SWEET-AND-SOUR CHICKEN WINGS

Sweet-and-Sour Chicken Wings image

Serve these baked chicken wings as an appetizer; their sweet glaze of honey is counterbalanced by soy sauce and vinegar. Garlic and ginger add a welcome kick, elevating the wings to game-day territory.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 45m

Number Of Ingredients 8

1/2 cup soy sauce
1/2 cup white vinegar
1/2 cup clover or wildflower honey
3 garlic cloves, smashed and peeled
2-inch piece peeled fresh ginger, thinly sliced
3 pounds chicken wings, cut in half at joint (wing tips removed)
1 teaspoon sesame seeds, toasted
2 teaspoons chopped fresh chives (optional)

Steps:

  • Preheat oven to 475 degrees. In a small saucepan, whisk together soy sauce, vinegar, honey, garlic, and ginger. Bring to a simmer over medium-high and cook, stirring occasionally, until mixture thickens and is reduced by half, 30 minutes. Pour through a fine-mesh sieve into a large bowl; discard solids. You should have 2/3 cup sauce.
  • Meanwhile, arrange chicken wings in a single layer on a rimmed baking sheet. Bake until golden, crisp, and cooked through, 35 minutes. Drain fat from sheet and, with tongs, transfer wings to bowl with sauce. Toss until wings are coated and most of sauce is absorbed, about 3 minutes. To serve, sprinkle with sesame seeds and chives, if desired.

GLAZED SWEET AND SOUR CHICKEN WINGS

Glazed Sweet and Sour Chicken Wings image

This recipe for grilled chicken wings is brought to us by Evan Lobel of NYC's Lobel's Prime Meats, who uses hoisin sauce, ginger, and chile paste to infuse the meat with a savory Asian flavor.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Yield Makes 20 to 25 pieces

Number Of Ingredients 12

20 to 25 chicken wings
1/4 cup Hoisin sauce
1 1/2 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon rice-wine vinegar
1 tablespoon freshly squeezed lime juice
1 teaspoon light-brown sugar
1 teaspoon chopped garlic
1 teaspoon chopped fresh ginger
1/4 teaspoon Asian chile paste
Coarse salt and freshly ground pepper
Vegetable-oil cooking spray

Steps:

  • Prepare the wings by cutting through the joint to make two pieces. Snip off the tips. Put the wings in a shallow glass or ceramic dish.
  • Combine hoisin sauce, soy sauce, ketchup, vinegar, lime juice, sugar, garlic, ginger, and chile paste in a small bowl, and whisk well. Brush liberally on the chicken wings, turning them to coat both sides. Season with salt and pepper to taste. Cover, and refrigerate for at least 1 hour or overnight.
  • Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable-oil cooking spray. The coals should be moderately hot.
  • Grill the wings, turning with tongs 3 to 4 times and brushing with any remaining glaze during the first 10 minutes of grilling or until cooked through, 15 to 25 minutes. Serve immediately.

CRANBERRY GLAZED STICKY CHICKEN WINGS

Cranberry Glazed Sticky Chicken Wings image

This surprising twist on sweet and sour wings is so good you'll be tempted to eat them right after glazing-but the final broil in the oven is worth it. If you want to turn up the spice meter, add some of your favorite hot sauce to the glaze.

Provided by Food Network Kitchen

Categories     appetizer

Time 35m

Yield about 16 wings

Number Of Ingredients 6

2 pounds chicken wings
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
8 ounces frozen cranberries, thawed
1/2 cup Asian sweet chile sauce, such as Mae Ploy
3 scallions, chopped (save the greens from 1 scallion for garnish)

Steps:

