Steps:
- In a 1 ½-quart casserole, stir sugar, cocoa, salt, milk and vanilla together until partially blended (it will be too stiff to blend thoroughly).
- Put butter over top in center of dish.
- Microwave at high for 2 minutes or until smooth.
- If all butter has not melted in cooking, it will as mixture is stirred.
- Blend in nuts.
- Pour into a lightly buttered 8x4x3-inch dish.
- Chill 1 hour in refrigerator or 20 to 30 minutes in freezer.
- Cut into squares.
- Makes about 36 squares.

GLUTEN FREE 2 MINUTE FUDGE
I got this recipe from the first cookbook I ever owned,the Kids Microwave Cookbook. My brother bought me the cookbook for my birthday when I was quite young. As the title states this recipe is very quick and easy to make. This fudge recipe has always been one of my favorites and i'm sure it will soon be one of yours too.

- In a 1-1/2-quart casserole, stir together sugar, cocoa, salt, milk, and vanilla until partially blended.

- Microwave on HIGH power 2 minutes.
- Stir well until smooth.
- Pour into a greased 8-inch square dish. Chill about 1 hour.

- Line an 8-inch loaf pan with parchment paper or wax paper. Set aside. Clear some space in the freezer for this pan—you will need it later.
- Use the double boiler method or the following: Add chocolate chips and almond butter to a medium, microwave-safe bowl. Heat in 20-second increments until chocolate is softened and melty. Stir in between heating increments, until smooth.
- Pour this mixture into the prepared loaf pan. Tap the pan to create an even layer. Optionally, use a spoon to make swirls on top–you might need it to thicken in the freezer a bit before adding swirls.

- Thoroughly butter an 8-inch square baking pan. Line it with parchment paper cut to 8-inches wide by about 14-inches long. You want the parchment to hang over two of the edges to create a sling, which helps you lift the candy out of the pan later. Butter the parchment to guarantee easy release.

The temperature will risequickly at the beginning and then will slow down but continue rising steadily. Keep a close eye on it!
- Once the candy reaches 234°F, remove the pan from the heat and remove the thermometer. Add the chocolate and marshmallow. Let it sit for a minute to start melting the chocolate, then briskly stir until the chocolate and marshmallow are fully melted and the mixture is smooth with no streaks. Stir in the nuts if using.

- Prepare a 6 x 6 inch square baking pan by placing a large piece of parchment paper over it, enough to cover it up the sides when the chocolate mixture is poured in. Set aside.

- Once the fudge is hard it is ready to cut and serve. Let set about 5-10 minutes out of the refrigerator before slicing into 1-inch cubes.
