Oven-Fried Green Tomatoes Recipe - Make ultra-crispy, tangy fried green tomatoes with less oil and less mess by baking in the oven! Our healthier oven baked fried green tomatoes recipe can even easily be made gluten free.

3-4 unripe green tomatoes
1 ½ cups Panko breadcrumbs
¾ cup buttermilk
¼ cup all-purpose flour
2 teaspoons Cajun seasoning (creole seasoning)
1 teaspoon salt
½ teaspoon ground cumin
3 tablespoons oil (vegetable oil, olive oil)
Caesar Dressing for dipping

Steps:

  • Preheat the oven to 400 degrees F. Set out a large rimmed baking sheet. Drizzle the oil on the baking sheet and spread it around with a spoon or brush.
  • Slice the tomatoes into ¼ inch rounds. Set aside.
  • Set out 3 bowls. Pour the flour in one bowl, and the panko in the seconds bowl. In the third bowl combine the buttermilk, Cajun seasoning, salt, and cumin. Mix well.
  • One at a time, dip the slices of tomato in the flour. Shake off the excess flour and dip the tomato slice in the buttermilk. Shake off the excess buttermilk over the bowl, then dip the slice in breadcrumbs.
  • Lay each slice on the baking sheet, then flip it so it is coated in oil on both sides. Repeat with the remaining green tomato slices.
  • Bake for 12 minutes. Use a small spatula to flip the tomato slices over. Then bake again for 12 minutes, until golden brown.
  • Serve warm with a side of Caesar dressing for dipping.

2 large or 4 small organic green tomatoes
1/2 cup homemade almond milk
1/2 cup almond flour
1/2 cup nutritional yeast*
1/2 teaspoon organic ground garlic powder
1/2 teaspoon organic ground paprika
1/2 teaspoon organic ground cayenne pepper
1/2 teaspoon Himalayan pink salt
*Omit the nutritional yeast to be Medical Medium compliant

Steps:

  • Add all ingredients for the bread crumbs to a small bowl and stir until well combined. Adjust seasonings to your preference.
  • Divide the mixture in half and separate it into two small bowls. Set aside.
  • Slice the tomatoes in medium thickness (not too thin, not too thick). You should be able to get 4 slices per each small tomato. Set aside.
  • Plate with sliced green tomatoes
  • Small bowl with almond milk
  • Small bowl with 1/2 the bread crumb mixture
  • Prepared cookie sheet lined with parchment paper
  • Dip each tomato slice into the bowl of almond milk, making sure both sides are completely covered.
  • Next, toss the tomato slice into the bowl of bread crumbs, again, making sure both sides are completely covered.
  • Transfer the coated green tomatoes onto the prepared baking sheet, making sure they are spread out evenly and not overlapping.
  • Repeat steps 1-3 for the remaining tomatoes.
  • When you run out of bread crumbs in the first bowl, begin using the second bowl of fresh bread crumbs.
  • Bake at 425 degrees for approximately 15 minutes, or until the tops are golden brown.
  • Remove the cookie sheet from the oven, carefully flip the tomatoes slices over and place the pan back in the oven for an additional 5 minutes, or until the backside is golden brown.
  • Optional: Garnish with chopped parsley and/or serve with your favorite gluten-free vegan dip or dressing.
  • Best when served hot from the oven.

  • Slice the tomatoes widthwise into 1/4" to 1/2" slices. I like to use a vegetable mandoline for ease and consistency, but a serrated knife also works well.
  • Lay the tomato slices onto a large cutting board and sprinkle evenly with the salt. Let the tomatoes sit until the salt draws out some of their water, about 10 minutes.
  • Meanwhile, prepare your batter station. Combine 1/2 cup oat flour and the arrowroot powder in a shallow bowl and whisk until combined. Place the remaining 1/2 cup oat flour, cornmeal, baking soda, pepper, paprika, and cayenne into a second shallow bowl and whisk until combined. Place the butter milk and egg into a third shallow bowl and whisk until smooth. Arrange the bowls so that the oat/arrowroot mixture is on the left, the egg/buttermilk mixture is in the center, and the cornmeal/oat/spice mixture is on the right.
  • Dab the tomato slices with a cotton kitchen towel (or paper towels) to wick away the moisture, being careful not to crush the tomatoes.

  • Pour oil to a depth of 1/2 inch into a large cast-iron skillet. Heat oil over medium-high to 325°F. (Closely watch the temperature, adjusting heat as necessary to maintain 325°F.)
  • Slice tomatoes into 1/4- to 1/2-inch-thick slices. (You should get 4 to 5 slices per tomato.) Place cornstarch in a wide, shallow dish. In a second wide, shallow dish, whisk together eggs, buttermilk, and 1/2 teaspoon kosher salt. In a third wide, shallow dish, stir together cornmeal, black pepper, cayenne pepper, and remaining 1 1/2 teaspoons kosher salt. Working in batches, dredge tomato slices in cornstarch, shaking off excess; dip in egg mixture, and dredge in cornmeal mixture, patting cornmeal coating onto slices. Place breaded slices on a parchment paper–lined baking sheet.
  • Working in batches, fry tomato slices (about 3 to 5 slices at a time) until golden brown and crispy, 3 to 4 minutes, flipping halfway through frying. Place on a baking sheet lined with paper towels, and sprinkle with sea salt.
