6 ripe bananas, peeled
400 g gluten-free oats
1 tsp cinnamon
2 tbsp water

Steps:

  • Preheat the oven to 200oC/Gas Mark 6.
  • Mash the bananas in a bowl, then add the oats, cinnamon and water and mix together.
  • Line a square baking tin with baking paper, then pour in the mix. Press down firmly with the back of a fork to compact it into the tin.
  • Bake in the oven for 20-25 minutes, remove from the oven, then allow to cool for 10 minutes before slicing into bars.

10 Tablespoons vanilla buttercream frosting

Steps:

  • Preheat oven to 350 F.
  • Prepare bread pan by greasing the bottom and sides with olive oil or butter.
  • In a medium bowl, stir together oat flour, cinnamon, all-spice and baking powder.
  • Add bananas, honey, vanilla extract.
  • Add mixture to bread pan. Bake for 15-20 minutes.
  • If desired: Top with vanilla frosting.

1 medium banana, ripened
¼ cup natural, unsalted creamy peanut butter
1 tablespoon pure maple syrup
1 tablespoon melted coconut oil
1 flax egg (1 tablespoon ground flax + 3 tablespoons water, whisked together, set for 15 minutes)
½ teaspoon pure vanilla extract
1 ½ cups gluten free rolled oats
¼ teaspoon baking powder
¼ teaspoon baking soda
1/3 cup vegan chocolate chips
¼ cup raisins
¼ cup walnuts, finely chopped

Steps:

  • Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
  • In a large bowl, add peeled banana. Using a sturdy whisk or fork, mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until well incorporated.
  • Add the dry ingredients: oats, baking powder and baking soda. Using a rubber spatula, stir and fold until well incorporated. Fold in chocolate chips, raisins and walnuts.
  • Pour this mixture into the prepared pan. Using the rubber spatula, smooth into an even layer.
  • Bake for 12-18 minutes, until just lightly golden around the edges. Mine took 15 minutes. Cool for about 1 hour. Slice into bars. Enjoy! Storing instructions below.

1/4 cup honey
2 eggs, room temperature
1 1/2 cups almond flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup raisins
1/2 cup gluten-free, dairy-free chocolate chips
1/2 cup chopped pecans or walnuts
1/2 cup shredded coconut
1/4 cup nut or seed butter
1 teaspoon vanilla
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F (180°C). Grease an 8″X8″ baking pan; set aside.
  • Place all ingredients into a large mixing bowl and mix until combined. You don't need to separate the dry and wet ingredients for this recipe.
  • Pour batter into your prepared 8"X8" pan. Bake for 22 - 25 minutes or until the top starts to darken and the center is set (always start with the lowest time).
  • Remove from the oven and let cool completely before cutting. Store in an airtight container at room temperature.

1 cup gluten-free flour blend, (such as Namaste Perfect Flour Blend )

1/2 teaspoon ground cinnamon
1/4 teaspoon salt
4 ounces cream cheese, (softened)
1/4 cup butter, (softened)
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease a 9x13 pan.
  • Mix the sugar, bananas, oil, and eggs.
  • Blend in the flour, baking powder, baking soda, cinnamon, and salt.
  • Spread in the greased pan.
  • Bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
  • To make the frosting, combine cream cheese, butter, and vanilla with electric mixer on medium speed until well combined. Gradually blend in the powdered sugar, until smooth.

3/4 teaspoon xanthan gum (omit if your flour blend contains it)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 Cup granulated sugar
1 Cup mashed banana
1/2 Cup light brown sugar
1/3 Cup avocado oil (or canola oil)
2 large eggs, room temperature
2/3 Cup milk (dairy free or regular milk), room temperature
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees and spray a 9x9 inch square pan with non-stick spray and line with parchment paper.
  • In a large bowl, whisk together the flour, xanthan gum, baking powder, baking soda, salt, and granulated sugar.
  • In a separate bowl, whisk together the mashed banana, brown sugar, oil, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
  • Pour the batter into the prepared pan and bake at 350 degrees for 25-30 minutes or until a toothpick or cake tester comes out clean or with a few moist crumbs attached. Cooking time will vary depending on your oven - mine took 29 minutes.
  • Cool the bread in the pan on a cooling rack. Cut into 16 pieces and serve slightly warm or room temperature.
  • To store, wrap tightly in foil or store slices in an air-tight container. It will stay fresh up to 3 days. This bread also freezes well. To freeze, slice into individual pieces and freeze in a freezer bag.

1/4 cup potato starch, plus
2 tablespoons potato starch
2 tablespoons tapioca flour
1/4 teaspoon xanthan gum
2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe banana (2 bananas)
3/4 cup brown sugar
1/3 cup white sugar
1/4 cup buttermilk
1 egg
1 tablespoon vegetable oil
2 teaspoons vanilla
1/2 cup chopped walnuts (optional)
1/4 cup icing sugar
2 teaspoons milk or 2 teaspoons juice

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9 inch square pan with shortening or spray with vegetable oil spray.
  • In a small bowl, whisk together the flour, xanthan gum, baking powder, and salt. Set aside.
  • In the bowl of your mixer, beat together the mashed banana and both sugars until blended.
  • Add the buttermilk, egg, oil, and vanilla. Beat well.
  • Stir in the dry ingredients until just blended (do not beat!)Fold in the nuts.
  • Spoon the batter into the prepared pan.
  • Bake for 25-30 minutes or until a tester comes out clean. Remove from the oven and keep the cake in the pan.
  • Stir together the icing sugar and liquid until just thick enough to drizzle well.
  • Drizzle in a zigzag pattern over the cooling cake.
  • When cold, cut the cake into 12 bars.
