GLUTEN AND SUGAR FREE GINGER AND MOLASSES COOKIES
In an attempt to find some kind of "goodie" I could eat, I meshed a few recipes I found online together and came up with this one. Be forewarned, this is not a sweet cookie. For the oil I used coconut oil.

Steps:
- In large bowl combine flour, salt, soda and ginger.
- In medium bowl combine oil, molasses, maple syrup and lemon zest.
- Mix wet ingredients into dry.
- Refrigerate dough for 1/2 - 1 hour.
- Scoop 1 tablespoon of dough onto parchment lined baking sheet or onto a baking stone.
- Bake at 350 degrees for 7-10 minutes or until tops start to crack.
- Cool and serve.

- Add flour, baking soda, cinnamon, ground ginger, ground cloves, and salt to a medium-sized bowl then whisk to combine. Set aside.
- Add softened butter and brown sugar to the bowl of an electric mixer, or a large glass bowl if using a handheld mixer, then beat until light and fluffy. Scrape down the sides of the bowl then add egg, molasses, and vanilla and then beat until smooth.
- Scrape down the sides of the bowl then add dry ingredients in two batches, mixing until just combined before adding the second batch. Refrigerate dough until firm - several hours or overnight.
- When you're ready to bake, let the dough sit at room temperature while the oven preheats to 375 degrees - this let's the dough soften just enough to roll. Line a half sheet pan with parchment paper, then add granulated sugar to a bowl.

- MIX THE WET INGREDIENTS: In a large mixing bowl, whisk together the nut butter, softened coconut oil, molasses, maple syrup and vanilla until smooth.
- STIR IN THE DRY INGREDIENTS: Add the almond flour, coconut flour, baking soda, ginger, cinnamon, cloves, allspice, salt and stir well until combined.
