crumbs in center of tart ring or into the tart pan and pat into an even layer along the bottom and sides. Use a straight-sided measuring cup or glass to facilitate creating an even layer (see image).
- Bake for about 8 to 12 minutes or until crust is light golden brown. Remove pan from oven and pour Lemon Curd into crust and return to oven for 5 minutes.

- Cream the butter & sugar until smooth and fluffy. >I mix with an electric hand whisk for about 1 min. You could also use a wooden spoon but you'll have to really go for it!!
- Sift in the flour & mix together until JUST combined. I use an electric whisk for this. Could easily use a wooden spoon here. >Don't worry if you haven't got a sieve - just tip it in ;)>"JUST combined" is when you cant see any more white from the flour and its just starting to clump together, like the picture.
- Use your hands to press the mix together into a few balls in the bowl. It will be crumbly but that's no problem!

- Grease an 8×8” glass baking pan or line it with parchment paper. (Parchment paper makes it easy to remove and cut your lemon bars, however greasing the pan works too.)
- For the shortbread layer, mix the melted butter and 1/3 cup sugar together, then mix in the 1 1/4 cup gluten-free flour. Press into the baking pan. I use my clean fingers to press it in but you can use a spoon if you prefer. Bake for 18-22 minutes or until the edges are just beginning to turn golden brown. Remove from the oven and set aside.
- For the lemon filling: While the shortbread layer is baking, you can make the lemon filling. Using a whisk or whisk attachment on your stand mixer, beat the eggs, then add 1 cup sugar, baking powder, and ¼ cup flour. Scrape the sides and mix well. Turn the mixer to high and slowly add the lemon juice to the egg mixture. Mix on high speed until it begins to look frothy.

- Add in the solid coconut oil (if the coconut oil has liquified, simply place it into the fridge for a couple of minutes) and with clean hands (or a pastry cutter, or by pulsing in the food processor), begin mixing the solid coconut oil with the dry ingredients until no obvious lumps of coconut oil remain. The texture should look sandy and hold together in clumps when you squeeze it.
