We get German Honey Bars at a local bakery here in Indy. They are my husbands favorite cookie. I have looked high and low for the recipe with no results. My husband found this recipe in a cookbook he was looking through at Cracker Barrel Country Store, so he bought it. I made them for him because he washed all the windows on the...

Number Of Ingredients 14

2 3/4 c all-purpose flour
2 tsp ground cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cardamom
1/2 tsp ground ginger
1/2 c honey
1/2 c dark molasses
3 Tbsp butter
3/4 c packed brown sugar
1 egg
1/2 c chopped toasted almonds (optional)
lemon glaze (recipe follows)

Steps:

  • 1. Preheat oven to 350 degrees F. *Grease 15X10X1 inch jelly-roll pan. Combine flour, cinnamon, baking powder, baking soda, salt, cardamom and ginger in medium sized bowl. Combine honey and molasses in medium saucepan; bring to a boil over medium heat. Remove from heat. Add butter; stir until melted. Cool 10 minutes. Stir in brown sugar and egg. *See note below.
  • 2. Place brown sugar mixture in large bowl. Gradually add flour mixture., beating with electric mixer at low speed until dough forms. Stir in almonds if using. (*Dough will be slightly sticky) Spread dough evenly in prepared pan. Bake 20 to 22 minutes or until golden brown and set. Remove pan to wire rack
  • 3. Prepare Lemon Glaze. Spread over cooled bars. Let stand until set, about 30 minutes. Cut into 2X1 inch bars.
  • 4. Lemon Glaze: 1 1/4 c. powdered sugar, 1 tsp. freshly grated lemon peel and 3 Tbsp. lemon juice in medium bowl until well blended.
  • 5. *Notes: After 10 minutes the honey molasses mixture was still very warm and I didn't want to add the egg and have it turn out scrambled, so I set the bowl on a few ice cubes wrapped in a paper towel for a couple of minutes. The dough being slightly sticky is an understatement. It is very sticky and I had a hard time rolling it out. Finally placed a piece of waxed paper over the dough and rolled with rolling pin. It was a little better but dough still stuck to the waxed paper. I also lined my pan with parchment paper, rather than greasing the pan. I did not add the almonds, because the honey bars we get at the bakery do not have almonds in them. These honey bars are bolder in taste with the spices and much darker in color than the ones we get at the bakery. I think with a little tweaking with spices and playing with a different kind of molasses I can get a little closer to the bakery version.

1 cup sugar
3/4 cup canola oil
1/4 cup honey
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup chopped walnuts, toasted
GLAZE:
1 cup confectioners' sugar
2 tablespoons mayonnaise
1 teaspoon vanilla extract
1 to 2 tablespoons water
Additional toasted chopped walnuts, optional

Steps:

  • Preheat oven to 350°. In a large bowl, beat sugar, oil, honey and egg until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Stir in 1 cup walnuts., Spread into a greased 15x10x1-in. baking pan. Bake until golden brown (edges will puff up), 10-12 minutes. Cool completely on a wire rack., For glaze, in a small bowl, mix confectioners' sugar, mayonnaise, vanilla and enough water to reach desired consistency; spread over top. If desired, sprinkle with additional walnuts. Let stand until set. Cut into bars. Refrigerate leftovers.

Recipe is from Sunrise Beach is Still Cooking, Cooking from Texas Hills and Lakes compiled by the Ladies Auxiliary of Sunrise Beach Volunteer Fire Department and credited to Nancy Brown. My kids loved these easy bars! The young one calls them honey brownies. You can't taste the mayo in the icing, which is thin and sinks into the hot bars giving them a glazed appearance.

1 cup sugar
1 teaspoon cinnamon
3/4 cup oil
1/4 cup honey
1 egg, well beaten
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped nuts
1 cup powdered sugar
2 tablespoons mayonnaise (Hellmann's)
2 tablespoons water
1/2 teaspoon vanilla

Steps:

  • Mix flour, sugar, cinnamon, salt, and baking soda. Add oil, honey, egg, vanilla, and nuts. Dough will be stiff.
  • Press into a 10x15 inch jelly roll pan. Bake at 350 degrees for 18 minutes.
  • Combine icing ingedients and pour over bars immediately after removing from oven. Cut into squares.

3/4 c vegetable oil
1/2 c honey
1 c granulated sugar
1 egg
1 tsp cinnamon
2 c self rising flour
1 c chopped walnuts
GLAZE
1 c confectioners' sugar
1 Tbsp mayonnaise
1 Tbsp milk
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350. Spray 13x9 dish with nonstick spray, set aside. In a standard mixer, beat oil, honey, sugar, and egg.
  • 2. Stir the cinnamon into the self rising flour in separate bowl and mix this into sugar mixture and mix well. Stitr in nuts.
  • 3. Spread batter into prepared dish and bake 30 minutes in oven or until center test done. Remove from oven and let cool 5 minutes and mix up the glaze.
  • 4. In a bowl, mix together the powdered sugar, mayonnaise, milk, and vanilla. Pour the glaze over the cake and spread it evenly. Let it cool a little, then cut into bars.

Stir this into the sugar mixture and mix well. Stir in the nuts. Spread the batter in the prepared pan and bake for 30 minutes. Remove from the oven and let stand a few moments while you make the glaze: In a bowl, stir together the confectioners' sugar, mayonnaise, milk, and vanilla. Pour the glaze over the cake and spread it with a metal spatula. Let cool, then cut into bars.

  • Put into baking pan.
  • Bake 15-20 minutes.
