2 pounds carrots, peeled and cut into sticks
¼ cup butter
¼ cup packed brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

1 tablespoon olive oil
3 medium zucchini, cut into 1/2-inch slices
2 garlic cloves, minced
1/4 teaspoon salt
1/4 cup balsamic vinegar

Steps:

  • In a large enamel-coated cast-iron or other heavy skillet, heat oil over medium-high heat. Add zucchini; cook and stir until tender, 5-7 minutes. Add garlic and salt; cook 1 minute longer. Remove from pan. , Add vinegar to same pan; bring to a boil. Cook until reduced by half. Add zucchini; toss to coat.

2 zucchini, cut into 3/4-inch rounds
3 yellow squash, cut into 3/4-inch rounds
1/2 cup water
1/2 cup balsamic vinegar
1 teaspoon dried oregano
2 tablespoons unsalted butter
salt and pepper

Steps:

  • Place all squash into a medium sized pot with water and vinegar, over medium high heat. Bring just to a boil; cover, and reduce heat to medium. Cook 10 minutes.
  • Uncover; add oregano and raise heat to medium high. Allow water to boil away, and the vinegar to reduce to a glaze for the squash, app. 5-7 minutes. When glazed to a rich brown color, add the butter.
  • Turn squash to coat with butter; season with salt and pepper. Serve.

Zucchini Carrot Bread image

Zucchini and carrots add loads of moisture to this quick bread and the cream cheese glaze makes the perfect topping!

1 ½ cups flour
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
¼ cup vegetable oil
¼ cup unsweetened applesauce
1 large egg
1 large egg yolk
½ cup brown sugar
¼ cup sugar
2 teaspoons vanilla
1 cup grated zucchini
¾ cup grated carrots
2 ounces cream cheese (room temperature)
2 tablespoons butter (room temperature)
1/2 cup powdered sugar
1 teaspoons vanilla
Pinch of salt

Steps:

  • Preheat oven to 325 degrees. Spray a 9x5 loaf pan with non-stick spray.
  • Add the flour, cinnamon, baking soda, baking powder, and salt to a small bowl and whisk to combine. Set aside.
  • Add the oil, applesauce, egg, and egg yolk to a mixing bowl and whisk to combine. Whisk in the brown sugar, sugar, and vanilla until well combined.
  • Add the dry ingredients to the wet and stir just until the flour has disappeared. Do not over mix.
  • Add the zucchini and carrots to the bowl and stir to combine.
  • Spread the batter into the prepared baking dish and bake for 50-60 minutes or until a tester inserted in the center comes out clean.
  • Cool for 15 minutes before removing from the loaf pan and cooling completely on a wire rack.
  • Add the cream cheese and butter to a microwave safe bowl and microwave until soft enough to stir together, but not fully melted, about 30-60 seconds.
  • Stir in the powdered sugar, vanilla, and salt until the mixture is smooth.
  • Pour the glaze over the cooled bread and allow to set for 15 minutes to firm up.
