GLUTEN FREE CRACKER TOFFEE



Gluten Free Cracker Toffee image

An easy gluten free version of a favorite homemade candy.

Number Of Ingredients 4

1 1/2 boxes glutino original plain crackers
1 cup butter
1 cup brown sugar
2 cups semi sweet chocolate chips

Steps:

  • Preheat oven to 425 degrees.
  • Line a large jelly roll pan, or cookie sheet with sides type pan, with foil. Grease foil.
  • Lay crackers on the foil fitting as many as you can on the sheet without overlapping the crackers.
  • Set aside.
  • In a pan combined butter and brown sugar. Bring to a boil and boil until it turns a caramel color. This will take a few minutes.
  • Remove from heat and carefully pour evenly over crackers.
  • Bake for 4-5 minutes.
  • Remove from oven and sprinkle chocolate chips on top. Place back in oven for about 2 minutes or until chocolate is just starting to melt.
  • Spread melted chocolate evenly over the candy.
  • Let pan cool completely. Refrigerate if needed to harden candy.
  • Break into pieces and enjoy!

Bisquick™ Gluten Free pancake & baking mix makes giving gluten-free cookies not only possible but delicious.

1 cup butter, softened
1 cup packed brown sugar
1 teaspoon pure vanilla extract
1 egg yolk
2 cups Bisquick™ Gluten Free pancake & baking mix
1 cup milk chocolate chips
1/2 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, mix butter, brown sugar, vanilla and egg yolk. Stir in Bisquick™ mix. Press in pan.
  • Bake 20 to 25 minutes or until very light brown (crust will be soft). Immediately sprinkle chocolate chips on hot crust; let stand about 5 minutes or until chocolate is soft. Spread chocolate evenly; sprinkle with nuts. Cool 30 minutes in pan on cooling rack. For bars, cut into 8 rows by 4 rows.
