GLUTEN FREE NO YEAST MAYONNAISE BREAD

Steps:
- 1. Mix all ingredients together in a large bowl. Beat really well, it will go like a smooth cake batter, this is the consistency we want.
- 2. Preheat oven to gas mark 6. Grease and line a 2lb loaf tin and pour in the mix.
- 3. Place in the oven and bake for 35 mins, turn down to gas mark 4 and cook for a further 10 mins.
- 4. Once cooked turn out and allow to cool before slicing.

- If not using my bread mix, whisk these dry ingredients together in a large bowl: GF flours, milk powder, 1/2 teaspoon baking soda, 2 teaspoons baking powder and 1 teaspoon salt.
- In the large mixing bowl of a stand mixer, stir together the wet ingredients: honey (if using), club soda, apple cider vinegar (not necessary if using my bread mix), oil and egg. Gradually add the dry ingredient mix or bread mix packet (do not add the yeast packet that comes with the bread mix) in by pouring slowly into the wet bowl.
- Begin mixing with a wooden spoon or paddle attachment on a stand mixer. Before fully integrated, add the final addition of lemon juice and extra baking soda to the bowl. The mixture should bubble up when added together; if not, your baking soda is not fresh enough. Once incorporated, beat well for 1 - 2 more minutes.

- In a small bowl, add your milk of choice with vinegar and let sit until it curdles, around 10 minutes.
- In a large mixing bowl, add your flour, salt, sugar and baking soda and mix well. Using a 1/4 cup, add your curdled milk into it in two increments, and mix gently, until just combined.
- Lightly flour a kitchen surface. Sprinkle a tablespoon of flour on top of the dough and transfer to the floured surface. Gently knead the dough, around 8-10 times, and form a dome shape. The dough should still be quite sticky. Using a sharp knife, slice twice across the dough, forming a cross shape, around half an inch thick.
