Steps:
- Heat your oven to 400 degrees. Line a baking tray with parchment paper.
- Mix together all the dry ingredients in a medium sized bowl. Mix together the wet ingredients in another bowl.
- Slice the onion to make rings that are about 3/4 of an inch wide. Peel the skin from each ring and carefully separate the rings from each other.
- One at a time, take each ring and dip it into the wet mix. Then drip it into the dry. Coat it well, but make sure to tap all the excess back into the bowl. Place the ring on the baking tray.
- When all the rings are coated, spray the rings with olive oil spray. You want to coat them, but not get too much. Flip them over and spray the other side.
- Pop them into the oven. Check them after 9 or 10 mins and flip them over. Cook for an additional 4 mins or so.
- Take them out and serve them right away.

- Add your oil to pan. Heat to 180oC.>You want a deep pan - enough to get at least 3 inches of oil in there. Ideally, it needs to be at most 2/3rds full – it spits and bubbles so its safer this way.>Haven't got a thermometer? Other guides: (1) It takes roughly 3-5 mins on a medium heat to bring 1 litre of oil to this temperate. (2) Drop a tsp of batter into the oil – you’re looking for a sizzle (quite a few bubbles) but the batter shouldn’t go brown within a few seconds of being in the oil. If it does, turn down the heat a little and wait a few mins and repeat
- Break them into rings>For most of the rings, I keep 2 together to ensure you get lots of onion in the midde and it doesnt just take like batter. Hopefully you can see what I mean in the pic!
- Add the seasoning, flour and and lager to a mixing bowl and whisk (either by hand or with an electric whisk). >I prefer to do this with an electric whisk to get as much air into the mix as possible, but you could use a hand whisk too!>Make sure you get right to the bottom of the mixing bowl as the flour tends to sneakily sit there.

- Peel the onion. Slice the onion into thin slices (but not too thin, otherwise they will be flimsy break and difficult to handle). Separate the onion rounds for the onion rings.
- In a separate bowl, mix together the ingredients for the seasoned breadcrumbs. When using the breadcrumbs, take batches of prepared breadcrumbs at a time into a separate bowl to use in order to avoid ending up with a clumpy breadcrumb bowl (due to dipping the flour coated onion rings into the breadcrumb mixture).

- Slice your onions to your desired thickness and then separate the rings. Put the small pieces aside to use in another recipe. They will cook more evenly if all the onions are close to being the same size.
- Coat your onions in egg, then in flour, then in the egg a 2nd time and in your flour mixture a 2nd time. This will assure the flour to hold onto the onions better while cooking.

- Preheat oven to 200 degrees F (93 C) and line two baking sheets with parchment paper. Place one in the oven (where you'll place cooked onion rings) and one on the counter (where you'll place dipped onion rings). Also set out a plate layered with a few paper towels.
- In a large shallow bowl, mix together brown rice flour, cornmeal, cornstarch, salt, pepper, paprika, and cayenne pepper. Also add dairy-free milk to a separate small mixing bowl and set aside.
- One at a time, dip the onion rings in the dry ingredients first, then the dairy-free milk, then back in the dry ingredients until well coated. Place on the parchment-lined baking sheet on the counter and repeat until all rings are dipped. Overlapping them a little is fine.
- Heat a large cast iron or metal skillet over medium high heat and add enough oil to form a scant 1/2-inch layer. Heat for 3-5 minutes, or until a little flour sprinkled in bubbles and browns. At that point, add only as many onion rings will fit comfortably in the pan.

- Heat your oven to 400 degrees F. Peel your onion, rinse it and pat it dry. Slice off the root and stem ends. Slice the onion into circles 1/2-inch thick (see photos). Separate the onion into rings by gently pushing through the center of each slice.
- Place your corn starch in a quart- or gallon-sized plastic Ziploc bag. Stir your Parmesan coating ingredients together in a small mixing bowl. Place about a fourth of the Parmesan mixture into another Ziploc bag. (Later, when the cheese coating gets soggy and is almost gone, you will get a clean bag and add more of the Parmesan blend from your mixing bowl.)
- Place two egg whites into a liquid measuring cup or a soup bowl. Use a fork to beat the egg whites until they are a little frothy.
- Set up an assembly line from left to right with your onion rings, the corn starch, the cup or bowl of egg whites, the bag of Parmesan coating, and your baking sheet that has a wire mesh cooling rack placed on it. (See photos.) Have three forks ready: one for the corn starch, one for the egg whites and one for the cheese coating.
