Gluten-Free Pizza Crust image

My go-to Gluten-Free Pizza Crust recipe is a simple staple for your Gluten-Free kitchen. Perfectly thick and chewy, and no kneading required.

Provided by Chrystal Carver

Categories     Breads/Muffins

Time 35m

Number Of Ingredients 8

3/4 cup warm water (between 110-120 degrees F)
1 tablespoon sugar
1 packet yeast (1/4 oz.)
2 cups (285g.) gluten-free flour blend (for this recipe I used Bob's Red Mill Gluten-Free 1-to-1)
1 teaspoon salt
1 large egg
1 tablespoons olive oil
1 teaspoon cider vinegar

Steps:

  • Set pizza stone or heavy baking sheet on lowest rack of oven, and preheat to 450°F.
  • Mix water, sugar, and yeast and let sit for 5 minutes, or until it looks foamy.
  • In electric mixer bowl, mix flour blend and salt. Add in egg, olive oil, vinegar, and yeast mixture.
  • Mix on low speed for 1 minute.
  • Using an oiled spatula, transfer the gluten-free pizza dough onto a piece of parchment paper. Using oiled hands, spread dough into a 10-12-inch round.
  • Bake for 8-10 minutes.
  • Add toppings and bake for an additional 8-10 minutes.
  • Enjoy hot.

GLUTEN FREE ALMOST CRAZY BREAD AND PIZZA

Gluten Free Almost Crazy Bread and Pizza image

This is a gluten free recipe for imitation Crazy Bread and can be used for pizza dough as well. This is a personal concoction after experimenting with different ideas for Crazy Bread once my daughter was diagnosed with Celiac disease. She liked it so much I wanted to share it.

Time 40m

Yield 1 pizza and 5 breadsticks

Number Of Ingredients 9

4 teaspoons active dry yeast (2 packets)
1 1/4 cups warm water
1 3/4 cups rice flour
1 3/4 cups tapioca flour
2 eggs
1/4 cup olive oil
1/2 cup buttermilk
1/4 teaspoon salt
1/2 cup rice flour (set aside)

Steps:

  • Mix all the ingredients together except the 1/2 cup rice flour that you set aside with a handmixer. Add about the extra 1/2 cup rice flour a little at a time and stir with a spoon or plastic spatula. You want it to be about the consistency of cookie dough. Add flour until you get the right consistency.
  • This recipe made enough for about one pizza and 5 large breadsticks. You can make all breadsticks or just half the recipe if you don't want pizza and breadsticks.
  • For the pizza I just used a spatula and spread it on a pizza pan. Spray the pan with cooking spray. I baked the pizza crust for about 10 minutes at 375 and then pulled it out and added sauce and cheese (and any toppings desired). Cook the pizza an additional 15 to 20 minutes.
  • For the breadsticks I pulled out sheets of tinfoil. One for each breadstick. Spread the dough again with your spatula and use the tinfoil to keep the shape of breadsticks. You'll have to spoon it out and spread it verses shaping it like you would normal dough. We brushed on a little olive oil on top of the breadsticks and then folded the tinfoil up like a tent. Cook the breadsticks at 375 for about 15-20 minutes.
  • Pull the breadsticks out and cover with garlic butter sauce and parmesan. (We cheated and bought the butter sauce packets directly from Little Caesars so it tasted pretty close to their Crazy Bread to my daughter. You can also mix 1/4 cup melted butter with 1/2 tablespoon garlic salt and brush that on top. Then sprinkle parmesan as desired.

GLUTEN-FREE PIZZA CRUST OR FLATBREAD

Gluten-Free Pizza Crust or Flatbread image

This recipe is for a crust that can be used for pizza or flatbreads. After 2 years of being GF, this is the best pizza crust/flatbread recipe I have. It is based on trial and error in an effort to improve other recipes. My kids say this is better than our homemade wheat flour crusts.

Categories     Bread     Pizza Dough and Crust Recipes

Time 1h

Yield 1

Number Of Ingredients 11

1 cup very warm water
½ teaspoon white sugar
2 teaspoons yeast
2 cups gluten-free flour blend
½ cup rice flour
1 tablespoon Italian seasoning
1 teaspoon xanthan gum
1 teaspoon unflavored gelatin powder
½ teaspoon salt
3 tablespoons apple cider vinegar
3 tablespoons olive oil

Steps:

  • Whisk water and sugar together in a bowl. Whisk in yeast. Let stand until yeast softens and begins to form a creamy foam, about 10 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine gluten-free flour, rice flour, Italian seasoning, xanthan gum, gelatin, and salt in the bowl of a stand mixer fitted with the paddle attachment. Whisk vinegar and olive oil into the yeast mixture; pour over flour mixture. Mix on high speed until a wet, sticky dough forms, about 6 minutes.
  • Transfer dough to the prepared baking sheet. Lay another sheet of parchment paper on top; smooth out dough to fill the baking sheet. Let dough rest, about 10 minutes.
  • Bake in the preheated oven until dough puffs up, 5 to 10 minutes. Peel parchment paper off the top. Continue baking until dough is golden brown and edges are cooked through, about 20 minutes.

  • To make the crust: Place the dry ingredients (except the yeast) into the bowl of a stand mixer or large mixing bowl. Mix until thoroughly blended. , Place the warm water, 2 tablespoons (25g) olive oil, yeast, and a scant 1 cup of the dry mixture into a small bowl. Stir to combine; a few lumps are OK. Set aside for 30 minutes or so, until the mixture is bubbly and smells yeasty. , Add this mixture to the remaining dry ingredients and beat on medium-high speed for 4 minutes using a stand mixer or electric hand mixer. The mixture will be thick and sticky, but not elastic; it won't feel like regular yeast dough. Note: You must use an electric mixer to make this dough; mixing by hand doesn't do a thorough enough job. , Cover the bowl and let the dough rest for 30 minutes or so. , Pour the remaining 1 1/2 tablespoons (18g) olive oil into a cast-iron skillet that’s 10” to 11” diameter across the top, and about 9” across the bottom. Tilt the pan to coat the bottom with the oil. This heavy, dar
  • Scrape the dough from the bowl into the pan. Starting at the center of the dough and working outward toward the edges, use your wet fingers to press the dough to fill the bottom of the pan. , Let the dough rest, uncovered, for 30 minutes. , While the dough is resting, place one rack at the bottom of the oven and one toward the top (about 4" to 5" from the top heating element). Preheat the oven to 375°F. , When you’re ready to bake the pizza, scatter about three-quarters of the mozzarella (a scant 1 cup) evenly over the crust. Cover the entire crust right to the edge, so the cheese will become deep golden brown and crispy as the pizza bakes. Dollop small spoonfuls of the sauce over the cheese (putting the cheese on first will prevent the top of the crust from getting soggy under the sauce) then sprinkle on the remaining mozzarella. , Bake the pizza on the bottom rack of the oven for 20 to 22 minutes, until the cheese is bubbling and the bottom and edges of the crust are golden brown (us
  • Remove the pizza from the oven and place the pan on a cooling rack. Carefully run a spatula between the edge of the pizza and side of the pan to prevent the cheese from sticking as it cools. , If desired, sprinkle freshly grated hard cheese and fresh herbs over the hot pizza. Let the pizza cool briefly, and as soon as you feel comfortable doing so transfer it from the pan to a cooling rack or cutting surface. Serve pizza hot or warm. , Store any leftovers, well wrapped, in the refrigerator for a day or so; freeze for longer storage.
