3 ½ cups powdered sugar
½ cup cocoa
¼ tsp salt
¼ cup milk
1 tbsp vanilla extract
½ cup butter
1 cup chopped nuts

Steps:

  • In a 1 ½-quart casserole, stir sugar, cocoa, salt, milk and vanilla together until partially blended (it will be too stiff to blend thoroughly).
  • Put butter over top in center of dish.
  • Microwave at high for 2 minutes or until smooth.
  • If all butter has not melted in cooking, it will as mixture is stirred.
  • Blend in nuts.
  • Pour into a lightly buttered 8x4x3-inch dish.
  • Chill 1 hour in refrigerator or 20 to 30 minutes in freezer.
  • Cut into squares.
  • Makes about 36 squares.

I got this recipe from the first cookbook I ever owned,the Kids Microwave Cookbook. My brother bought me the cookbook for my birthday when I was quite young. As the title states this recipe is very quick and easy to make. This fudge recipe has always been one of my favorites and i'm sure it will soon be one of yours too.

4 cups powdered sugar
1/2 cup unsweetened cocoa
1/4 teaspoon salt
1/4 cup milk, minus 1 teaspoon
1 tablespoon vanilla
1/2 cup butter

Steps:

  • In a 1-1/2-quart casserole, stir together sugar, cocoa, salt, milk, and vanilla until partially blended.
  • Put butter or margarine over top in center of dish.
  • Microwave on HIGH power 2 minutes.
  • Stir well until smooth.
  • Pour into a greased 8-inch square dish. Chill about 1 hour.

1/4 cup milk
1 tablespoon vanilla

Steps:

  • Stir together sugar, cocoa, salt, milk, and vanilla in a 1 1/2 quart dish until blended.
  • (This will be very stiff.) Top with butter.
  • Microwave on HIGH 2 minutes.
  • Stir.
  • Blend in nuts.
  • Pour into an 8-inch dish lined with wax paper.
  • Chill.

Let it sit for a minute to start melting the chocolate, then briskly stir until the chocolate and marshmallow are fully melted and the mixture is smooth with no streaks. Stir in the nuts if using.
