Healthy Banana Oatmeal Bars image

Healthy Banana Oatmeal Bars are made with just 5 wholesome ingredients and make a easy, on-the-go breakfast or snack. Featuring hearty ingredients like peanut butter and oats, these homemade bars are also super customizable! Vegan, gluten-free, oil-free and sugar-free.

Number Of Ingredients 9

2 small ripe bananas, mashed (approx. 3/4 cup // 172g )
1/2 cup peanut butter (125g)
3/4 cup non-dairy milk (187ml)
2 + 1/3 cup gluten free rolled oats, divided (210g // see instructions below)
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1/2 tsp cinnamon, optional
1/4 cup chocolate chips, raisins, walnuts or any other add-ins of choice

Steps:

  • Pre-heat oven to 350 F (180 C)
  • Into a high speed blender, add 1 cup (90g) of the rolled oats and blend into a flour.
  • Add mashed banana, peanut butter, non-dairy milk and vanilla (if using) and whisk together.
  • Add in the oat flour, rolled oats, salt, baking powder, cinnamon (if using) and any other add ins of choice (if using) and mix using a spatula until everything is well combined.
  • Pour batter into a lined or greased 8x8 inch baking pan.
  • Bake for 25-30 minutes or until tops are slightly golden. Let it cool in the pan for 10 minutes. Then carefully transfer to a wire rack and allow it to fully cool before cutting. Slice into 6-9 bars and enjoy!

These 3 ingredients peanut butter banana breakfast oatmeal bars makes the perfect grab-and-go breakfast or snack. Vegan, healthy yet really delicious !

3 cups rolled / quick oats (use gluten-free if needed )
1/2 cup natural smooth peanut butter
4 medium ripe bananas (about 400g / 14 oz )
pinch of salt (( if using unsalted peanut butter ))

Steps:

  • Preheat oven to 180c / 360f . Grease / line a 8x8 square baking pan.
  • Using a fork or potato masher, mash the bananas until smooth. A few small chunks here and there is ok.
  • In a mixing bowl, combine the mashed bananas and peanut butter. Mix well.
  • Add in the oats and salt. Mix until everything is well incorporated. Then, transfer the mixture to the baking pan. Using the back of a spoon or spatula, gently press down the mixture so that it is evenly distributed throughout the pan.
  • Bake it in the oven for 20-25 minutes, or until a toothpick comes out clean and the sides are golden brown.
  • Remove it from the oven and let it cool down completely before slicing. Optionally, drizzle it with extra peanut butter before serving !

From www.gingerbreadbagels.com. I am making these tonight, but needed to get the nutritional information. I left out the cinnamon, but added it to the recipe. This recipe does not have any oil, butter or pounds of sugar. In fact there's only 1/4 cup of brown sugar.

1 1/2 cups quick-cooking oats
1/4 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup milk
1 large egg, lightly beaten
1 large mashed banana
1/4 cup creamy peanut butter

Steps:

  • Mix together the quick cooking oats, light brown sugar, baking powder, kosher salt and ground cinnamon.
  • Add in the vanilla extract, milk and egg. Mix the ingredients together.
  • Then add in the mashed banana and peanut butter. Combine all of the ingredients.
  • Pour the mixture into a lightly greased 8 by 8 inch metal baking pan. Bake at 350 F degrees for 20 minutes.
  • Cut into squares and enjoy!

1/4 cup softened butter
1/2 cup brown sugar
1/2 cup white sugar
2 mashed bananas
3/4 teaspoon vanilla
3/4 cup smooth peanut butter
1 teaspoon baking soda
2 1/2 cups regular rolled oats (or 2 cups quick cook oats)
2/3 cup chocolate chips

Steps:

  • Pre-heat the oven to 350 degrees. Grease or spray an 8 x 8 inch baking pan and set aside.
  • In a large mixing bowl combine the first 4 ingredients and cream together well. Add in the vanilla, stir, then add in the peanut butter. Stirring carefully so you don't spill, work in all of the peanut butter until in is completely incorporated.
  • Sprinkle the baking soda over the entire mixture, add in the oatmeal and chocolate chips and blend until well combined.
  • Pour into the 8 x 8 baking pan and bake for 30-35 minutes. Top should be nice and brown and center will still be slightly wiggly/moist. Allow to cool completely before cutting into them.

4 large eggs
1-1/2 cups mashed ripe bananas (3-4 medium)
1 cup peanut butter

6 cups gluten-free old-fashioned oats
1 cup gluten-free butterscotch chips
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.