  • Preheat the broiler to high with an oven rack set about 4 inches from the heat source. Remove the tips of the wings and discard or save for making stock. Use kitchen shears or a knife to separate the wings at the joint.
  • Toss the chicken wings and vegetable oil on a baking sheet until well coated. Sprinkle with salt and a few grinds of pepper. Broil the wings until the skin starts to crisp and brown, about 12 minutes. Remove the pan from the oven and flip the wings over. Broil the other side until crisp and golden brown, about 8 minutes more.
  • Meanwhile, put the cranberries in a food processor and pulse until you have small pieces. Add them to a medium skillet with the sweet chili sauce and 3/4 cup water. Add all of the scallion whites and 2 of the scallion greens. Bring to a boil, reduce the heat and simmer until thickened, about 3 minutes. Strain into a medium bowl, pressing to get as much liquid through as possible. Return the liquid to the skillet and simmer until thick and shiny, like a glaze.
  • Remove the wings and check for doneness; if a knife inserted into the meat closest to the bone is no longer pink, it's done. Toss the wings in the sauce bowl until well coated, return to the baking sheet and broil until the glaze turns shiny and the skin has blistered spots of char, 1 to 3 minutes. Check the wings every minute at this stage to ensure the glaze does not burn. If your glaze is not sticking as well as you would like, apply the glaze with a pastry brush.
  • Sprinkle the remaining scallion greens over the top of the wings. Serve while hot.

  • Prepare the chicken wings by snipping off the wing tips and cutting through the joint to break each wing into two pieces. Put the wings into a wide, shallow dish.
  • In a bowl mix together all of the other ingredients with a whisk until well combined. Using a brush or spoon, cover the chicken wings with this mixture, turning to coat evenly on both sides, or simply pour on top and stir to ensure even coating. Cover and refrigerate to marinate for at least one hour, but overnight is best.
  • Preheat the oven to 200 degrees and prepare a baking sheet or tray with baking paper. Arrange the chicken wings on the paper (you may need two trays depending on how many wings you have) and pop into the oven. You may brush the wings again with the mixture when they go in.
  • Bake until the chicken is cooked through and sticky but browned on the outside, or about 30 minutes. Sprinkle with sesame to serve.

  • In a medium saucepan, melt the butter. Add the chopped sweet onion and cook over moderate heat, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes. Add three-fourths of the minced habanero chile and cook for 1 minute, just until softened. Scrape the onion and habanero into a blender, add the cherry preserves and lime juice and puree until smooth. Return the cherry glaze to the saucepan and bring it to a boil over moderately high heat. Stir in the remaining minced habanero chile and season the glaze with salt and black pepper. Transfer the glaze to a small bowl.
  • Light a grill or preheat a broiler and position a rack 8 inches from the heat source. Season the chicken wings all over with salt and black pepper and grill over moderately high heat, turning occasionally, until lightly charred and crispy, about 20 minutes. Alternatively, broil the wings for about 20 minutes, turning occasionally, until they are crispy.
  • Transfer the chicken wings to a large bowl and toss with one-third of the cherry glaze. Return the wings to the grill or broiler and cook, turning once, just until sticky and caramelized, about 2 minutes. Return the chicken wings to the bowl and toss with another one-third of the cherry glaze. Transfer the glazed chicken wings to a serving platter and serve with the remaining glaze on the side.

  • In a small bowl, mix together the pineapple juice and cornstarch until a smooth slurry is formed. This is important to help thicken the sauce for thewings. Next whisk together the rice vinegar, brown sugar, ketchup, soy sauce, honey, sriracha and the slurry in a saucepan. Heat the mixture over medium heat, stirring often, until the sauce thickens, about 15 minutes. Set aside while you cook the chicken wings.
  • Preheat the cooker to 350ºF (176ºC). If you’re using a kamado or bullet grill, add a handful of wood chips to the charcoal; with a pellet grill, simply preheatthe cooker, as the pellets will take care of the smokey flavor. Rub the chicken wings evenly with the rub. Cook the wings for 20 minutes. Flip and cook for another 20 minutes or until the internal temperature is 165ºF (74ºC).
  • Remove the wings and place them in a large bowl. Pour the glaze over the top of the chicken wings and toss until evenly coated. Garnish with scallions, serve and enjoy.
