This Copycat Olive Garden Salad Dressing brings that smooth and zesty flavor home to toss into your favorite green salad. It's simple and quick to make with nearly universal appeal!

1/2 cup mayonnaise
1/3 cup red wine vinegar
1/3 cup lemon juice ((about 1 lemon))
1 tablespoon extra-virgin olive oil
1 teaspoon dried parsley
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons grated parmesan cheese ((optional))

Steps:

  • In a small bowl whisk together mayonnaise, red wine vinegar, lemon juice, olive oil, parsley, basil, oregano, garlic powder, salt, and parmesan cheese (if using).
  • Pour into a salad dressing container. Store in an airtight container in the fridge for up to 4 weeks.
  • An Olive Garden Salad is generally served as a bed of Romaine lettuce topped with red onion, tomato, whole pepperoncinis, kalamata olives, croutons, grated Parmesan cheese, and freshly cracked black pepper.

1/4 small red onion, sliced paper-thin
6 -12 pitted black olives
6 mild pepperoncini peppers
1 -2 small roma tomato, sliced
1/2 cup crouton
Italian dressing (or use a recipe for Olive Garden's House Dressing)
freshly grated parmesan cheese, to taste
fresh ground black pepper, to taste

Steps:

  • In a large glass or wooden salad serving bowl, toss together the lettuce mix, onion slices, olives, pepperoncini, tomatoes, and croutons. Add dressing and toss to combine.
  • Serve with fresh Parmesan cheese and black pepper to taste.

Gloria is careful to point out that she doesn't actually know what the big chains put in their food. "I don't try to dissect the foods and figure out the chemical ingredients," she says. "I never, ever try to steal anyone's secret corporate recipe. I just do my best to duplicate the taste." Enjoy!

1 1/2 cups Italian dressing, bottled
2 tablespoons parmesan cheese, grated
2 tablespoons sugar (or equivalent in artificial sugar)
1 large egg, raw (or egg beaters to equal 1 egg)
2 tablespoons mayonnaise
1/4 cup oil
fresh spinach
iceberg lettuce
romaine lettuce
onion, cut into rings
radish, etc

Steps:

  • Blend first 5 ingredients (not oil) in blender on high speed 1/2 minute or until smooth. Pour this mixture into the top of a double boiler and add 1/4 cup oil. Stir gently with a whisk over gently boiling water until it begins to thicken and egg is completely cooked. Chill several hours or overnight before using. If the dressing is too thick, add more Italian dressing as needed.
  • Mix together equal amounts of fresh spinach, iceberg and romaine lettuce. Allow 2 cups for each salad. Moisten leaves in dressing, do not saturate; let stand 5 minutes. Add onion rings, radishes, etc.
