CITRUS GLAZED MAHI MAHI
This Citrus Glazed Mahi Mahi is light with the perfect combination of sweet and spicy. This meal takes only a few minutes from start to finish, making it the perfect option for a weeknight dinner.

Steps:
- Preheat your oven to 550 degrees.
- Put the fish in a baking dish.
- Spray with avocado oil spray and season with salt and pepper.
- Bake for 7-10 minutes.
- While the fish is cooking, heat the orange marmalade, 2-3 tablespoons of orange juice, and red pepper flakes in a sauce pan.
- Once the fish is done, top with the sauce and garnish with orange zest.

GINGER GLAZED BAKED MAHI MAHI
Found this recipe online and played with the ingredients till they were just right. It turned out wonderful and definitely a hit at our dinner table. It is simple, easy and very flavorful. I paired it with a steamed wild rice medley and steamed broccoli in a garlic butter sauce.

Steps:
- 1. Take a small casserole dish and oil it very well inside with olive oil. Set it aside. Turn on your oven to 375 degrees and let it preheat.
- 2. In a small bowl mix all ingredients together very well except the fish filets. Place the Mahi Mahi filets into a small baking dish and pour the marinade over the top making sure they are all covered well. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
- 3. After marinading take the cover off of the baking dish and place it on the middle rack of your oven. Bake for about 20 minutes. Leave the marinade in the baking dish. The fish will be done when it flakes or hits a internal temperature of 165.
- 4. After baking spoon marinade over top and serve. Hope you enjoy. ;)
MAHI MAHI WITH BROWN-SUGAR SOY GLAZE
So easy to make! This glaze also works on other fish like halibut. The recipe is from Gourmet Magazine (Oct. 05).

Steps:
- Preheat oven to 200°F.
- Cut white and pale green parts of scallions crosswise into 2-inch pieces, then thinly slice enough scallion greens to measure 3 tablespoons.
- Stir together brown sugar, soy sauce, and lemon juice in a small bowl until sugar is dissolved.
- Pat fish dry and sprinkle with salt. Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then cook fish on 1 side until browned, 3 to 4 minutes. Turn fish over and brown 1 minute. Add soy sauce mixture and simmer, covered, until fish is almost cooked through, about 3 minutes. Transfer fish with a slotted spatula to a heatproof platter and keep warm in oven. (Fish will cook through from residual heat.).
- Add 2-inch scallion pieces and juices from fish platter to sauce and boil, stirring occasionally, until glaze is very thick and reduced to less than 1/4 cup, about 5 minutes. Spoon glaze over fish and sprinkle with scallion greens.
TERIYAKI MAHI MAHI
After trying a few mahi mahi recipes, this one is definitely my favorite. This glazed mahi mahi is good with rice, vegetables or salad. Blotting the fillets before cooking allows a nice brown crust to form. Cod or halibut can be used, too. -Michelle Ibarrientos, Torrance, California

- Sprinkle mahi mahi with garlic powder and pepper. In a large skillet, cook mahi mahi in oil over medium-high heat for 4-5 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., In the same skillet, saute ginger for 30 seconds. Stir in teriyaki sauce; heat through. Serve over mahi mahi.

- Combine the orange juice, lemon juice, lime juice, water, sugar and salt in a small skillet.
- Mix well and bring to a boil over medium heat.
- Cook until reduced by one half.
- Let cool until the glaze is thick and sticky.
- Brush over grilled Mahi Mahi steaks (or other fish) during the last two minutes of cooking.
- Pour remaining glaze over steaks when plated.
