This easy keto peach cobbler recipe has it all - a deep, buttery topping with amazing crunch and a fruity, soft peach compote filling. It's a gluten free, low carb dessert that your whole family will enjoy, whether they are following a keto diet or not!

2 cups / 300g peaches (sliced, skin on )
1 1/2 cups / 170g zucchini (cored and sliced thinly)
2 tbsp butter (melted)
2 tbsp lemon juice
2 tbsp granulated sweetener
2 cups / 200g almond flour
1/4 cup / 30g coconut flour
1/2 cup / 114g butter (melted)
4 tbsp granulated sweetener
1 tsp baking powder
1 tsp vanilla extract
good pinch of sea salt
1 tsp cinnamon (optional)
2 tbsp golden erythritol (to scatter over the top of the cobbler)

Steps:

  • Preheat the oven to 180C / 350F.
  • Peel the zucchini. Slice in half lengthways, scoop out the seeds using a teaspoon and cut into 4mm thick moons. Add with the sliced peaches, sweetener, lemon juice and melted butter to your baking dish and toss to combine.
  • Mix all ingredients for the crumble topping in a separate bowl using a fork until a thick batter. Press some together with your fingers to form nice big chunks so it's thicker than a crumble.
  • Spoon the topping over the base. Sprinkle golden erythritol on top. Bake for around 40 -45 minutes till the filling is soft and the topping crisp. Keep an eye on it from about 25 minutes. Once the topping is golden brown, loosely cover the cobbler with a sheet of tin foil so the top doesn't burn.
  • Serve with yoghurt, whipped cream or keto ice cream.

1 teaspoon cinnamon

1 cup gluten-free all purpose baking flour (such as Pillsbury™)
1 cup white sugar
1 teaspoon baking powder

1 egg, beaten
½ cup melted coconut butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a shallow 11x7-inch baking dish.
  • Place sliced peaches in the prepared baking dish. Mix together brown sugar, flour, cinnamon, lemon juice, and lemon zest in a small bowl; sprinkle over peaches.
  • Mix together flour, sugar, baking powder, salt, and nutmeg in a medium bowl for the topping. Stir in egg until mixture resembles coarse crumbs; sprinkle topping over peaches. Drizzle melted coconut butter evenly over topping.

Both my grandmothers made peach cobblers to die for: cake, crusted sugar, and peaches. Peaches in Florida were always perfectly ripened--the loose stone variety--juicy and tender. This is a reconstruction free of allergens. It's quite sweet if you have avoided sugar for a while but it's PERFECT for those just making the change. You can't even tell that this is sugar free. * A word on xylitol and erythritol. Some folks with IBS cannot that tolerate xylitol can usually use erythritol. Unlike maltitol or other sugar alcohols, xylitol is naturally derived from birch trees in a distillation process similar to soy sauce. So, if you don't have an issue with distillation (and those of you who drink any distilled alcohol or partake of soy sauce should not), then xylitol is a pretty cool sweetener. Truvia is pricier but a great choice for those with IBS. It's a blend of the stevia leaf and erythritol, another plant-derived sugar alcohol. Why do you care? Well...other sugar substitutes (Splenda, Equal, maltitol) are completely artificial and have various known and suspected negative health effects. ** For celiacs, I learned that many buckwheat flours are prepared on shared machines with gluten-containing grains. Run raw buckwheat kernals through a grain grinder or food processor to assure yourself of truly gluten-free flour.

  • Melt 1/2 cup non-dairy, soy-free Earth Balance in shallow baking pan.
  • Combine: 3/4 cups buckwheat flour, 3/4 xylitol or truvia, 3/4 cup coconut milk, 2 teaspoons baking powder, pinch of salt.
  • Drop batter into baking dish that contains the Earth Balance.
  • Don't stir! Pour peaches on top.
  • Bake 1 hour at 350 degrees or until bubbly and brown.

4 cups chopped fresh peaches
2 tablespoons white sugar
2 tablespoons gluten-free all-purpose baking flour
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ cup butter
1 cup gluten-free all-purpose baking flour
¾ cup white sugar
¾ cup soy milk
1 teaspoon gluten-free baking powder
1 teaspoon xanthan gum
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix peaches, sugar, flour, cinnamon, and nutmeg together in a bowl. Pour into a 9x13-inch casserole dish. Cut butter into small pieces and dab evenly on top of peaches.
