THE ULTIMATE CRISPY BAKED HOMEMADE ONION RINGS

The Ultimate Crispy Baked Homemade Onion Rings image

These baked homemade onion rings are just as crunchy and delicious as the fried version, but this onion ring recipe is also gluten free, dairy free and low carb.

Provided by Julie & Debbie

Categories     Appetizer

Time 18m

Number Of Ingredients 11

1 large sweet onion ((I like Vidalia, but you can really use whatever))
olive oil spray
1/2 cup arrowroot powder
2 tsp paprika
1.5 tsp salt
1 tsp onion powder
1 tsp garlic powder
1.5 tsp sugar ((optional) )
1/2 cup coconut milk
1 egg
1 tbsp mayonnaise ((optional))

Steps:

  • Heat your oven to 400 degrees. Line a baking tray with parchment paper.
  • Mix together all the dry ingredients in a medium sized bowl. Mix together the wet ingredients in another bowl.
  • Slice the onion to make rings that are about 3/4 of an inch wide. Peel the skin from each ring and carefully separate the rings from each other.
  • One at a time, take each ring and dip it into the wet mix. Then drip it into the dry. Coat it well, but make sure to tap all the excess back into the bowl. Place the ring on the baking tray.
  • When all the rings are coated, spray the rings with olive oil spray. You want to coat them, but not get too much. Flip them over and spray the other side.
  • Pop them into the oven. Check them after 9 or 10 mins and flip them over. Cook for an additional 4 mins or so.
  • Take them out and serve them right away.

  • Add your oil to pan. Heat to 180oC.>You want a deep pan - enough to get at least 3 inches of oil in there. Ideally, it needs to be at most 2/3rds full – it spits and bubbles so its safer this way.>Haven't got a thermometer? Other guides: (1) It takes roughly 3-5 mins on a medium heat to bring 1 litre of oil to this temperate. (2) Drop a tsp of batter into the oil – you’re looking for a sizzle (quite a few bubbles) but the batter shouldn’t go brown within a few seconds of being in the oil. If it does, turn down the heat a little and wait a few mins and repeat
  • Break them into rings>For most of the rings, I keep 2 together to ensure you get lots of onion in the midde and it doesnt just take like batter. Hopefully you can see what I mean in the pic!
  • Add the seasoning, flour and and lager to a mixing bowl and whisk (either by hand or with an electric whisk). >I prefer to do this with an electric whisk to get as much air into the mix as possible, but you could use a hand whisk too!>Make sure you get right to the bottom of the mixing bowl as the flour tends to sneakily sit there.

  • In a separate bowl, mix together the ingredients for the seasoned breadcrumbs. When using the breadcrumbs, take batches of prepared breadcrumbs at a time into a separate bowl to use in order to avoid ending up with a clumpy breadcrumb bowl (due to dipping the flour coated onion rings into the breadcrumb mixture).

  • Slice your onions to your desired thickness and then separate the rings. Put the small pieces aside to use in another recipe. They will cook more evenly if all the onions are close to being the same size.
  • Coat your onions in egg, then in flour, then in the egg a 2nd time and in your flour mixture a 2nd time. This will assure the flour to hold onto the onions better while cooking.
