DIJON SHRIMP WITH PASTA

- Cook pasta according to package directions; drain., Meanwhile, in a large skillet, heat butter over medium-high heat. Add mushrooms and onion; cook and stir until tender. Stir in flour until blended; gradually stir in broth, wine, mustard, tarragon, paprika and pepper. Cook and stir 5 minutes or until sauce is thickened., Reduce heat to medium; stir in shrimp and cream. Cook, covered, 2-3 minutes or until shrimp turn pink. Serve with pasta; sprinkle with cheese.

EASY SHRIMP AND DIJON VINNAIGRETTE SALAD
A quick and easy salad. So easy it really isn't a recipe. I make this for lunch often. If I could afford to eat shrimp everyday, I might eat this salad everyday. It is also South Beach Diet friendly.

- In a large bowl whisk together red wine vinegar , Dijon mustard and Splenda.
- Then continue to whisk while adding olive oil until dressing is thoroughly mixed.
- Add lettuce and vegetables of your choice. Toss to coat.
- Top with cooked shrimp and you're ready to eat.

- Melt butter or margarine in a frying pan; add the shrimp and onion, and sauté for about 3 minutes. Do not brown.
- Sprinkle a little flour at a time into the mixture. Add a little milk slowly, continuously stirring to avoid lumps. Add mustard, nutmeg, salt and pepper, and cook for 3 to 5 minutes. Stir in the cream cheese(cut into thin slices) until it is completely blended, then warm through, but do not boil.
- Serve with cooked rice or noodles. Cooking and prep times are approximate. The recipe didn't say.

SHRIMP SALAD WITH DIJON DRESSING
Apart from the usual ingredients, one can easily find in a salad, like lettuce, arugula, onion, avocado or cherry tomatoes, we've used for this one some shrimp. We've cooked the shrimp with garlic and ginger and then made a really nice dijon mustard dressing to go with!

- Heat the vegetable oil in a skillet over low heat. Add the garlic, ginger, and shrimp and cook for 4-5 minutes. Set aside.
- Add the Dijon mustard, olive oil, lemon juice, fresh oregano and some salt to a small bowl. Mix them.
- Add the lettuce and arugula to a medium-sized bowl and mix them together with the red onion, avocado, cherry tomatoes, shrimp and Dijon mustard mixture.

- In a small bowl, whisk together the mustard, honey, lemon juice and garlic.
- Peel and devein shrimp, leaving tails intact. Skewer onto metal skewers or if using wood skewers, soak the skewers in advance in water for 30 minutes. Preheat grill to 350 degrees. Salt and pepper shrimp. Place shrimp on hot grill and brush generously with glaze. Cook two minutes. Turn and cook the other side of the shrimp for two more minutes. Again, slathering with the glaze.

- 2. Add shrimp, seal the bag and turn to coat all shrimp in the marinade.
