5 large red potatoes
2 tablespoons olive oil
½ large onion, diced
2 cloves garlic, minced
1 ¼ pounds lean ground beef
3 cups 2% milk
4 tablespoons cornstarch
1 ½ teaspoons kosher salt, divided
1 teaspoon ground black pepper
1 teaspoon dried thyme
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Pierce potatoes with a fork. Microwave until fork-tender, about 12 minutes.
  • Meanwhile, heat a pan over medium heat. Add olive oil; cook onion until translucent, about 4 minutes. Add garlic and cook for 1 minute. Add ground beef, increase heat to medium-high, and cook until browned, 5 to 7 minutes.
  • Blend 1/2 cup milk with cornstarch in a small dish using a fork until well mixed and no lumps remain. Pour into the pan along with remaining milk, 1 teaspoon salt, pepper, and thyme. Reduce heat to medium and cook until thick and bubbly, about 5 minutes.
  • Carefully remove potatoes from the microwave with tongs. Cut into 1/4-inch slices. Place slices in the bottom of the prepared baking pan and sprinkle with 1/2 teaspoon salt. Pour ground beef mixture on top. Cover with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted, 10 to 15 minutes.

Steps:

  • Preheat oven to 350 degrees.
  • Brown your ground beef, drain and set aside
  • Peel and slice potatoes and set aside.
  • Combine the cream of mushroom soups, milk, salt and pepper
  • Spray a 9×13 baking dish with non stick spray.
  • Layer half of the potatoes, beef, soup, and cheese in the 9X13 pan. Then repeat. Make sure that your last layer is the shredded cheese.
  • Cover with foil and bake for 1 hour.
  • Remove the foil from the pan and bake another 30 minutes until potatoes are fork tender.
  • Allow it to sit for 10 minutes at room temperature for the sauce to thicken. Then cut and serve.

2/3 cup milk
2 cups Betty Crocker™ mashed potatoes
3 to 4 medium tomatoes, sliced

Steps:

  • Heat oven to 350°F. Grease or spray 11x7-inch (2-quart) glass baking dish. In 10-inch skillet, cook beef, 1 teaspoon salt, the pepper and garlic over medium heat, stirring occasionally, until beef is brown; drain.
  • In 3-quart saucepan, heat water, butter, 1 teaspoon salt, the onion and oregano to boiling. Remove from heat. Stir in milk and dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed; whip with fork until fluffy. Spread half of the potato mixture in baking dish. Layer with beef and half of the tomatoes. There is nothing like homemade gnocchi. They taste like potatoes with a bouncy texture, even without gluten. This gluten-free version uses a trick from the past when Italian cooks would toss potatoes into a fire or oven that was being cooled down so as not to waste the heat. Surplus baked potatoes became gnocchi because they have very little moisture (the secret to firm gnocchi) and they have a roasted potato flavor, taking your dish one step farther.

1 ½ pounds potatoes
1 egg at room temperature, lightly beaten
⅓ cup potato starch
1 tablespoon sweet rice flour
½ teaspoon fine salt
2 tablespoons rice flour, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prick each potato a few times with a fork and place on a baking sheet.
  • Bake in the preheated oven until tender when pierced with a knife, about 50 minutes. Cool until easily handled, about 10 minutes.
  • Peel potatoes and pass through a ricer or food mill into a large bowl. Make a well in the mashed potatoes with a wooden spoon and pour in egg; mix well.
  • Whisk potato starch, sweet rice flour, and salt together in a bowl. Sprinkle over potato mixture; stir until a soft dough has formed. Cut dough into 4 equal parts with a knife or pastry cutter.
  • Dust work surface with rice flour to keep dough from sticking. Roll out 1 piece of dough into a rope about 1 inch in diameter. Cut into 1-inch gnocchi. Gently roll each one with the back of a fork to create ridges. Repeat with remaining dough.
  • Shake off any excess rice flour and let gnocchi rest, about 5 minutes.
  • Bring a large pot of salted water to a boil. Add gnocchi in batches and cook, without stirring, until they float to the top, 1 to 2 minutes. Remove with a slotted spoon.

Easy crock pot Italian Beef sandwiches from scratch. Juicy, tender beef cooked with simple ingredients, it's popular and great for a crowd!

3 to 4 pound chuck roast or round roast (trimmed of large chunks of excess fat)
Kosher salt
14.5 ounce can beef broth (divided)
8 ounces pepperoncini pepper slices (plus 1/4 cup of juice and additional peppers for serving)
8 ounces giardiniera (mild or spicy)
Provolone cheese slices (for serving)
Hoagie buns (for serving)
1 tablespoon Italian seasoning
2 teaspoons granulated sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon kosher salt
½ teaspoon black pepper
¼ teaspoon thyme dried (ground)

Steps:

  • Let the meat rest at room temperature for 15 minutes (this is a good time to measure your other spices and seasonings). Season the beef all over with kosher salt.
  • Heat a large skillet or Dutch oven over medium-high. Once it is hot, sear the meat on all sides until golden brown, moving it as little as possible so that it develops a nice crust (this will take about 10 minutes). Transfer to the slow cooker.
  • Turn the heat to medium. Carefully splash in some of the broth and with a wooden spoon, scrape up the brown bits on the bottom of the pan (this is FLAVOR). Pour the liquid and any bits into the slow cooker on top of the beef.
  • In a small bowl, stir together the seasoning ingredients: Italian seasoning, granulated sugar, garlic powder, onion powder, salt, black pepper, and thyme. Sprinkle on top of the beef.
  • Add the pepperoncini peppers and juice. Add the giardiniera (do not add any giardiniera juice).
  • Pour in the remaining broth.
  • Cover the crockpot and cook on LOW for 8 to 10 hours, or until meat shreds easily with a fork. Shred the beef, then stir it together with the juices. Cover and cook on low for 30 additional minutes.
  • To serve, split the hoagie buns and toast on a baking sheet in the oven at 350 degrees for 5 to 7 minutes (if desired). Fill with the shredded Italian beef (get plenty of that yummy, messy juice!) and top with provolone, pepperoncini, and Giardiniera as desired. Enjoy!
