- In 3-quart saucepan, heat chicken broth, chicken, vegetables, salt, and pepper to boiling. In small bowl, mix 1 cup milk and the cornstarch with wire whisk until smooth; stir into chicken mixture. Heat just to boiling.
- In small bowl, stir dumpling ingredients with fork until blended. Gently drop dough by 8 rounded spoonfuls onto boiling chicken mixture.
- Cook uncovered over low heat 10 minutes. Cover and cook 15 minutes longer.

- Sprinkle chicken pieces generously with salt and pepper and lightly with poultry seasoning, and then dredge both sides in gfJules™ All-Purpose Gluten Free Flour. Melt butter in a pot over medium-low heat. Brown chicken nicely on both sides and remove to a clean plate. (Chicken is not cooked through yet, so don’t eat it!)
- In the same pot, add diced carrots, celery, onions, and garlic. Stir and cook for 3 to 4 minutes over medium heat. Stir in poultry seasoning (and chicken base if using water), and then pour in 8 cups chicken broth (or water). Stir to combine, and add browned chicken. Cover pot and simmer for an hour. Skim enough chicken fat off the top of the stock to give you 2 tbsp. (after refrigeration) for dumplings. Continue to simmer covered…up to another hour if you like.
- Carefully, remove chicken from pot with a giant spoon, cool and pull (discarding skin/bones). Once pulled set aside for later. Add more chicken broth or water to pot (eyeball it – up to two more cups); continue to simmer stock with lid off. Smash some of the vegetation in the pot with a couple of spoons (you’ll be leaving them in there!).
- While stock is simmering, make the dough for the dumplings: sift together all dry ingredients, cut in chicken fat (skimmed earlier) and shortening with a pastry cutter, and then add half-and-half gradually (you may use slightly less than 1 cup), until ball forms. Wrap in plastic wrap, cover with kitchen towel, and set aside for 30 minutes.

- Using a stock pot, heat olive oil over medium-low heat. Add the onions and cook until slightly brown and translucent. Add the carrots and cook a few minutes until soft. Finally, add the celery and cook until soft.
- Add the garlic, black pepper, rosemary, thyme, nutmeg, 3/4 teaspoons of salt, and parsley. Cook until fragrant, about 30 seconds. Deglaze the pot with about 1/2 cup of chicken stock to pick up all the brown bits. Reduce till stock has cooked by half. Add the bay leafs.
- Add the chicken, chicken stock, and water to the pot. If necessary, add more water to cover the chicken. Bring to a boil and reduce to a simmer, keeping the pot covered. Skim any white foam that comes to the top. Cook for 20 - 30 minutes until chicken registers 165 degrees. Final cooking time will depend if you're using chicken thighs or chicken breasts.
- While the chicken is cooking, add flour, baking soda and remaining 1 teaspoon salt to a large bowl. Whisk to combine. Cut the butter into the dry ingredients. Using your hands, incorporate the butter until the dough becomes shaggy (see photo 1 in above collage). Add 1/2 cup of milk and stir just until it kinda resembles wet sand (photo 2) and sticks together when squeezed (photo 3). You should be able to form a large dough ball (photo 4). If the dough is too dry, add more milk, tablespoon by tablespoon. The dough will not be perfectly smooth and should have clumps and be rather stiff. Form the dough into a ball and if possible, let rest for about 10 minutes.

- Heat the chicken stock to a gentle simmer in a medium pot. Add sherry, if using, and garlic. Add chicken thighs and salt and pepper, to taste. Poach, covered, for 7-10 minutes. Using a slotted spoon, remove the thighs and cool. Skim foam off the surface of the liquid. Return the pot of chicken broth to medium-high heat. Add the onion, celery, carrot, parsnips, potatoes, and thyme. Cover and simmer vegetables until just fork tender (about 10 minutes), while making the dumplings.
- Make the dumpling batter by mixing together flour, baking powder, and salt in a medium bowl. Add chopped chives or other fresh herbs. Blend together melted butter, milk, and egg. Add to the dry ingredients. Gently mix with a wooden spoon or fork until mixture is moist and comes together. Do not overmix.
- Cube the chicken and return to the pot. Add additional broth if mixture is too thick or liquid has cooked down too much. Return to a simmer.
- Drop dumpling batter into the simmering stew by heaping tablespoonfuls. (Note that the dumplings will double in size as they cook.) Cover and simmer until dumplings are cooked through, about 15 minutes. Do not peek while the dumplings are cooking. In order for the dumplings to be light and fluffy, they must steam, not boil. If, after 15 minutes they are still not cooked through (use a toothpick or skewer to test), cover the pot again and cook for another 5 minutes. Using a slotted spoon, gently move the dumplings to a plate.

- In a large stockpot, combine the chicken, vegetables, and herbs. Add in the water, set on the stove and bring to a boil. Pull chicken meat from the bones and reserve for later.
- Combine the flour, baking powder, salt, and xanthan gum in a medium bowl. Use a fork or pastry cutter to cut in the butter. Add the milk, stirring just until a dough forms. Roll dough out onto a lightly floured surface, until 1/4-inch thick. Use a knife or pizza cutter to cut dough into squares or strips.
- Place the reserved 2 quarts of chicken stock into a large pot. Bring to a boil over medium-high heat. Begin dropping the dumplings, one at a time into the hot broth. Try and avoid dropping them together, so they don’t stick. They will sink to the bottom and then float to the top. Don’t stir the dumplings at this time or they will break into pieces. Once you’ve added all of the dumplings, cover the pot and let cook for 8-10 minutes. While the dumplings are cooking, make a slurry which will thicken the broth by combining 1/2 cup milk and 1/4 cup cornstarch (or all-purpose flour, if not gluten free.) When the dumplings are done, gently stir in the slurry, chopped chicken, and peas. Let simmer for 5 more minutes, until the broth has thickened and peas are thoroughly cooked.
