2 tbsp Wholesome Yum Coconut Flour (*)
1 large Egg ((beaten))
1/2 cup Wholesome Yum Blanched Almond Flour
1/2 cup Crushed pork rinds
2 tsp Italian seasoning
1/2 tsp Garlic powder ((optional))
Oil for frying ((optional))

Steps:

  • Line a cookie sheet with parchment paper. Set aside.
  • Place coconut flour in a small bowl. Beat the egg in a second small bowl. Mix the almond flour, pork rinds, and Italian seasoning in a third bowl.
  • Dredge each piece of mozzarella in coconut flour. Dip it in the egg, shaking off the excess. Roll in the almond flour mixture until well coated, then place on the lined cookie sheet. Repeat with all the mozzarella (don't let the pieces touch on the cookie sheet).
  • Place the cookie sheet in the freezer for at least one hour, or until ready to bake. (Don't skip this step! It's necessary to prevent the cheese from oozing out during baking.)
  • Frying instructions (recommended):Heat 2 tablespoons oil in a skillet over medium heat. Once hot, fry the mozzarella sticks in a single layer, 1-2 minutes per side. They are done when they are golden brown and soft inside when pressed gently.Baking instructions:Preheat the oven to 400 degrees F. Take the cookie sheet out of the freezer and place in the oven (preferably onto the second rack from the lowest). Bake for 4-5 minutes, until the bottom side is golden. Flip and bake for 3-4 more minutes, until golden on the other side.

The trick is in the dredging process and ingredients. Extra egg whites and light-as-air rice flour create a lighter coating. Quadruple-dipping creates a crispy outer coating usually absent from gluten free foods. Serve with your favorite dipping sauce.

1 (8 ounce) package low-moisture mozzarella cheese
½ cup superfine white rice flour
2 egg whites
1 egg
1 cup gluten-free bread crumbs
1 tablespoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
½ teaspoon ground turmeric
¼ cup olive oil

Steps:

  • Cut mozzarella cheese into 4x1-inch sticks.
  • Place rice flour into a shallow dish. Whisk egg whites and egg together in another shallow dish. Mix bread crumbs with oregano, salt, pepper, garlic powder, onion powder, and turmeric in a third dish.
  • Dredge one mozzarella stick through the rice flour, making sure to cover all four sides and the ends. Tap off excess flour, then dip stick into the egg mixture; turn with a fork to coat completely. Drain off any excess egg. Dredge thoroughly through the rice flour and eggs again. Shake off excess, then roll into the bread crumb mixture. Dip once more into the eggs and coat with bread crumbs again, covering the ends to prevent the cheese from melting and leaking through. Place stick on a freezer-safe plate. Repeat process for each mozzarella stick.
  • Cover the plate of mozzarella sticks with plastic wrap and freeze for 30 minutes. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. Set the timer for another thirty minutes.
  • Fill an oil sprayer with olive oil. Remove sticks from freezer and arrange on the prepared baking sheet; spray tops with olive oil.
  • Bake in the preheated oven for 5 minutes. Remove from oven and close oven door; turn sticks over and spray with oil. Continue baking for 5 minutes more. Continue turning, spraying, and baking the remaining two sides, about 10 minutes more.

Yes, Virginia, there is such thing as a gluten-free fried mozzarella stick that tastes just like the "real thing"! These are so very tasty. Many thanks to Zaar user "GlutenFreeGirl" for her input and help with this recipe. IF YOU'RE GLUTEN-FREE: Be sure to use a GF flour with a very fine consistency (no almond meal, corn meal, etc). "Recipe #201072" works perfectly. For bread crumbs, I used Ener-G's Fine Bread Crumbs - Other GF brands available include Miss Roben's, Gillian's Foods and El Peto. This is definitely a job for fine, dry breadcrumbs rather than fresh ones. If you can get your hands on gluten-free Italian flavored bread crumbs, then eliminate all of the herbs and spices that the recipe calls for. IF YOU CAN EAT GLUTEN: Just use regular breadcrumbs and regular flour (same measurements). Bon appetit!

3 large eggs
1 1/2 tablespoons milk
1 lb whole milk mozzarella cheese, cut into 3/4 inch x 3/4 inch strips or 1 lb mozzarella string cheese, each stick cut in half
canola oil, for frying
1 cup jarred marinara sauce

Steps:

  • Heat 1 cup of canola or other vegetable oil in a pan. In a small pot, heat up the marinara sauce (or use microwave).
  • Whisk eggs and milk together in a bowl or pie tin. In a second pie bowl or pie tin, combine bread crumbs with all of the herbs and spices. Place flour in a third bowl or pie tin.
  • Coat each piece of cheese with flour. Dip in egg and roll in bread crumbs.
  • Dip in egg and bread crumbs a second time, making sure that the entire piece of cheese is coated in crumbs.
  • Carefully place each cheese stick in the hot oil and cook until golden, about a minute on each side. Place on paper towels to absorb excess oil. Serve hot.
  • Leftovers can be frozen and reheated in the oven.

8 mozzarella sticks
1/3 cup all purpose gluten free seasoned flour
2/3 cup gluten free bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder
2 whisked eggs
Oil Spray

Steps:

  • Cut mozzarella sticks in half.
  • Using three bowls, set up a breading station with whisked eggs, seasoned gluten free flour, and bread crumbs mixed with salt, pepper and garlic powder.
  • Dip mozzarella in egg, than flour, than egg, than bread crumbs.
  • Place on a baking sheet and freeze for at least two hours (or bag and use whenever ready).
  • Preheat oven to 400.
  • Spray with cooking oil (such as PAM)
  • Bake for 5 minutes.
  • Turn.
  • Bake for 2-3 more minutes.
  • Enjoy!
