Gluten Free Candida Diet Friendly Peanut Butter Balls image

I revamped my Healthy Peanut Butter Balls to be able to eat them while on a candida diet. The trick to subbing the honey is to use a mixture of glycerin and stevia. The stevia I use is the blended kind from NuNaturals, not pure stevia (4T=1C sugar). I am also going to try this with carob powder, instead of the dry milk and will update if it turns out.

Number Of Ingredients 8

3/4 cup gluten free oatmeal or 3/4 cup rolled oats
3/4 cup oat bran
1 1/2 cups gluten-free flour
1 cup ground flax seeds
3 tablespoons stevia plus
1 1/2 cups mesquite powder or 1 1/2 cups dry milk
1 1/2 cups almond butter or 1 1/2 cups peanut butter
1/4 cup vegetable glycerin

Steps:

  • In a large bowl, mix together all ingredients. You may have to mix by hand. I've found it helps to mix with your hands much like kneading dough.
  • Roll into 1-inch balls and store in airtight container in the fridge.

Delicious, crunchy, and full of peanut butter. This is my mother's recipe that I veganized by subbing in agave nectar for the honey.

2 cups peanut butter (some natural and some Jiffy)
1/2 cup agave nectar
3/4 cup wheat germ
1/2 cup wheat germ (for rolling)
2 cups Rice Krispies
1/2 cup Grape-nuts cereal

Steps:

  • Stir all together in a large bowl.
  • Form into 1" balls and roll in extra 1/2 cup wheat germ.
  • If the mixture is too soft, then simply chill in fridge for an hour or more. These keep well in the fridge.

These are wonderful to snack on when you got the munchies for something sweet. The peanut butter is very satisfying, and its very healthy.

1/3 cup crunchy peanut butter
1/2 cup nonfat dry milk powder
2 tablespoons wheat germ
1 tablespoon honey

Steps:

  • Place ingredients into food blender in the order listed.
  • Turn on and blend until mixture is evenly mixed and crumbly looking.
  • Use a small melon ball scoop to make the peanut butter balls. Push the peanut butter mixture in there so its nice and compact like brown sugar.
  • Put onto a plate or in a container and put in the fridge. You can eat them right away but they are really good after they've sat in the fridge for a little while. Enjoy!
  • You can also use creamy peanut butter, but I'm a crunchy kinda gal. Also you can roll the balls in additional wheat germ for an even crunchier ball.

1 kg kraft sugar-free sodium-free peanut butter
2 cups Rice Krispies
1 cup Splenda granular
1 1/2 cups unsweetened coconut (or more)

Steps:

  • In a large bowl, combine peanut butter, Rice Krispies and Splenda until well mixed.
  • Pour coconut into a small bowl.
  • Drop peanut butter mixture into the coconut by the teaspoonfuls to coat.
  • Place on a waxed paper lined cookie sheet and chill minimum 1 hour.
  • Store in air tight container for up to 3 weeks in fridge.

  • In a large bowl, mix together all ingredients. You may have to mix by hand. I've found it helps to mix with your hands much like kneading dough. It's a little dry, so you may have to add a tiny bit of milk or oil to keep it together.
  • Roll into 1-inch balls and store in airtight container in the fridge. You may roll them in wheat germ or powdered sugar if you like.
