White Bean Salad image

A colorful and refreshing summer salad. An excellent option for vegetarians.

2 (15 ounce) cans cannellini beans, drained and rinsed
1 (15 ounce) can quartered artichoke hearts, drained
½ cup green olives, sliced
1 cup roasted red peppers, drained and chopped
½ English cucumber, diced
6 plum tomatoes - cored, seeded and diced
2 celery ribs, diced
2 green onions, thinly sliced
⅓ cup sherry vinegar
1 teaspoon Dijon mustard
¼ cup finely chopped fresh parsley
1 tablespoon fresh thyme
2 teaspoons finely chopped fresh rosemary
1 teaspoon garlic powder
1 teaspoon paprika
salt and pepper to taste
½ cup olive oil

Steps:

  • Stir together the beans, artichokes, olives, peppers, cucumber, tomatoes, celery and green onions in a large bowl; set aside.
  • Whisk together the vinegar, Dijon mustard, parsley, thyme, rosemary, garlic powder, paprika, salt, and pepper in a small bowl. Gradually pour in olive oil until well combined. Pour the dressing over the salad, and stir until all ingredients are coated. Refrigerate at least one hour or overnight before serving.

2 cans (19 oz each) cannellini beans, rinsed and drained
1 large tomato, seeded and coarsely chopped (1 cup)
1 small red bell pepper, chopped (1/2 cup)
1/2 cup chopped red onion
1/4 cup chopped fresh parsley
1/4 cup olive or vegetable oil
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
12 lettuce leaves

Steps:

  • In large glass or plastic bowl, carefully mix all ingredients except lettuce.
  • Cover and refrigerate at least 2 hours to blend flavors. Just before serving, spoon onto lettuce, using slotted spoon.

All you need is five minutes to make this Italian Bean Salad! It's a delicious side dish that's vegan, gluten free and heart healthy!

1 15-ounce can cannellini beans ((can use Great Northern or navy))
1 15-ounce can chickpeas ( (also called garbanzo beans))
1 15-ounce can black beans
1/4 cup fresh snipped parsley
5 tablespoons white vinegar
2 1/3 tablespoons olive oil ((2 tablespoons + 1 teaspoon))
3/4 teaspoon garlic powder
1/2 teaspoon plus 1/8 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In a fine mesh strainer or colander, drain and rinse the beans with cold water. Add the beans to a medium bowl.
  • Rinse some fresh parsley and snip the leaves off the stems until you can measure out 1/4 cup of loosely packed parsley. Add the parsley to the bowl of beans.
  • In a liquid measuring cup, add the vinegar, olive oil and seasonings. Whisk them to blend, then pour the dressing over the beans. Toss the bean salad with two spoons to mix it.
  • Serve the bean salad at room temperature or slightly chilled. Store leftovers in the refrigerator for up to five days. Stir the bean salad again before serving it.

3 cups cooked white beans (navy, cannellini or Great Northern beans)*
1-2 medium ripe firm tomatoes (seeded and chopped)
1/2 red onion (chopped)
1/2 cup sliced black olives
2-3 tablespoons fresh Italian parsley (finely chopped)
1/4 teaspoon dry basil or 4-5 fresh basil leaves (chopped)
1/4 cup olive oil
1-2 tablespoons red wine vinegar (to taste, depends on the strength of the vinegar)
1-2 cloves garlic minced
1/2 teaspoon salt (or to taste)
1-2 dashes black pepper
3 tablespoons bean liquid

Steps:

  • If you are using cooked dried beans or frozen then drain them but keep aside some liquid. If using canned beans then rinse them and drain well (keep some liquid).
