Steps:
- Preheat the oven to 200oC/Gas Mark 6.
- Mash the bananas in a bowl, then add the oats, cinnamon and water and mix together.
- Line a square baking tin with baking paper, then pour in the mix. Press down firmly with the back of a fork to compact it into the tin.
- Bake in the oven for 20-25 minutes, remove from the oven, then allow to cool for 10 minutes before slicing into bars.

- Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
- In a large bowl, add peeled banana. Using a sturdy whisk or fork, mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until well incorporated.
- Add the dry ingredients: oats, baking powder and baking soda. Using a rubber spatula, stir and fold until well incorporated. Fold in chocolate chips, raisins and walnuts.
- Pour this mixture into the prepared pan. Using the rubber spatula, smooth into an even layer.
- Bake for 12-18 minutes, until just lightly golden around the edges. Mine took 15 minutes. Cool for about 1 hour. Slice into bars. Enjoy! Storing instructions below.

- Preheat oven to 350 degrees and spray a 9x9 inch square pan with non-stick spray and line with parchment paper.
- In a large bowl, whisk together the flour, xanthan gum, baking powder, baking soda, salt, and granulated sugar.
- In a separate bowl, whisk together the mashed banana, brown sugar, oil, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
- Pour the batter into the prepared pan and bake at 350 degrees for 25-30 minutes or until a toothpick or cake tester comes out clean or with a few moist crumbs attached. Cooking time will vary depending on your oven - mine took 29 minutes.

- Preheat oven to 350 degrees.
- Grease a 9 inch square pan with shortening or spray with vegetable oil spray.
- In a small bowl, whisk together the flour, xanthan gum, baking powder, and salt. Set aside.
